Slow-Cooker Pot Roast with Tomatoes, Balsamic and Garlic image

Blogger Beth Dooley from Seasonal Appetites shares a favorite recipe. Here's a dinner that cooks by itself. Don't skimp on the garlic, it mellows through the long slow cooking time; the vinegar adds a nice tang. Serve this with mashed potatoes or over broad noodles. Leftovers taste even better!

1 can (28 oz) Muir Glen™ organic whole peeled tomatoes
1 bulb garlic, separated into cloves, peeled
1 large onion, peeled and cut into eights
2 tablespoons balsamic vinegar
1 beef chuck boneless arm, shoulder or blade pot roast (3 to 3-1/2-lb)
2 teaspoons salt
1 teaspoon pepper
Mashed potatoes or cooked noodles to serve 8, if desired
1/4 cup chopped fresh parsley

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. Mix tomatoes with their juice, garlic cloves, onion and vinegar in slow cooker.
  • Sprinkle beef with salt and pepper; place on top of vegetables in slow cooker.
  • Cover and cook on high setting for about 6 to 7 hours (or on low for about 10 hours).
  • Meanwhile about 1/2-hour before serving, prepare mashed potatoes or cook noodles, if desired.
  • Remove beef to a warm platter; cover to keep warm.
  • Skim excess fat from the top of the remaining vegetables and liquid.
  • Cut the beef into 1/4-inch thick slices. Serve with vegetables and liquid over mashed potatoes or noodles. Sprinkle with chopped parsley.

This recipe is just so good. The roast comes out nice a tender with great gravy. I got this recipe from the 150 best slow cooker recipes, by Judith Finlayson. I have made 3 things out of this book at the time being and every thing is very good. I will post more as I come by my favs. REMEMBER: That you should know your slow cooker. Slow cookers vary in cooking speed, hence the reason why there is a gap in cooking time. Enjoy.

3 -4 lbs cross-rib roasts or 3 -4 lbs rump roast, about
1 tablespoon vegetable oil
2 onions, thinly sliced
3 stalks celery, thinly sliced
3 large carrots, peeled and cut into 1/2 inch cubes
2 garlic cloves, minced
1 teaspoon dry mustard
1/2 teaspoon dried thyme leaves
1 teaspoon salt
1/4-1/2 teaspoon cracked black peppercorns
2 tablespoons flour
1 (10 3/4 ounce) can condensed tomato soup
1 (14 ounce) can condensed beef broth (undiluted)
1 tablespoon Worcestershire sauce
2 tablespoons packed brown sugar (optional)
2 tablespoons balsamic vinegar (optional) or 2 tablespoons red wine vinegar (optional)

Steps:

  • Pat roast dry with paper towel.
  • In a skillet, heat oil over medium-high heat.
  • Add roast and cook, turning, until brown on all sides, about 7 to 10 minutes.
  • Transfer to slow cooker.
  • Reduce heat to medium.
  • Add onions, celery and carrots to pan and cook, stirring, until vegetables are softened.
  • Add garlic, mustard, thyme, salt and pepper and cook, stirring, for 1 minute.
  • Sprinkle mixture with flour and stir.
  • Add tomato soup and beef broth and cook, stirring, until thickened.
  • Stir in Worcestershire sauce.
  • Pour mixture over roast, cover and cook on LOW for 10 to 12 hours or on HIGH for 5 to 6 hours, until meat is very tender.
  • Remove roast from slow cooker and place on serving platter.
  • Stir in brown sugar and vinegar, if using, to pan juices.
  • Pour sauce over roast or serve in a separate sauce boat.

2 ½ pounds tip round roast
salt and pepper to taste
1 (15 ounce) can tomato sauce
1 onion, cut into thin strips
2 bay leaves
3 tablespoons all-purpose flour

Steps:

  • Spray slow cooker with non-stick cooking spray. Season roast with salt and pepper. Place meat in pot with fat side up. Pour tomato sauce over roast. Place onion rings over all. Toss in bay leaves. Cover and cook 1 hour on high.
  • After 1 hour, reduce heat to low and cook 6 to 8 more hours. Carefully lift meat out of pot and remove to a warm platter.
  • Pour drippings through strainer into medium-sized saucepan and discard material in strainer. Whisk in flour to liquid. Cook, stirring constantly over medium heat until thickened. Season to taste with salt and pepper; serve alongside roast.

1 tablespoon Italian seasoning
4 garlic cloves, minced
1 pound fresh baby carrots
2 cans (8 ounces each) mushroom stems and pieces, drained
2 medium potatoes, cubed
2 medium onions, chopped
1 envelope brown gravy mix
2 cans (11.5 ounces each) tomato juice

Steps:

  • In a large nonstick skillet, brown meat on all sides; drain. Sprinkle with Italian seasoning and garlic. Cut roast in half; transfer to a 5-qt. slow cooker., Top with the carrots, mushrooms, potatoes and onions. In a bowl, whisk gravy mix and tomato juice; pour over roast. Cover and cook on low until tender, 7-1/2 to 8 hours., Freeze option: Freeze cooled beef and vegetable mixture in freezer containers. To use, partially thaw in refrigerator overnight. 1 cup warm water
1 tablespoon beef base
1/2 pound sliced fresh mushrooms
1 large onion, coarsely chopped
3 garlic cloves, minced
1 boneless beef chuck roast (3 pounds)
1/2 teaspoon pepper
1 tablespoon Worcestershire sauce
1/4 cup butter, cubed
1/3 cup all-purpose flour
1/4 teaspoon salt

Steps:

  • In a 5- or 6-qt. slow cooker, whisk water and beef base; add mushrooms, onion and garlic. Sprinkle roast with pepper; transfer to slow cooker. Drizzle with Worcestershire sauce. Cook roast, covered, on low 6-8 hours or until meat is tender., Remove roast to a serving platter; tent with foil. Strain cooking juices, reserving vegetables. Skim fat from cooking juices. In a large saucepan, melt butter over medium heat. Stir in flour and salt until smooth; gradually whisk in cooking juices. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in cooked vegetables. Serve with roast.
