Smoked Paprika Roasted Salmon with Wilted Spinach image

A sweet-smoky rub featuring smoked paprika, brown sugar and cinnamon complements salmon's moderate flavor and moist meaty texture. Served on a bed of sautéed spinach, this dish makes a lovely presentation for entertaining.

1/4 cup orange juice
2 tbsps (plus 1 teaspoon) olive oil divided
2 tsps McCormick Gourmet™ Organic Thyme divided
2 pounds salmon fillets
1 tbsp brown sugar
1 tbsp McCormick Gourmet™ Organic Paprika, Smoked
1 tsp McCormick Gourmet™ Organic Cinnamon, Ground Saigon
1 tsp grated orange peel
1/2 tsp McCormick Gourmet™ Sicilian Sea Salt
1 bag (10 ounces) fresh spinach leaves

Steps:

  • Mix orange juice, 2 tablespoons of the oil and 1 teaspoon of the thyme in small bowl. Place salmon in glass dish. Add marinade; turn to coat. Cover. Refrigerate 30 minutes or longer for extra flavor
  • Preheat oven to 400°F. Mix brown sugar, smoked paprika, cinnamon, orange peel, remaining 1 teaspoon thyme and sea salt in small bowl. Remove salmon from marinade. Place in greased foil-lined baking pan. Discard any remaining marinade
  • Rub top of salmon evenly with smoked paprika mixture. Roast 10 to 15 minutes or until fish flakes easily with a fork
  • Meanwhile, heat remaining 1 teaspoon oil in large skillet on medium heat. Add spinach; cook 2 minutes or until wilted. Serve salmon over spinach

Smoked paprika salmon is an easy Mexican salmon recipe that is seasoned, pan-fried/ baked, and served alongside sweet and spicy mango salsa. A quick salmon dinner for busy and hungry weeknights!

4 (150 gms/ 5.3 oz) salmon fillets (about 1 to 1¼ inch thick)
1 tablespoon lime juice
3 tablespoons olive oil ((or 1 tablespoon if baking the salmon))
1 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon cumin powder
½ teaspoon black pepper
½ teaspoon sea salt
1 mango (finely chopped)
½ onion (finely chopped)
1 tomato (finely chopped)
1 small lime (juice and zest)
1 jalapeno/green chilli (finely chopped (remove seeds and ribs to reduce spice))
¼ cup cilantro (finely chopped)
½ teaspoon pink salt or sea salt

Steps:

  • Season the salmon fillets with the spice rub. Drizzle lime juice on the fillets.
  • Heat olive oil in a frying pan and place the fillets skin side down. (Fry the fillets in batches so you don't overcrowd the pan.)
  • Cook on medium-high heat for 2 to 3 minutes. then flip and cook the other side for 2 to 3 minutes.
  • Preheat the oven to 200°C/400°F.
  • Season the salmon and sprinkle lime juice. Place in an oven-proof dish and spray olive oil. Bake in the oven for about 8-10 minutes until your desired doneness. (If you want it well done, bake for 10 minutes.)
  • Combine all ingredients and let it sit for 5 minutes. Serve with paprika salmon. Or break the salmon into chunks and serve on tortillas with mango salsa topped with honey mustard coleslaw and spicy avocado sauce.

For the salmon:
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
Zest and juice of 1 lemon
2 tablespoons olive oil, divided
2 1/2-pound salmon fillet
For the green beans:
1 pound green beans, trimmed
3 cloves garlic, minced
1 teaspoon kosher salt
1/4 cup chopped Marcona almonds

Steps:

  • Heat the oven to 400°F. Line a rimmed baking sheet with foil, then coat it lightly with cooking spray.
  • In a small bowl, mix together the paprika, garlic powder, salt, pepper, and lemon zest. Add 1 tablespoon of the olive oil, then mix well.

Inspired by the smoke, spice and sweetness that characterize classic dry barbecue rubs, this super easy salmon recipe skips the grill, making for easy cleanup and a dinner that's doable any night of the week. While a fragrant rub like this one might overpower a milder fish, salmon stands up to strong flavors beautifully. This dish works well with summer picnic sides like coleslaw and potato salad, but it is equally good with roasted potatoes and a simple green salad. The rub is only mildly spicy as written, so add a pinch of cayenne if you'd like a little more kick.

4 (6-ounce) skinless salmon fillets
1 1/2 tablespoons dark or light brown sugar
1 teaspoon kosher salt, plus more for serving
1 teaspoon dry mustard powder
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 to 3 tablespoons olive oil

Steps:

  • Heat the oven to 450 degrees. Pat the salmon fillets dry with a paper towel and place them in an ovenproof baking dish large enough to hold them without crowding.
  • In a small bowl, combine the brown sugar, salt, mustard powder, paprika, chili powder, pepper and garlic powder; mix well with a fork.
  • Sprinkle the spice rub over the fillets, then turn them, pressing gently, to coat all sides with the rub. Brush the fillets all over with the olive oil.
  • Roast the salmon for 12 to 14 minutes, depending on the thickness of the fillets, until it flakes easily and is just cooked in the center. Let the salmon rest for 5 minutes, then sprinkle lightly with salt and serve.
