I found this recipe in a box I've been carting around for years. I don't remember where it came from, but I know it's good!

1/3 cup banana, mashed
1/2 cup butter, softened
3 large eggs
1 1/4 cups water
1 1/2 cups dates, chopped
1 teaspoon vanilla
2 teaspoons baking powder
1 teaspoon baking soda
3 cups flour
1/3 cup dates
1/3 cup walnuts
1/3 cup flaked coconut

Steps:

  • Beat together banana and butter until creamy.
  • Add eggs, vanilla and water.
  • Beat until smooth.
  • Add flour, baking soda and baking powder and beat well.
  • Stir in dates.
  • Spoon into oiled and floured 9 by 13 baking pan.
  • Spread evenly.
  • Combine topping ingredients and sprinkle over bater.
  • Bake at 350°F for 20 to 25 minutes or until knife comes out clean.
  • Cool and serve.

This is a good cake with somewhat moist texture. It is not too sweet but has a unique taste. Serve with ice cream or as you wish.

1 (8 ounce) package dried pitted dates, diced
2 teaspoons baking soda, divided
⅓ cup boiling water
3 cups whole wheat flour
2 teaspoons instant coffee
2 teaspoons milk powder
2 tablespoons boiling water
1 ¾ cups white sugar
1 cup margarine
1 ½ tablespoons margarine
4 large eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Place dates in a bowl. Sprinkle 1 teaspoon baking soda on top and mix well. Add 1/3 cup boiling water, stir, and set aside until dates have swelled, about 10 minutes. Squeeze with your hands to remove most of the liquid.
  • Meanwhile, mix flour and 1 teaspoon baking soda together in a bowl. Combine instant coffee, milk powder, and 2 tablespoons boiling water in a separate bowl; mix until dissolved.
  • Beat sugar, margarine, and eggs together in a large bowl with an electric mixer until well blended. Add coffee mixture and dates; beat until well mixed. Gradually mix in flour. Pour batter into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes.

1 cup carrot, grated fine
1 cup butter
3 large eggs
1/2 cup chopped nuts (your choice)
10 ounces crushed pineapple (1 small can)
2 teaspoons vanilla
1 1/4 cups water
3 cups flour
2 teaspoons baking powder
1/2 cup raisins (optional)
1 teaspoon baking soda
1 1/2 cups chopped dates
1/2 cup coconut (optional)

Steps:

  • Cream together first 5 ingredients. Add vanilla and water. Add rest of ingredients.
  • Spoon batter into 9 x 13 inch pan. Spread batter evenly in pan, bake at 350 degrees for 20-25 minutes or until knife comes out clean
  • Note: You can use bananas in place of carrots to make banana cake or chopped apples to make apple nut cake.

A fabulous blueberry coffee cake with a crumb topping. This recipe is one from a local B&B that I replaced all the sugar with substitutes because I have diabetes. I have received all praise and 'I can't believe it is sugar free.' The sugar can be put back in if you want. Either way it is wonderful.

¾ cup butter, melted and cooled
1 cup milk
3 eggs
1 teaspoon vanilla extract
1 ½ cups granular sucrolose sweetener (such as Splenda®)
2 teaspoons baking powder
3 cups all-purpose flour
1 ¾ cups fresh or frozen blueberries
1 ½ cups malitol brown sugar substitute
¾ cup flour
2 teaspoons ground cinnamon
½ cup butter, softened

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, stir together the melted butter, milk, eggs, vanilla and 1 1/2 cups sugar substitute. Combine 3 cups of flour and baking powder; stir into the wet ingredients until just blended. Fold in the blueberries. Spread evenly in the prepared pan.
  • In a small bowl, stir together the brown sugar substitute, 3/4 cup of flour, and cinnamon. Stir in the softened butter with a fork until the mixture is crumbly. Sprinkle over the top of the cake.
  • Bake for 35 to 40 minutes in the preheated oven, until a toothpick inserted into the center of the cake comes out clean. This cake is best served warm.
