20-Minute Grilled Pizza with Smoked Salmon and Mixed Greens image

Grilling pizza gives the crust a wonderful char in just a few minutes, without heating up the kitchen. We took our inspiration for the no-cook toppings from our Sunday bagels: A schmear of lemony cream cheese is a natural for the smoked salmon, while cucumbers and radishes add color and crunch.

Number Of Ingredients 11

8 ounces whipped cream cheese, at room temperature
Zest and juice of 1 small lemon
1/4 cup fresh dill, roughly chopped, plus more fronds for garnish
Kosher salt and freshly ground black pepper
1 pound frozen pizza dough, thawed
All-purpose flour, for sprinkling
1/4 cup extra-virgin olive oil, plus more for oiling the grill grates
1/2 pound smoked salmon, thinly sliced
1 Persian cucumber, very-thinly sliced
2 radishes, very-thinly sliced
5 ounces mesclun mix

Steps:

  • Prepare a grill for medium-high heat.
  • Line a baking sheet with parchment paper. Stir together the cream cheese, lemon zest, 1 tablespoon of the lemon juice, the chopped dill, a large pinch of salt and several grinds of pepper in a small mixing bowl. Set aside.
  • Divide the pizza dough into 2 balls. Sprinkle the flour on a clean flat surface and roll each ball into an elongated crust, approximately 16 inches long and 6 inches wide. Transfer the crusts to the prepared baking sheet. Brush both sides of both crusts with 2 tablespoons of the oil and lightly sprinkle with salt.
  • Lightly oil the grill grates. Grill the crusts until they start to puff and distinct grill marks appear, about 2 minutes. Flip and cook until just cooked through, an additional 1 to 2 minutes. Discard the used parchment paper and put the finished crusts on the baking sheet.
  • Smear each crust with the cream cheese mixture. Shingle the smoked salmon on top making sure that each bite will have a piece of salmon. Scatter the sliced cucumbers and radishes on top of the salmon and garnish with dill fronds.
  • Whisk together the remaining lemon juice, remaining 2 tablespoons oil and a large pinch of salt and pepper in a large bowl. Add the mesclun mix and toss to combine. Serve the pizzas family-style or cut each pizza in half and serve as individual pizzas for 4 people, with some salad on the side.

1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 tablespoon butter
1/2 pound thick cut deli sliced smoked turkey, diced
1 medium onion, chopped
8 cups mixed dark greens: dandelion, mustard, chard, kale - cook's choice, coarsely chopped
Salt and pepper
2 tablespoons cider vinegar, 2 good splashes
2 teaspoons sugar
A few dashes hot sauce
1 to 1 1/2 cups beer or chicken stock

Steps:

  • Heat a large skillet over medium high heat. Add extra-virgin olive oil and butter. When butter melts into extra-virgin olive oil, add smoked turkey and caramelize meat, a couple of minutes on each side. Add onions and cook 3 to 4 minutes more. Wilt greens into the pan and season with salt and pepper. Cook and toss the greens a minute or 2 more then add the vinegar - lean back - sugar and hot sauce. Cook off vinegar for a minute then add beer or stock, enough to coat the pan and loosen up greens in liquid. Reduce heat to medium low. Simmer greens 10 to 15 minutes until no longer bitter.

3 cloves garlic, peeled and sliced
1 pound bacon, chopped
2 bunches mustard greens, chopped
3/4 cup chicken stock
1/4 cup golden raisins
Salt and freshly ground black pepper

Steps:

  • On medium heat, saute garlic and bacon in a large saute pan.
  • While bacon is cooking boil water in a large pot. Blanch mustard greens in boiling water until bright green. Drain greens.
  • In a saute pan with the bacon, add greens and garlic. Stir together. Add chicken stock and raisins. Mix well together. Add salt and pepper, for taste, and let simmer for 5 minutes.

Try the Smoked Turkey Braised Greens for a down-home comfort food taste. In the southern regions of the USA, we love greens like collards and kale. Unfortunately I was raised like most good southern girls to boil those greens to death. This recipe shows you a new technique for getting succulent greens without losing the nutrients from boiling. I made these greens for Christmas dinner using smoked ham instead of turkey and -- wow!!! It was out of this world good! My husband Keith hates collards but he had a third helping of these AND I caught him nibbling in the kitchen later that night! Enjoy!

Braised Smoked Collard Greens With Pepper Vinegar image

Braise smoked collard greens with onions, then toss them with a bright pepper vinegar for dish that's smoky, sweet, and savory. From chef Mashama Bailey.

1 cup apple cider vinegar
1⁄4 cup sugar
1⁄4 cup thinly sliced serrano chiles
1 pound pecan wood chips
7 pounds collard greens, stemmed and washed
1½ cups chopped red onions
1½ cups chopped white onions
1½ cups thinly sliced leeks, white and light green parts
1 large shallot, sliced
1 quart olive oil
Salt
8 cups water

Steps:

  • To make the pepper vinegar: Bring the vinegar and sugar to a boil and stir to dissolve. Add the chiles and cool in the fridge for at least 2 hours to overnight.
  • Smoke the collards in 2 batches: Preheat the oven to 200°F. To create a smoker, use two large aluminum pans. First, heat the wood chips in a cast-iron pan over hight heat, until they begin to smoke. Remove the cast-iron pan from the heat and place the hot wood chips in one of the aluminum pans. Then, using a small but sharp knife, punch holes in the bottom of the second pan and place it on top of the first pan with the wood chips inside. Add the collards to the top pan, place in the oven, and smoke for 15 minutes. Remove from the oven and set aside.
  • In a Dutch oven, sweat the red and white onions, leeks, and shallot with 2 cups of the olive oil and a nice pinch of salt. Add the smoked collards in increments until they cook down, then add more. Once all of the collards are in the pot, add the remaining oil and 8 cups of water. Cook, covered, on low heat, until done, about 1½ to 2 hours.
  • To serve: Dress the collard greens with the pepper vinegar to taste.

Perfect Mixed Greens image

A delicious mixture of greens. The washing process is the most important part for these tender, tasty greens. Don't forget the sugar! If you follow directions exactly, you'll have the most perfect greens ever!

2 bunches collard greens
2 bunches mustard greens
2 bunches turnip greens
3 tablespoons salt
4 cups chicken broth, divided
½ cup vegetable oil
4 cloves garlic, sliced
½ cup cooked real bacon bits
½ cup white sugar
salt and pepper to taste

Steps:

  • Pull the leaf portions of the collard, mustard, and turnip greens away from the tough stems, and discard the stems. Gently wash the greens in warm water to remove all soil and sand. Partially fill a clean sink with warm water, and stir in 3 tablespoons of salt and 2 cups of chicken broth; allow greens to soak in the mixture for 10 minutes. Scoop up the greens and allow to drain in a colander; discard used chicken broth. Do not rinse the greens.
  • Pour the remaining 2 cups of chicken broth into a large pot, and mix in the greens. Stir in vegetable oil, garlic, bacon bits, and sugar, and season with salt and black pepper. Bring to a boil, reduce heat to a simmer, and cook until the greens are tender, stirring occasionally, 45 minutes to 1 hour.
