Slow Cooker Beefy Nacho Soup is a simple and quick meal that comes together easily for a weeknight dinner! Less than 5 ingredients and totally homemade! No canned soup here!

1 pound ground beef
2 tablespoons homemade taco seasoning (or high quality store bought)
14.5 oz fire roasted diced tomatoes
2.5 cups milk
8 oz freshly shredded sharp cheddar cheese (or mild if preferred, plus more for topping if desired (see note))
Crushed tortilla chips (optional for garnish)

Steps:

  • Brown ground beef in skillet over medium high heat and drain (this can be done ahead of time and stored in fridge or freezer)
  • Add taco seasoning, tomatoes, cheese and milk
  • Cover and cook on high for 2-3 hours or low for 4-6
  • Remove lid and stir well until cheese is melted and combined
  • Top with additional cheese and crushed chips for serving, if desired

1 package taco seasoning
1 small onion (chopped)
1 clove garlic (minced)
1 can condensed nacho cheese soup (10 3/4 ounce (cheddar soup will also work))
1 can diced tomatoes and green chilis (10 oz, undrained)
1 1/2 cups milk
1 cup sharp cheddar cheese
Crushed tortilla chips

Steps:

  • In a medium sized skillet cook the ground beef, onion, and garlic until beef is no longer pink and the onion is clear. Drain the grease and add to slow cooker.
  • Add soup, taco seasoning, diced tomatoes and green chilis, and milk. Stir.
  • Cook on low 3-4 hours. Stir in 1/2 cup cheddar cheese and allow to melt. Can be kept on warm for an additional 4 hours. Top with crushed tortilla chips and additional cheese if desired.

1 14.5-ounce can diced tomatoes (preferably fire-roasted)
1 large russet potato, peeled and diced
1 zucchini, cut into 3/4-inch pieces
1/2 white onion, finely diced
1 small jalapeno pepper, finely chopped, plus slices for topping (remove seeds for less heat)
1 clove garlic, finely chopped
1 teaspoon dried oregano
1/2 teaspoon ground cumin
3 sprigs cilantro
1 15-ounce can hominy, drained and rinsed
3/4 cup crushed tortilla chips, plus whole chips for topping
4 cups low-sodium chicken broth
Kosher salt
1 1/2 pounds skinless, boneless chicken breasts, cut into 3/4-inch pieces
8 ounces American cheese, diced
1/2 cup milk

Steps:

  • Combine the tomato paste, tomatoes, potato, zucchini, onion, jalapeno, garlic, oregano, cumin, cilantro and hominy in a 6-quart slow cooker. Add the crushed tortilla chips, the chicken broth and 1 teaspoon salt. Cover and cook on low, 7 1/2 hours. Add the chicken and cook 30 more minutes.
  • Combine the cheese and milk in a medium microwave-safe bowl; microwave, whisking occasionally, until melted and smooth, 2 to 3 minutes. Serve the soup topped with tortilla chips, the cheese sauce and sliced jalapeno.

2 lb boneless, skinless chicken breast
1 large onion, diced
3 cloves garlic, minced
1 tablespoon chili powder
2 teaspoons cumin
1 teaspoon paprika
1 teaspoon salt
1 teaspoon black pepper
6 cups chicken broth
1 can diced tomato
1 can black beans
1 cup heavy cream
1 cup cheddar cheese
1 cup monterey jack cheese
sour cream
cheese, grated
tortilla chip
fresh cilantro
tomato, diced

Steps:

  • Place chicken, onion, garlic and spices into a 6-quart slow cooker.
  • Using a set of tongs or a large spoon, mix the ingredients together. Once mixed, pour in chicken broth.
  • Set slow cooker to HIGH, cover and cook for 3 hours.
  • After 3 hours remove and shred the chicken into bite-sized pieces.
  • Return shredded chicken to the slow cooker and add tomatoes, beans, heavy cream and cheese.
  • Cover and set slow cooker to the LOW setting. Let soup cook for an additional 45 minutes.
  • Ladle soup into bowl and top with favorite nacho toppings. Serve with tortilla chips.

4 boneless chicken thighs
1 large onion chopped
4 clove garlic minced
1 Tbsp each chili powder and cumin
1 tsp each paprika and pepper
2 tsp salt
4 c chicken stock
15 oz can diced tomtoes
15 oz can black beans drained
1 c heavy cream
8 oz each shredded monterey jack cheese and shredded cheddar cheese.
TOPPINGS
cheddar cheese
sour cream
tortilla chips
fresh cilantro

Steps:

  • 1. Place the chicken, onion, garlic and spices in a slow cooker. Mix it well then pour the chicken stock over the top. Slow cook on low for 6 hours. Remove the chicken and shred into pieces and add back to the slow cooker.
  • 2. Add the diced tomatoes, black beans and heavy cream. Cook 1 hour. Add the cheese and cook 30 minutes.
  • 3. Top with toppings of choice and serve

Steps:

  • Spray 6- to 7-quart slow cooker with cooking spray. In slow cooker, place onions, butter, salt, pepper and dried thyme. In medium bowl, mix flour, sherry and water with wire whisk until blended. Stir into onion mixture.
  • Cover; cook on Low heat setting 9 to 10 hours or until onions are softened and deep brown.
  • Stir broth into slow cooker. Increase heat setting to High. Cover; cook 10 minutes or until hot.
