Slow Simmered Beef with Potatoes image

7 to 8 tablespoons EVOO
2 1/2 to 3 pounds stew beef, at room temperature
Salt
1 quart beef stock
1 onion, quartered
2 bay leaves
3 cloves garlic, crushed
2 tablespoons tomato paste
1 tablespoon coarse black pepper
2 cups dry red wine
2 1/2 pounds potatoes, peeled and sliced 1/2-inch thick or cut into wedges
2 to 3 tablespoons rosemary, finely chopped

Steps:

  • Drizzle the beef with 4 to 5 tablespoons of the EVOO and season with a little salt. Place the beef in large Dutch oven with the stock and enough water to just cover. Add the onion, bay leaves and 2 cloves of the garlic. Bring to a low boil and simmer, partially covered, for 2 hours. Stir together the tomato paste and 1/4 cup of the cooking liquid, then add to the pot. Add the pepper and wine and cover. Cook on the stovetop at a gentle simmer until very tender and falling apart, 2 1/2 to 3 hours (alternatively, transfer to the oven and roast at 325 degrees F). Cool and store. Reheat over medium heat or in a moderate oven.
  • To serve, while the beef is reheating, boil the potatoes until tender and drain. Add the remaining 2 to 3 tablespoons of oil to a pot over medium heat. Add the remaining clove garlic, stir for minute, then remove the garlic. Add the potatoes and crisp a bit. Season with salt, pepper and the rosemary.

6 cups beef stock (homemade is recommended)
2 cups water
1 lb boneless chuck roast, trimmed and cut across the grain into 4 slices
1 teaspoon chopped fresh thyme
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
1 1/2 lbs baking potatoes, peeled and cut into 1/2-inch pieces
1/2 cup 2% low-fat milk
1 tablespoon butter, softened
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 teaspoon chopped fresh thyme

Steps:

  • Preheat oven to 400°.
  • Combine the beef stock and water in a saucepan; bring to a simmer.
  • Place the beef in a 13x9-inch baking pan; pour stock over beef; bake at 400° for 2 hours (recipe does not say to cover) or until beef is tender.
  • Remove beef from cooking liquid; cover and keep warm.
  • Strain cooking liquid through a sieve into a bowl.
  • Place a zip-lock bag inside a 2-cup liquid measuring cup; pour liquid into bag; let stand 10 minutes (fat will rise to the top).
  • Seal bag; carefully snip off 1 corner of bag; drain liquid into saucepan, stopping before fat layer reaches opening; discard fat.
  • Bring liquid to a boil; reduce to simmer.
  • Cook 20 minutes or until reduced to 1 cup.
  • Remove from heat and stir in thyme, salt, and pepper.
  • To make the potatoes: put the potatoes in a saucepan; cover with water.
  • Bring to a boil; lower heat and cook 12 minutes or until very tender.
  • Drain; return potatoes to pan.
  • Add in milk and next 3 ingredients.
  • Mash with a potato masher to desired consistency.
  • Cook 2 minutes or until heated through.
  • Serve with beef.
  • Serve sauce over beef; garnish with thyme.

Save broth from roast to make a delicious gravy using flour or cornstarch, whichever is preferred.

Pot Roast:
1 (3 pound) beef chuck roast
salt and ground black pepper to taste
4 (10.5 ounce) cans condensed beef broth (such as Campbell's®)
1 cup water
1 white onion, cut into large wedges
5 cloves garlic
1 (16 ounce) package carrots, peeled
1 sprig fresh rosemary
Mashed Potatoes:
5 pounds Yukon Gold potatoes, peeled and diced
1 (12 ounce) can evaporated milk, or as needed
½ cup butter
salt to taste

Steps:

  • Season chuck roast with salt and black pepper; sear in a large, deep skillet or Dutch oven over medium heat until browned, about 10 minutes per side.
  • Pour beef broth and water into the skillet with roast. Arrange onion wedges and garlic cloves around the meat. Spread carrots atop roast and place sprig of rosemary atop carrots. Turn heat to medium-low and simmer until tender, about 6 hours.
  • Cover potatoes with water in a large pot and bring to a boil; reduce heat to low and simmer until tender, about 30 minutes. Drain. Mash potatoes with butter and half the evaporated milk until smooth; slowly mash remaining evaporated milk into potatoes to achieve the desired consistency. Season with salt.
  • Remove 1 or 2 cloves of garlic from skillet and mash cloves on top of the roast; serve with mashed potatoes.

4 cups frozen O'Brien potatoes
1 tablespoon water
1 pound ground beef
1/2 teaspoon salt
1/4 teaspoon pepper
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
2/3 cup 2% milk
2 cups shredded Colby-Monterey Jack cheese

Steps:

  • Place potatoes and water in a microwave-safe bowl. Microwave, covered, on high until tender, 8-10 minutes, stirring twice., Meanwhile, in a Dutch oven, cook beef over medium heat until no longer pink, breaking into crumbles, 6-8 minutes; drain.
