1/4 cup butter (which is equal to 4 tablespoons butter)
1 cup flour
3/4 cup white sugar
1 teaspoon baking powder
1 cup milk
1 can (21 oz, cherry pie filling)

Steps:

  • Add butter to a 1-1/2 quart casserole dish and place into a cold oven. Preheat the oven to 350 and let butter melt.
  • In a mixing bowl, add flour, sugar, and baking powder and mix well. Stir in milk until combined.
  • Once butter is melted, pour batter into pan with butter. Top with dollops of cherry pie filling.
  • Bake for 40-45 minutes or until brown on top.
  • Let stand to cool before serving warm as is or over vanilla ice cream

1 (15 ounce) can pitted tart red cherries, drained with liquid reserved
½ cup white sugar
1 cup buttermilk baking mix
½ cup white sugar
½ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 9x9-inch baking dish with cooking spray.
  • Stir the liquid from the cherries and 1/2 cup sugar together in a small glass bowl; heat in the microwave until the sugar is dissolved, 1 to 2 minutes. Set aside.
  • Stir the baking mix, 1/2 cup sugar, and milk together in a separate small bowl; mix until you get a moist batter. Spread the mixture in an even layer in the bottom of the prepared baking dish. Spread the cherries evenly over the batter. Slowly pour the cherry juice over the cherries.
  • Bake in the preheated oven until lightly browned, 25 to 30 minutes.

I discovered this recipe on the box of a Sara Lee pound cake. It is extremely simple to prepare, but has great flavor and presentation. We love it served with vanilla ice cream or whipped topping. Blueberry pie filling, or a combination of fresh blueberries, raspberries, sliced peaches or pitted cherries (to make 2 cups) combined with 3/4 cup apricot jam could be substituted for the cherry pie filling for variations on the cobbler.

1 (12 ounce) frozen pound cake
1 (21 ounce) can cherry pie filling
1/3 cup water
1/2 teaspoon almond extract, I use a bit more
2 tablespoons toasted sliced almonds, with a few more for garnishing plates

Steps:

  • Cut pound cake into 1-inch cubes. Place cubes in a 9-inch microwave safe pie plate.
  • In a small bowl, combine pie filling, water, and almond extract.
  • Spoon pie filling over cubed cake and sprinkle with almonds.
  • Cover with plastic wrap and microwave on high 5-7 minutes (time may vary depending on your microwave), or until hot.
  • Serve warm with ice cream or whipped topping and additional toasted sliced almonds sprinkled on top.
  • *Fresh Fruit Option: Combine 2 cups fresh blueberries, raspberries, sliced peaches, or pitted cherries with 3/4 cup apricot jam and substitute for the pie filling.
