VENISON SANDWICH SPREAD

My grandmother was from a ranch and they hunted their meat. Deer was it by choice. She would always take here chicken salad (?) to the Church socials. That is what every one thought it was and always asked for it especially.

Number Of Ingredients 6

1 large venison rump roast
1 large jar of mayonese
5-6 stick celery stalk
1-2 large onions chopped fine
1 large jar of pickles chopped up
dash(es) salt and pepper

Steps:

  • 1. bake roast 30 mins per pound then strip meat and chop till fine, mix ingredients together and you can add extra mayonese if it needs to be creamier.
  • 2. spread on bread and make sanwiches, top on lettuce salad, eat with crackers or chips or eat by itself

This is another wonderful recipe from Pass It On, a cookbook compiled by the ladies at the Presbyterian Church here where I live. The cooking time listed is the time to chill the spread.

2 cups smoked venison, finely ground
1/2 cup mayonnaise
2 teaspoons garlic salt
1/4 cup Durkee's sauce, to taste
1/4 cup minced onion
2 tablespoons tiger sauce
1 lemon, juice of

Steps:

  • Combine all ingredients and chill 8 hours or overnight.
  • Serve on Melba toast.

Vacuum seal the meat and set it in the fridge for 2 days, longer if you are using elk or moose or something else thick. You cannot leave this too long -- it won't get too salty, so you can leave the meat in the fridge a week if you wanted to.
  • Get your smoker going; wood choice is yours. Try to keep it below 200°F. When it's ready, rinse the meat, then pat it dry with paper towels. If you have a probe thermometer, insert it into the thickest part of the backstrap. Smoke until it reaches about 135°F, which should take between 2 and 4 hours. Slice and eat.
