1 cup dried black-eyed peas or field peas
2 tablespoons olive oil
1 smoked hog jowl, or 1/4 pound (3 strips) thick-cut smoked bacon
1 medium onion, coarsely chopped
1/2 teaspoon ground black pepper
1 teaspoon crushed red pepper flakes
1 teaspoon salt
5 or 6 peeled whole tomatoes, or half a 28-ounce can, drained (optional)
1 1/2 cups uncooked rice

Steps:

  • Wash the peas in a strainer, and soak them for 4 hours in ample fresh water. When ready, heat olive oil over medium-high heat in a 4-quart pot, and brown the hog jowl on both sides. (If using bacon, omit the olive oil, and simply render the fat in the pot for 5 minutes.) Add onion, and cook until softened, about 5 minutes. Add 6 cups water, black pepper, red pepper and salt, and bring to a boil.
  • Let mixture boil 10 minutes, and then add peas. Maintain a low boil, uncovered, until peas are nearly tender (25 minutes for black-eyed peas, 30 minutes for field peas). In a bowl, lightly crush tomatoes, and add to pot. Add rice to pot, reduce heat to low and simmer, covered, 20 minutes.
  • Turn off flame, and allow hoppin' John to steam in pot, lid on, for 5 minutes. If using hog jowl, remove from pot, and shred meat. Fluff hoppin' John, and add shredded jowl. Serve.

  • Weigh the jowl in grams. Now weigh out 2% of that weight in regular salt, and then 0.25% -- that's a quarter of 1 percent -- of curing salt. Very roughly speaking, this should be about 4 tablespoons of regular salt and a quarter teaspoon of curing salt. Mix these salts together. If you like sugar in your cure, mix this in as well. I like a half cup of brown sugar sometimes.
  • Massage the salts (and sugar, if using) into the jowl well. Put the jowl in a vacuum bag and add any stray salt. Seal the bag and put in the fridge for a week. If you don't have a vacuum bag, put the jowl in a sealable plastic bag and set that in the fridge for a week. In this case, flip the jowl over every day.
  • When the jowl has been cured, remove it from the bag, give it a quick rinse and pat dry. Set it on a rack in the fridge overnight.
  • Get your smoker ready. Set it at as close to 165F as you can, and you can go a little hotter and a lot cooler if you have that ability. Take the jowl out of the fridge and set it in the smoker. Smoke for at least 3 hours, and up to 8 hours if your smoker is below 120F. I like 4 hours at 165F.

  • In a heavy bottomed saucepan, cook sliced jowl on medium heat. Gently move slices around so the fat will render and jowl will become golden and crisp. Remove jowl and carefully pour all rendered fat in a heat resistant measuring cup.
  • Toss cut tomatoes with 1 Tbsp olive oil and ½ tsp sea salt. Place on a baking sheet, skin down.
  • Once oven is hot, turn broiler on and place tomatoes in heated oven under broiler for 10 minutes (careful not to burn) After 10 minutes, turn oven back to bake at 450⁰F for approximately 45 minutes, depending on oven and tomatoes.
