S'mores Cookies Recipe image

S'mores Cookies made with a graham cracker flavored cookie dough and filled with mini marshmallows and mini chocolate chips.

Number Of Ingredients 11

1/2 cup unsalted butter (softened)
1/2 cup brown sugar
1/3 cup sugar
1 egg
1 teaspoon vanilla
1 cup graham cracker crumbs
1 1/4 cups flour (all-purpose)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mini chocolate chips
1/2 cup Jet-Puffed Vanilla Mallow Bits

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl or stand mixer, cream together butter, brown sugar and sugar.
  • Add egg and vanilla, mix until combined.
  • Add graham cracker crumbs, flour, baking soda, and salt until just combined.
  • Fold in mallow bits and chocolate chips.
  • Drop by heaping tablespoons on a baking sheet sprayed with nonstick cooking spray or lined with parchment paper.
  • Bake for 6-8 minutes, or until cookies are set.
  • Let cool on the baking sheet for 2 minutes, then transfer to a wire cooling rack.

16 chocolate chip cookies
8 marshmallows (vegetarian brand, if required)
8 tsp chocolate hazelnut spread (we used Nutella)

Steps:

  • Preheat the grill to high and line a baking sheet with parchment. Put 8 cookies on the tray and top with a marshmallow. Grill until the marshmallow begins to brown and melt.
  • Put a tsp of chocolate hazelnut spread on the other 8 cookies and sandwich on top of the melty marshmallow layer.
