GRANDMA'S OATMEAL RAISIN COOKIES

Very moist (don't cook them too long), very rich in flavor, yet somehow not too heavy. Grandma's recipe! Even people who don't like oatmeal raisin cookies do like these.

2 cups shortening
2 cups brown sugar
½ cup white sugar
4 eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
6 cups rolled oats
1 cup milk
2 cups raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt, cinnamon, allspice and cloves; stir into the sugar mixture until well blended. Mix in the rolled oats alternately with the milk. Finally, stir in the raisins. Drop by heaping spoonfuls 3 inches apart onto the prepared cookie sheets.
  • Bake in the preheated oven for 10 to 11 minutes, or until edges are golden and tops are dry. Cool on cookie sheets for 1 minute before removing to cool on wire racks.

3 eggs
1 cup raisins
1 teaspoon vanilla extract
1 cup butter flavored shortening
1 cup packed brown sugar
1 cup white sugar
2 ½ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 cups quick cooking oats
½ cup chopped walnuts

Steps:

  • Beat eggs, and stir in raisins and vanilla. Refrigerate for at least an hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream together shortening, brown sugar, and white sugar until light and fluffy. Combine flour, baking soda, salt, and cinnamon; stir into the sugar mixture. Mix in raisins and eggs, then stir in oats and walnuts. Roll dough into walnut sized balls, and place 2 inches apart on ungreased cookie sheets.
  • Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Cool on wire racks.

1-1/2 cups shortening
2 cups sugar
4 large eggs, room temperature
4 teaspoons water
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
4 cups quick-cooking oats
2 cups chopped raisins
1 cup chopped walnuts
Additional sugar or colored sugar

Steps:

  • Preheat oven to 350°. Cream shortening and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in water. In another bowl, whisk together flour, baking soda, cinnamon and salt; add to creamed mixture, and mix well. Stir in oats, raisins and walnuts. , On a surface sprinkled with additional sugar, roll dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. cookie cutter in desired shapes. Place 2 in. apart on greased baking sheets. Bake until set, 12-15 minutes. Remove to wire racks to cool.

1-1/2 cups packed brown sugar
1/2 cup sugar
4 eggs
7 cups quick-cooking oats
2-1/2 cups all-purpose flour
1 package (5.1 ounces) instant vanilla pudding mix
2 teaspoons baking soda

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the oats, flour, dry pudding mix and baking soda; gradually add to the cream mixture and mix well. , Drop by heaping tablespoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 375° for 12-14 minutes or until golden brown. Remove to wire racks to cool.

1 1/2 c all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c butter, unsalted
1 1/2 c brown sugar, firmly packed
1 large egg
1 tsp vanilla
1 1/2 c oatmeal (not the quick cooking kind)
1 c flaked coconut
1/2 c chopped nuts (optional)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a medium bowl, whisk flour, baking powder, baking soda, and salt; set aside.
  • 3. Cream butter and sugar together; add egg and vanilla until well combined. Mix in flour mixture. Gently fold in oatmeal, coconut and nuts (if using).
  • 4. Drop by teaspoonful onto greased cookie sheet. Bake for approximately 12 minutes or until cookies are lightly golden brown. For chewier cookies, bake for less time and for crunchier cookies, bake for more time. Cool on wire rack.

1 cup unbleached flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
14 tablespoons unsalted butter (1 3/4 sticks at room temp)
1 cup granulated sugar
1/4 cup light brown sugar (packed)
1 large egg
1 teaspoon vanilla
2 1/2 cups old fashioned oats (old fashioned type no instant stuff)

Steps:

  • Heat oven to 350°F - you will need 3 baking sheets lined with parchment paper (again the parchment keeps the cookie from burning and makes clean up faster).
  • Whisk together flour, baking powder, soda and salt.
  • Beat together with mixer at low speed - butter and sugar until the sugar granules are not visible. Increase speed and beat 1 minute longer, scrape sides as needed and add egg, beat another 30 seconds. Add flour mixture 1/3 at a time and incorporate well over med speed until mixture is smooth. Add oatmeal and stir into the dough using your rubber spatula.
  • Divide into 24 equal portions and bake for 13 to 16 minutes placing only one cookie sheet in the oven at a time and rotating the cookie sheet half way through your cooking time -- these are the best and the thinnest cookies and very crispy.

3/4 cup butter-flavored shortening

2 cups chopped walnuts

Steps:

  • Place raisins in a small bowl. Cover with boiling water; let stand for 5 minutes. Drain and set aside., In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs. Combine the flour, oats, baking soda and salt; gradually add to creamed mixture and mix well. Stir in walnuts and raisins., Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Flatten with a glass. Bake at 325° for 8-10 minutes or until bottoms are browned. Remove to wire racks.

This recipe comes from my Great Great Grandma Lillian Hallock. She'd make these whenever she was expecting a visit from us. Whenever we make it nowadays we have to make 2 batches, as the first one gets eaten in dough form while it still frozen. Preparation Time includes cooling time.

1 cup flour
1 cup brown sugar
3 cups quick-cooking oatmeal
1 cup margarine
1/4 cup boiling water
1 1/2 teaspoons baking soda

Steps:

  • Mix flour and brown sugar.
  • Add oatmeal and stir.
  • Melt butter and add to dry ingredients.
  • Mix baking soda into boiling water.
  • Add baking soda and water to other ingredients and stir well.
  • Place batter into aluminum foil-lined loaf pan and place in freezer for several hours.
  • Slice and bake at 375°F for 10 minutes, then cool on wire rack.
  • P.S. Don't let anyone get into the cookie dough for a taste test while it sets in the freezer, as the dough is SO VERY GOOD. Every one will want to eat it before before it makes it into the oven.
