1 pound turkey meat
8 ounces dry beans (red, white, red, brown or spotted kidney-shaped beans)
8 ounces white hominy corn or yellow samp or course grits
Clam juice or salt, for seasoning, optional
Dried onions or garlic, for seasoning
8 ounces winter squash, trimmed and cubed
4 ounces green beans, trimmed and cut into 1-inch lengths
1/2 cup raw sunflower seed meats, pounded to a course flour, or nut flour
1 pound turkey meat

1/2 cup raw sunflower seed meats, pounded to a course flour, or nut flour

Steps:

  • Combine the turkey, dry beans, hominy, clam juice, if using, some dried onions and 12 cups water in a large pot. Bring to a simmer over medium heat, and then reduce to a very low simmer and cook until the beans are tender but not mushy, about 2 hours 30 minutes, stirring occasionally to make sure nothing is sticking to the bottom.
  • Break up the turkey meat, removing the skin and bones. Add the squash and green beans and continue to simmer very gently until tender. Stir in the sunflower flour until thoroughly blended. Serve, give thanks and enjoy.

My adopted father is a Navajo and this recipe was the first he made for us one thanksgiving. it is perfect for winter as it is hearty and comforting. it makes my Thanksgiving table every year

1/2 cup dried pinto bean
1/2 cup coarse grits
1 lb venison
1 1/2 tablespoons salt
1 lb pumpkin or 1 lb butternut squash
1 cup jeruselum artichoke
1/2 cup walnuts
3 cups water

Steps:

  • Cut vension into cubes and brown in a dutch oven.
  • Cut Pumpkin or squash into cubes.
  • ground walnuts into a fine powder.
  • add all ingredients into dutch oven and simmer 3-4 hours until meat and veggies are tender.

Shorba Baidha, literally means white soup. It is a classic soup in Algeria & is extremely simple to make. The subtle flavours work well together to make a delcious, light soup. I have to say this is one of my all time favourite soups. It's great all year round but especially loved during Ramadan or to eat when you are feeling ill. It is the egg yolk that makes this soup white so don't leave it out! The chicken in Algeria is free range & has a rich taste, if you use non-free range chicken, you might need to throw in a stock cube...

4 chicken drumsticks, skinless (or other bone-in cuts)
1 medium brown onion, finely diced
200 g canned chick-peas, rinsed & drained
2 1/2 liters water
2 inches cinnamon sticks
1/2 lemon, juice of
1 large egg yolk, beaten
1/4 cup fresh parsley, finely chopped
2 -3 teaspoons olive oil
1 1/2 tablespoons basmati rice
salt & pepper

Steps:

  • In a large pot gently fry the onion in the olive oil. Add the chicken & the cinnamon stick & fry for 8 minutes, turning the chicken around to seal.
  • Add the water & some salt & pepper to taste. Cover & simmer for 1 hour and 15 minutes on a medium heat.
  • Remove the chicken from the bones & place the chicken back in the pot.
  • Add the chickpeas to the pot & simmer for further 10 minutes covered.
  • Check the seasoning & adjust if required. Add the rice & cover & cook for 15 minutes.
  • Add more water & adjust seasoning or simmer uncovered if the soup is too concentrated or too watery.
  • Finally, mix the egg yolk with the lemon juice. Add a few tsp of the soup to the mix & whisk then add the egg mixture to the pot in a thin steam, stirring continuously. Cook for 1 minute then add the parsley & take off the heat.

Wampanoag Autumn Sobaheg: Modern Version image

Number Of Ingredients 7

1/2 cup dried beans
1/2 cup coarse grits*
1 pound venison or other meat, cut into bite-sized pieces
1 teaspoon salt
1 small acorn squash or 2 cups any other winter squash, peeled and cut into bite-sized pieces
1 cup peeled and cubed Jerusalem artichokes**
1/4 cup walnuts, chestnuts, or sunflower seeds, shelled and ground until powdery

Steps:

  • Combine the dried beans, grits, venison, salt, and 8 cups water in a large, heavy-bottomed pot. Bring the mixture to a gentle boil over medium heat. Cover the pot, reduce the heat, and keep the sobaheg at a low simmer. Cook approximately 2 hours, until the beans and venison are tender, stirring often to prevent sticking. Periodically skim off the froth that rises to the top. Stir in the squash and Jerusalem artichokes and simmer until they are done, about 30 minutes.
  • Add the nut flour, stirring until thoroughly blended, and serve.
  • *Coarse grits of flint corn (sometimes called samp in modern markets). Finely ground grits used for Southern grits just will not do. Coarse white grits, sold under the brand name Gonsalves (a Portuguese food company), are available at many gourmet stores and large supermarkets. You can also order coarse white grits from Plimoth Plantation at www.plimoth.com).
  • **Jerusalem artichokes, also called sunchokes, are part of the sunflower family. They are available in market produce sections in the fall and early winter. If you are unable to find them, the recipe will still be delicious.
