FRUITED GELATIN SALAD

I've found this salad to be perfect for potlucks and special occasions. It cuts nicely into squares and can be served on lettuce leaves if you like. -Norma Warner, Hot Springs Village, Arkansas

Number Of Ingredients 16

2 packages (3 ounces each) orange gelatin
2 cups boiling water
1 cup apricot nectar
1 cup pineapple juice
1 can (15 ounces) apricot halves, drained and mashed
1 can (8 ounces) crushed pineapple, drained
4 cups miniature marshmallows
TOPPING:
1/2 cup sugar
2 tablespoons all-purpose flour
1/2 cup apricot nectar
1/2 cup pineapple juice
1 large egg, lightly beaten
2 tablespoons butter
1 cup heavy whipping cream
1 cup shredded cheddar cheese

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in the juices, apricots and pineapple. Transfer to a 13x9-in. dish coated with cooking spray. Refrigerate for 30 minutes or until partially set. Sprinkle with marshmallows; refrigerate., For topping, combine sugar and flour in a saucepan. Gradually whisk in juices. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Removed from the heat. Stir a small amount into egg; return all to the pan, stirring constantly. Cook and stir until a thermometer reads 160° and mixture is thickened. Remove from the heat; stir in butter. Cool to room temperature., In a small bowl, beat cream on high speed until stiff peaks form. Gently fold into custard. Spread over gelatin; sprinkle with cheese. Refrigerate 1 hour or until chilled.

Whenever I invite my big family for dinner, my grandchildren request this favorite fruit salad. My sons have always liked it, too - maybe the taste runs in our family! This salad is also good for potluck gatherings.

Number Of Ingredients 14

2 cups boiling water, divided
1 package (3 ounces) lemon gelatin
2 cups ice cubes, divided
1 can (20 ounces) crushed pineapple, liquid drained and reserved
1 package (3 ounces) orange gelatin
2 cups miniature marshmallows
1/2 cup sugar
2 tablespoons cornstarch
1 cup reserved pineapple juice
1 large egg, lightly beaten
1 tablespoon butter
3 large bananas, sliced
1 cup whipped topping
1/2 cup finely shredded cheddar cheese

Steps:

  • In a large bowl, combine 1 cup water and lemon gelatin. Add 1 cup ice cubes, stirring until melted. Stir in pineapple. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until set but not firm., Repeat with the orange gelatin, remaining water and ice. Stir in marshmallows. Pour over lemon layer; refrigerate until firm. , Meanwhile, in a small saucepan, combine sugar and cornstarch. Stir in reserved pineapple juice until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat., Stir a small amount of hot filling into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat; stir in butter. Cool to room temperature without stirring. Refrigerate for 1 hour or until chilled., Arrange bananas over gelatin. Stir whipped topping into dressing. Spread over bananas. Sprinkle with cheese.

I CAN remember looking forward to eating this pretty salad when I was a child. It has all the ingredients a child would like. My Grandmother served it during the holidays and on other special occasions and my Mother did the same.

2 packages (3 ounces each) orange gelatin
1 cup boiling water
1 pint orange or pineapple sherbet
1 can (11 ounces) mandarin oranges, drained
1 can (8 ounces) crushed pineapple, drained
1 cup miniature marshmallows
1 cup heavy whipping cream, whipped

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Add sherbet; stir until smooth. Stir in the oranges, pineapple and marshmallows. Fold in whipped cream. , Pour into a 6-cup serving bowl. Cover and refrigerate for 3-4 hours or until set.

1 can (11 oz.) fruit cocktail, undrained
1 cup boiling water
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
1 Tbsp. fresh lemon juice
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened

Steps:

  • Drain fruit cocktail, reserving 3/4 cup juice.
  • Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Stir in reserved juice and lemon juice; pour 1-1/4 cups into 8x4-inch loaf pan sprayed with cooking spray. Refrigerate 1 hour or until gelatin is set but not firm.
  • Add remaining gelatin mixture gradually to cream cheese in medium bowl, whisking after each addition until blended. Stir in fruit. Spoon over gelatin layer in pan.
  • Refrigerate 4 hours or until firm. Unmold before serving.

Another nice ,light jello dessert or a cool side salad. This can be made with any flavored jello or matching fruit. This one has pears and lime jello. Try with peach jello and peaches. or blueberry jello with blueberries. or raspberry jello with raspberries. etc.

Number Of Ingredients 7

15 1/2 oz can of pear halves in light syrup, undrained
1 c boiling water
3 oz pkg. lime jello
1/4 tsp salt
1 Tbsp fresh lemon juice
6 to 8 oz cream cheese, softened
1/8 tsp ground cinnamon

Steps:

  • 1. Drain pears, reserving 3/4 cup of the syrup. Dice pears; set aside. --- Stir boiling water into jello and salt in medium bowl at least 2 minutes until completely dissolved. Stir in reserved syrup and lemon juice.
  • 2. Pour 1 1/4 cups of the jello mixture into an 8x4 inch loaf pan or 4-cup mold sprayed with cooking spray. Refrigerate about 1 hour or until set but not firm- just so it mounds.
  • 3. Beat remaining jello mixture gradually into cream cheese until smooth. Stir in fruit and cinnamon. Spoon over plain lime jello in the pan. Chill 4 hours or overnight is best.
  • 4. Unmold by dipping mold in warm water for a few seconds. Gently pull jello from around edges with moist fingers. Place on a moist serving plate on top of mold. Invert mold and plate; shake slightly to loosen. Gently remove mold and center jello on plate of salad greens and a few fruit pieces, if desired.

1 package (.6 ounces) sugar-free cherry gelatin
1 can (12 ounces) or 1-1/2 cups diet ginger ale
1 can (8 ounces) unsweetened crushed pineapple, undrained
Apple slices and fresh mint, optional

Steps:

  • In a saucepan, bring the applesauce to a boil; remove from the heat., Stir in gelatin until dissolved. Slowly add ginger ale and pineapple. Pour into a 2-qt. serving bowl. Chill until set. Garnish with apples and mint if desired.
