Frozen Fruit Cups image

Frozen fruit cups are a classic, refreshing snack with loads of fruit suspended in an icy slush. With oranges, pineapple, peaches and bananas.

Number Of Ingredients 11

1/2 cup water
1/2 cup granulated sugar
1 cup 7-Up
6 ounces canned frozen orange juice concentrate (thawed)
8 ounces canned frozen lemonade concentrate (thawed)
8 ounces package frozen strawberries (about 2 cups, thawed and chopped)
8 ounces canned fruit cocktail (drained)
20 ounces crushed pineapple (drained)
15 ounces peaches (drained and chopped)
30 ounces mandarin oranges (drained)
2 bananas (peeled and cut in small pieces)

Steps:

  • In a large bowl, stir together water and sugar until sugar is dissolved. Add the remaining ingredients and stir well.
  • Divide mixture into small plastic cups and freeze for about 6 hours. Remove from the freezer about 20 - 30 minutes before serving.

This frosty favorite from Betty Webb of Nauvoo, Illinois is a great brunch basic or springtime snack. Pour the entire batch into one container to freeze, then scoop out single servings. Or spoon the colorful medley into individual plastic cups before freezing.

4 cups water
1 to 1-1/2 cups sugar
3/4 cup thawed orange juice concentrate
3/4 cup thawed lemonade concentrate
3 medium firm bananas, sliced
1 can (20 ounces) unsweetened pineapple tidbits, undrained
1 can (11 ounces) mandarin oranges, drained
1/2 cup halved maraschino cherries

Steps:

  • In a large saucepan, combine the water, sugar and concentrates. Cook and stir over medium heat until sugar is dissolved. Stir in the fruit. , Pour into a shallow 3-qt. freezer container. Cover and freeze for 8 hours or overnight. Remove from the freezer 1 hour before serving.

This is an excellent mixed fruit with a little kick, which is frozen in individual cups. I served it as a frozen fruit salad but have had it served to me as a refreshing afternoon snack. It would also make an excellent light dessert. I received this recipe from Janet Carswell.

1 (12 fluid ounce) can frozen orange juice concentrate, thawed
1 ¾ cups white sugar
1 (20 ounce) can crushed pineapple
1 (20 ounce) package frozen strawberries, chopped
4 bananas, diced
5 cups ginger ale
25 9-ounce clear plastic cups

Steps:

  • In a large bowl, stir the orange juice concentrate and sugar together until the sugar has dissolved; gently stir in the pineapple, strawberries, and bananas until coated, then stir in the ginger ale. Ladle about 2/3 cup of the mixture into a plastic cup, and freeze; repeat with remaining fruit salad and cups. Remove from freezer about 1 hour before serving.

1 can (20 ounces) crushed pineapple
1 package (10 ounces) frozen strawberries in juice, thawed
1 can (6 ounces) frozen orange juice concentrate, thawed
3/4 cup thawed lemonade concentrate
3 firm bananas, cut into 1/4-in. slices
1-1/2 cups lemon-lime soda
1 cup water
1 cup sugar
20 paper cups (5 ounces)

Steps:

  • In a large bowl, mix the pineapple, strawberries, orange juice concentrate, lemonade concentrate, bananas, soda, water and sugar. , Pour about 1/2 cup into each paper cup. Cover with foil and freeze until firm. Remove from freezer 15 minutes before serving. Serve in a dessert cup.

1 cup sugar
1 (6 ounce) can frozen orange juice concentrate, thawed
3/4 cup frozen lemonade concentrate, thawed
4 large firm bananas, sliced
1 (29 ounce) can sliced peaches, undrained and chopped
1 (20 ounce) can pineapple chunks, undrained
1 (15 ounce) can mandarin oranges, drained
1 (10 ounce) package frozen sliced strawberries, thawed
1 (6 ounce) jar maraschino cherries, undrained

Steps:

  • In a large bowl, combine all ingredients.
  • Cover and freeze for at least 8 hours or until firm.
  • Remove from freezer 45 minutes before serving.
