Smoked Bologna Recipe | Traeger Grills image

Our simple smoked bologna recipe has a sweet & spicy glaze, is smoked over flavorful hardwood, & crisp edges. This recipe will impress family & friends.

bologna log
brown sugar
yellow mustard
soy sauce
Worcestershire sauce

Steps:

  • When ready to cook, set the Traeger temperature to 225℉ and preheat with the lid closed for 15 minutes.
  • Score the bologna log 1/4-inch deep in a diamond pattern, spacing the cuts at 1-inch intervals.
  • In a small bowl, mix together the brown sugar, mustard, soy sauce, and Worcestershire sauce together.
  • Place the bologna in a small baking dish and pour the sauce over the meat, rubbing to coat all over.
  • Place the baking dish with the bologna on the grill grates. Close the lid and smoke for 3-4 hours, basting the bologna with the sauce every hour if desired. Remove from the grill and let cool.
  • Thinly slice the bologna and serve on sandwiches, or cut into larger pieces and serve as an appetizer. Enjoy!

There's no real trick to this, depends on what kind or grill or smoker you use, add wood and smoke away.

5 pound(s) chub of bologna
- **or summer sausage
- **wood for your smoker or grill (mesquite or hickory)

Steps:

  • We use mostly mesquite, but I know this would be delicious with hickory.
  • Whether I buy a 5lb chub of bologna or 2 lb roll of summer sausage I always cut it in half longways. I think this allow the smoke to evenly penetrate the meat.
  • Time will vary depending on what temp you are smoking with. We smoked the bologna for about 2 hrs at 225°. The summer sausage takes about 1 hr. at the heat.
  • I always cube the summer sausage and serve as a snack or appetizer, it's great with smoked cheese.
  • The bologna I sliced and browned on my griddle before serving as a side for breakfast at supper.
