PAIGE'S BROWNIE S'MORES BARS

Nonstick cooking spray, for the parchment
1/4 cup milk
2 large eggs
One 18.4-ounce box brownie mix
2/3 cup (about 11 tablespoons) salted butter, melted
2/3 cup marshmallow cream
Three 1.55-ounce milk chocolate bars, 2 separated into segments, 1 chopped, for garnish
1 sleeve graham crackers (9 large rectangles), broken into small pieces
One 10-ounce bag mini marshmallows
1/4 cup bottled salted caramel sauce
1 cup mini chocolate-coated candies
1/2 cup multi-colored sprinkles

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a 9-by-13-inch cake pan with parchment, allowing it to hang over the sides. Coat with cooking spray.
  • Whisk together the milk and eggs in a medium bowl. Fold in the brownie mix until you have a smooth mixture. Stir in the butter.
  • Pour 2 cups of the batter into the prepared pan and spread to even out the surface. Drop spoonfuls of the marshmallow cream on top of the batter and use a wooden skewer or knife to create a swirling pattern. Pour the remaining brownie batter over the top. Arrange the segments of chocolate bar on top. Next, sprinkle over half of the graham crackers.
  • Bake for 30 minutes, then remove from the oven and sprinkle over the mini marshmallows. Bake until the marshmallows start to brown a little, an additional 10 minutes, then remove from the oven and allow to cool for about 5 minutes. Drizzle over the salted caramel. Sprinkle the remaining graham crackers, chopped chocolate bar, mini chocolate candies and sprinkles over the caramel sauce.
  • Using the parchment, remove the whole brownie bar from the pan. Slice into squares and serve.

BLEND FIRST THREE INGREDIENTS ADD:
1 1/4 c flour
3/4 c graham crackers, crushed
1 tsp baking powder
CREAM ALL INGREDIENTS. WILL BE OF A COOKIE CONSISTENCY

Steps:

  • 1. Spread half of dough in a 9x9 inch pan. Pour one jar of marshmallow creme on dough. Place 5 chocolate (Hershey) bars on top of marshmallow. Spread remaining dough on top of chocolate bars. Bake for 20-25 minutes at 350 degrees.
  • 2. After S'mores are done take 1/2 tsp.(liquid) shortening and part of a chocolate bar and melt together in microwave. Drizzle over the S'mores. These are a hit at any party!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare brownie mix according to package directions. Spread into a greased 9x13 inch pan.
  • In a medium bowl, break graham crackers into 1 inch pieces and toss with miniature marshmallows and milk chocolate. Set s'more mixture aside.
  • Bake brownies for 15 minutes in the preheated oven. Remove, and sprinkle the s'more goodies evenly over the top. Bake for an additional 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. Allow brownies to cool before cutting into squares.

1 teaspoon ground cinnamon
1/2 teaspoon chili powder
1/4 teaspoon kosher salt

1/2 cup granulated sugar
1/2 cup light brown sugar
1 teaspoon vanilla extract
3 tablespoons unsalted butter, melted and slightly cooled
1/2 cup cocoa powder

1/4 teaspoon ancho chile powder
1/4 teaspoon kosher salt
1/4 cup semisweet chocolate chips

Steps:

  • For the graham cracker layer: Preheat oven to 350 degrees F. Grease and line an 8-inch square baking pan with parchment, leaving a 1-inch overhang on each side.
  • Add the graham crackers, cinnamon, chili powder and salt to a food processor and pulse to break up. Add the butter and pulse until the ingredients are combined and the mixture resembles sand. Press the mixture into the prepared baking pan. Refrigerate while you make the brownie layer.
  • For the brownie layer: Combine the eggs, sugars and vanilla extract in a large bowl. Mix until well combined. Add the melted butter, cocoa powder, flour, baking powder, cinnamon, ancho chile powder and salt. Stir to combine, but take care to not overmix. Add the chocolate chips and fold in.
  • Spread the entire brownie layer mixture over the top of the graham cracker crust. Bake until the top is dry and firm, about 40 minutes. (A cake tester will not come out clean because the brownies are so fudgy!) Let them cool completely.
  • For the marshmallow frosting: Turn the oven to the broil setting. Adjust the oven rack so it's 6 inches from the heat source.
  • Spread the mini marshmallows on an unlined sheet tray, then broil until toasty and charred, about 1 minute. (As an alternative, use a kitchen torch and char until you have your desired level of darkness.) Let cool to touch.
  • Add the butter and powdered sugar to a bowl and beat until fluffy and well mixed. Add the marshmallow creme and vanilla and stir until combined. Set aside.
  • Spread the marshmallow frosting over the top of the cooled brownie. Add the charred mini marshmallows all over.
  • Remove from the pan and cut into squares.

These messy-in-a-good-way blondies capture the essence of s'mores - toasted marshmallows, gooey chocolate, malty graham cracker flavor - in a home oven. The blondie base replaces some of the flour with graham cracker crumbs, and is studded with large chunks of chocolate and marshmallow. Use chopped bar chocolate rather than chocolate chips, which contain stabilizers and don't fully melt (though substituting chips will still result in a delicious blondie). As the blondies finish baking, they're topped with a layer of marshmallows and another round of chocolate; messy and delicious, just like the real thing.

9 whole graham crackers (about 135 grams), or store-bought graham cracker crumbs (about 1 cup)
1 1/4 cups/160 grams all-purpose flour
1 1/4 teaspoons baking powder
1 teaspoon fine sea salt
1 cup/225 grams unsalted butter (2 sticks), at room temperature
1 packed cup/220 grams dark brown sugar
1/2 cup/100 grams granulated sugar
2 large eggs, at room temperature
1 tablespoon vanilla extract
8 ounces/225 grams bittersweet chocolate, coarsely chopped into chunks
2 1/2 cups/150 grams mini marshmallows

Steps:

  • Heat oven to 350 degrees and arrange oven racks in the upper and lower thirds of the oven. Coat the inside of a 9-by-13-inch pan with nonstick spray and line it with parchment paper, leaving 2 inches of excess parchment on the long sides of the pan. (The excess will help you pull the blondies out later.)
  • If using whole graham crackers, add them to the bowl of a food processor and pulse until they form a fine powder. Alternately, you could put the crackers in a large resealable plastic bag and crush them using a rolling pin, then add them to the bowl. If using store-bought crumbs, add them directly to the food processor. Add the flour, baking powder and salt to the crumbs, and pulse a few times to combine.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter, brown sugar and granulated sugar on medium speed until light and fluffy, 4 to 5 minutes. Add the eggs one at a time and mix on medium speed until well incorporated, scraping the sides of the bowl after each addition.
  • Add the vanilla and mix to combine. Turn the mixer to low and add the graham crumb mixture and mix just to combine. Add about ¾ of the chocolate to the mixer and mix to incorporate. Transfer the dough to the prepared pan. Use damp hands to press the dough into an even layer.
  • Bake on the lower rack until the bars are golden at the edges and the surface has a crackly appearance, 30 to 32 minutes. Remove the pan from the oven and sprinkle the marshmallows evenly over the surface. Return the pan to the top rack of the oven and bake until the marshmallows have softened and begun to turn golden brown, 6 to 8 minutes.
  • Remove the pan from the oven. If any of the marshmallows have puffed up, use a toothpick or skewer to puncture them; they will deflate easily. Sprinkle the reserved chocolate on top of the marshmallows and return the pan to the top rack of the oven. Bake until the chocolate is melted and gooey, and the marshmallows are lightly toasted, about 2 minutes. Transfer the pan to a wire rack and let cool, 45 minutes.
  • Using a thin knife, slide the blade between the blondies and the pan on the short sides of the pan, then use the parchment sling to carefully remove the blondies. Let cool another 10 minutes, then slice into 12 even pieces and serve.

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the graham crackers in a large plastic bag. Using a rolling pin or skillet, crush the crackers into fine crumbs.
  • In a bowl, combine the graham cracker crumbs, sugar and melted butter. Press the mixture into the bottom of lightly greased (8- by 8-inch) baking dish. Bake the crust until slightly darkened and firm to touch, approximately 10 to 12 minutes. Remove the crust from the oven and reduce the temperature to 325 degrees F, while preparing the brownie batter.
  • Melt the butter and semisweet chocolate together in a double boiler over simmering water. Allow to cool slightly (but not harden), then add the eggs, vanilla, and sugar. Sift together the flour, baking powder and salt, and add to the chocolate mixture. Add additional chocolate chips, if desired, at the last minute, folding them in to combine.
  • Pour the brownie batter over the graham cracker crust and bake for 35 to 40 minutes, taking care not to overbake. A tester stuck into the brownies will not come out clean when done cooking. The idea is to create a center with a texture close to fudge. Remove the brownies from the oven and allow to cool before topping with marshmallows.
  • To serve, top the brownies with marshmallows and broil until the marshmallows are melted, golden and bubbling. Serve immediately and enjoy.

1/2 cup quinoa flour *

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line a 24-count mini-muffin pan with paper liners.
  • Heat the butter in a small saucepan over low heat. Remove the pan from the heat and add 3/4 cup of the mini chocolate chips. Stir until the chocolate is melted and the mixture is smooth. 1 1/2 cups crushed graham cracker crumbs
2 tablespoons sugar

4 ounces unsweetened chocolate, chopped
1 cup packed light brown sugar
3/4 cup white sugar
1 1/2 teaspoons pure vanilla extract

4 large cold eggs
1 cup all-purpose flour
4 cups large marshmallows

Steps:

  • Position a rack in the lower third of the oven and heat oven to 325 degrees F. Line an 8 by-8-inch square baking pan with foil so it hangs over the edges by about 1 inch.
  • For the crust: Lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the crumbs, sugar, and salt in a medium bowl. Press the crumb mixture evenly over the bottom of the pan. Bake until golden brown, about 20 minutes.
  • Meanwhile, make the brownie. Put the butter and chocolate in a medium microwave-safe bowl. Melt in the microwave on 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. Alternatively, put the butter and chocolate in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water. Stir occasionally until melted. Stir the light brown and white sugars, vanilla and salt into the melted chocolate. Add the eggs and beat vigorously to make a thick and glossy batter. Add the flour and stir until just incorporated.
  • Pour batter into the prepared pan. Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 minutes.
  • Remove from the oven and carefully position a rack about 6 inches from the broiler and preheat on low. Layer marshmallows across the top and toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 minutes. Cool on a rack, gently removing the brownies from the pan using the aluminum flaps. Carefully separate any marshmallow from the foil and fold away. Cut into 12 (2-inch) squares.

Cook on low an additional minute and mix to combine everything.
  • When brownies are just baked sprinkle on chocolate pieces and cover the whole pan in mini marshmallows turn the broiler on low and place the brownies under the heat. Watch carefully so they do not burn. Take out and let cool completely. To achieve clean cuts you must run your knife under hot water and clean the knife after each slice.

  • Press mixture evenly into bottom of prepared baking pan. Bake 20 to 25 minutes or until blondies are golden and a toothpick inserted in the center comes out clean. Cool completely in pan, about 1 hour.
  • In a small saucepan over medium-low heat, stir 1 cup chocolate chips and sweetened condensed milk, 4 to 5 minutes, until mixture is fully melted and smooth. Carefully pour chocolate mixture over fully cooled blondies in baking pan; spread to cover evenly. Transfer baking pan to fridge until ganache is fully set, about 1 to 1 1/2 hours.
