The idea is to simmer small potatoes until tender, then toss them with olive oil, flatten them and crisp them in the oven. It's simple - and insanely delicious. There are more than 35,000 #smashedpotatoes photos on Instagram, and many Food Network stars are obsessed, too. Here's how to make them like a pro.

Steps:

  • Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. Toss the potatoes with 2 tablespoons olive oil, transfer to a baking sheet and smash with a spatula or measuring cup. Drizzle with more olive oil and season with salt and pepper. Broil, turning, until crisp and golden, 15 to 20 minutes.

4 pounds mixed new potatoes (about golf-ball size)
Sea salt and fresh ground black pepper
Olive oil
1 tablespoon butter, melted, optional
Serving suggestions: Roasted Garlic Aioli (recipe follows) or sour cream and fresh herbs
4 egg yolks
3 cloves roasted garlic
1 tablespoon lemon juice
1 tablespoon Dijon mustard
2 teaspoons paprika
2 teaspoons sea salt
1 1/2 cups light olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the potatoes to a large pot of heavily salted water (about 1/4 cup salt) and bring to a boil. Reduce to a simmer and cook until a fork slides easily into a potato, about 15 minutes. Drain.
  • Generously oil a baking sheet with about 1/4 cup oil, making sure to cover the whole sheet. Arrange the potatoes on the baking sheet and gently smoosh them with a potato masher or cup -- not so much that it breaks the bottom skin or crumbles the potatoes, just enough to break open the top.
  • Drizzle each potato with olive oil or a tablespoon of melted butter, if you prefer. Season generously with salt and pepper.
  • Bake until golden brown, about 30 minutes.
  • Serve with roasted garlic aioli or a bit of sour cream and fresh herbs.
  • Combine the egg yolks, roasted garlic, lemon juice, mustard, paprika and salt in a blender. Blend on high to emulsify. With the motor running, slowly drizzle in the olive oil; the mixture will lighten and become thick and smooth. Taste and adjust the seasoning as needed.
  • Serve right away, or refrigerate for up to 1 day.

1 ½ pounds small yellow-fleshed potatoes
¼ cup olive oil
1 teaspoon butter at room temperature
2 tablespoons balsamic vinegar
3 cloves garlic, minced
1 teaspoon dried rosemary
½ teaspoon dried sage
½ teaspoon ground thyme
½ teaspoon dried savory
½ teaspoon sea salt
½ teaspoon ground black pepper

Steps:

  • Place potatoes in a saucepan, fill with water to cover the potatoes, and bring to a boil. Reduce heat to a simmer, and cook the potatoes until tender but not mushy, about 20 minutes. Drain and allow potatoes to cool.
  • While potatoes are cooking, combine olive oil, butter, balsamic vinegar, garlic, rosemary, sage, thyme, savory, sea salt and pepper in a bowl. Stir with a fork to combine well.
  • Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
  • Place the potatoes in a single layer on the prepared baking sheet, and lightly press down on the potatoes to partially crush them. Spoon the oil-herb mixture over each potato.
  • Bake in the preheated oven until the edges of the potatoes are beginning to crisp, about 25 minutes. Cool for about 5 minutes before serving.

2 lb yukon gold potato
½ cup whole milk
½ cup heavy cream
8 cloves garlic, crushed
½ cup unsalted butter, cubed, cold
2 teaspoons kosher salt
freshly ground black pepper, to taste
chive, finely chopped, for serving

Steps:

  • On a cutting board, peel the potatoes. Place the potatoes in a large bowl of cold water after peeling to avoid discoloration.
  • Cut the potatoes into 1-inch (2 cm) cubes.
  • Add the potatoes to a large pot and cover with cold water. Bring to a boil over high heat, then reduce the heat to low and simmer for 12 minutes.
  • In a small saucepan, bring the milk, heavy cream, and garlic to a simmer over low heat.
  • Remove the pot from the heat and strain the cream through a fine mesh sieve.
  • Drain the potatoes in a colander and transfer back to the pot.
  • Mash the potatoes with a potato masher, potato ricer, or by pushing through a fine mesh sieve with a spatula.
  • Add the cubed cold butter and salt. Stir to combine.
  • Gradually add the cream mixture to the potatoes, little by little, until fully incorporated.
  • Top with freshly ground black pepper and sprinkle with chives and serve.

6 small red potatoes
1 teaspoon seasoning salt
1 teaspoon pepper
1/2 teaspoon garlic powder
1/2 cup olive oil
1/4 cup medium cheddar

Steps:

  • Boil potatoes with skin until wel cooked.
  • Preheat oven to 425 deg.
  • While potatoes are cooking prepare a large cookie sheet by spreading a generous amount of olive oil, followed by sprinkling salt and pepper over the oil and garlic powder.
  • Remove potato from the water and cut in half.
  • Place each piece of potato flat face down o the oiled cookie sheet. Leave some space between each piece.
  • Smoosh down each piece of potato (i use a clean cloth over the potato to avoid burning myself on the hot potato).
  • Throw in the oven for about 15-20 minutes, i just cook it until the bottom of potato gets really nicely browned and crispy.
  • Once nicely browned, gently flip the potato over.
  • Add some grated cheddar cheese over eac piece.
  • Put in oven until cheese is melted an potato is completely crispy.
  • Serve wih sour cream.

This recipe is for smashed, not mashed, potatoes. Multicolored potatoes are flattened, seasoned, and roasted until crisp. Top with sour cream and chives when serving.

Coarse salt and freshly ground pepper
4 to 6 tablespoons olive oil
6 to 8 sprigs fresh thyme, picked
Sour cream, for serving (optional)

Steps:

  • Heat oven to 425 degrees.
  • Bring potatoes to a boil in a large pot of water generously seasoned with salt. Cook until fork tender, about 8 minutes. Drain and let cool slightly, about 10 minutes.
  • Drizzle two rimmed baking sheets with 1 to 2 tablespoons oil each. Arrange potatoes on baking sheet and lightly crush each potato with the heel of your hand until potatoes are about ½ inch thick. It's like taking the best parts of home fries, mashed potatoes, French fries, and potato pancakes, and smashing them all together.

3 ½ pounds medium yellow potatoes, washed
⅓ cup kosher salt
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
½ cup unsalted butter
4 cloves garlic, thickly sliced
4 sprigs fresh rosemary, or to taste
4 sprigs fresh thyme, or to taste

Steps:

  • Place potatoes into a 5-quart stockpot and cover with 3 quarts of cold water. Add kosher salt and bring to a simmer over high heat. Reduce heat to medium-low and simmer gently until potatoes are just tender, 15 to 20 minutes. Remove from heat and drain well. Let potatoes cool just until they're safe to handle.
  • Transfer potatoes onto a sheet pan and continue cooling to room temperature. Make 4 or 5 shallow cuts down the sides of each potato, about every inch or so, to ensure the skin splits evenly when smashed. Refrigerate until completely chilled and ready to smash; 8 hours to overnight is best.
  • Combine butter, sliced garlic, rosemary, and thyme in a small pan over medium heat. Cook, stirring occasionally, until butter melts and begins to bubble, and garlic softens and starts to turn translucent, 3 to 5 minutes. Remove from heat.
  • Preheat the oven to 450 degrees F (232 degrees C). Line 2 metal baking sheets with silicone baking mats (such as Silpat®) and generously brush on some of the infused melted butter.
  • Remove potatoes from the fridge and gently smash each between two pieces of plastic using a flat, heavy object until 1/2- to 3/4-inch thick. Season generously with salt, pepper, and cayenne on both sides, being careful not to break potatoes up into small pieces. Transfer onto a sheet pan, being careful not to overlap potatoes. Very generously drizzle and brush most of the melted butter on top.
  • Bake potatoes in the preheated oven until well browned and crunchy around the edges, 35 to 45 minutes.
  • Meanwhile, place the pan with the remaining garlic and herb butter back over medium-low heat. Cook, stirring, until garlic starts to turn a very light golden brown, 3 to 4 minutes. Remove from heat and reserve.
  • Carefully transfer potatoes onto a serving platter and scatter over the golden brown slices of garlic. Crumble the toasted herbs on top if desired. Serve immediately.

  • Add as many whole potatoes as you need to a pot of salted water. Bring to a boil, cover, and simmer/steam the potatoes until they are fork-tender. At this stage, you can remove the potatoes and keep them hanging around until you need them – OR – you can proceed on…I would proceed on. Then you can eat them quicker.
  • Generously (generously, I say!) oil a baking sheet with your olive oil. Just dump a quarter-cup or so on there and smear it around with your fingers. This will keep the potatoes from sticking, so don't slack.
  • Arrange the whole potatoes on the baking sheet. Then, using a potato masher or the bottom of a glass, gently ‘smoosh' the potatoes. Not so much that it breaks the bottom skin and crumbles the potato, but just enough that is smooshes all that potato-y goodness out.
  • After that potatoes are properly smooshed, drizzle a bit of olive oil over each potato (butter works, too). Then, salt and pepper them generously.
