Slow cooker Goan pulled pork image

Slow cook pork shoulder in Indian spices until meltingly tender, then shred and serve with chapatis, crunchy veg salad, cooling raita dip and mango chutney

Provided by Sara Buenfeld

Categories     Dinner, Main course

Time 8h25m

Number Of Ingredients 18

2 tbsp olive oil
1 large onion , halved and sliced
1 garlic bulb , cloves peeled
thumb-sized piece ginger , shredded into very thin matchsticks
1 tbsp ground cumin
2 tbsp smoked paprika
2 tbsp ground coriander
½-1 tsp cayenne pepper (depending on how hot you like it)
225ml cider vinegar
2kg boneless pork leg or shoulder
3 carrots , shredded with a julienne peeler or coarsely grated
1 red onion , finely chopped
3 tomatoes , chopped
generous handful fresh coriander
1 lemon , juiced
1 tbsp olive oil
12 warm chapatis or small wraps
chunky cucumber raita (see goes well with) and mango chutney

Steps:

  • Heat the oil in a large frying pan. Fry the onion, garlic and ginger for about 10 mins. Stir in the spices, pour in the vinegar and stir well. Tip into the slow cooker (we used a 6.5-litre model) and add 1 tsp salt and about 20 turns of a black pepper mill. Add the pork joint, turn in the mixture to coat it, then arrange it in the pot so it is rind-side down. Cover and cook on low for 7-8 hrs.
  • Meanwhile, make the salad. Mix the carrot with the onion, tomato and coriander, then toss just before serving with the lemon juice and oil.
  • Remove the rind and fat from the pork and skim all the fat from the juices, then shred the meat into the juices. To serve, put some meat and salad on one side of a chapati, then top with the raita and chutney, fold over and eat with your hands.

SLOW COOKER PULLED PORK

Slow cooker pulled pork image

Succulent pulled pork spiced with paprika and cinnamon is oh-so simple when you make it in the slow cooker. Serve with fennel and apple slices in bread rolls

Provided by Miriam Nice

Categories     Dinner, Main course

Time 8h10m

Number Of Ingredients 18

2kg pork shoulder, skin removed
1 onion, sliced
2 tsp smoked paprika
½ tsp cinnamon
1 tbsp flour
2 tsp oil
4 garlic cloves, crushed
160ml cloudy apple juice
1 tbsp black treacle
2 tbsp honey
3 tbsp apple cider vinegar
50g onion marmalade
1 fennel bulb, sliced thinly
1 apple, sliced thinly
juice 1 lemon
8 - 10 bread rolls
English mustard
mayonnaise (optional)

Steps:

  • Put the onion slices at the bottom of the slow cooker. In a small bowl mix together 1 tbsp salt with 1 tsp ground black pepper, the smoked paprika and cinnamon. Put the flour onto a plate then rub the spice mixture over the pork.
  • Heat the oil in a large frying pan and roll the spiced pork in the flour before putting it into the pan to sear it on all sides. Once the meat is starting to pick up a golden colour pop it on top of the onion slices in the slow cooker.
  • In a large jug combine all the ingredients for slow cooking the pork then pour over the meat. Pop the lid on and cook on the low setting for 8 hours.
  • When you're ready to serve, take the meat out of the slow cooker leaving the cooking liquor behind. Put the cooked meat on a roasting tray or large shallow bowl and pull it into bite-size chunks and shred with 2 forks. Ladle a little of the cooking juices over the pork and mix together.
  • Toss the fennel and apple slices in the lemon juice and season well then serve along with the pulled pork in bread rolls. Spread the rolls with a little English mustard and mayonnaise if you like.

SLOW-COOKER GOAN PORK VINDALOO

Slow-Cooker Goan Pork Vindaloo image

In 1510, when the Portuguese invaded Goa, a region on the west coast of India, they brought with them a dish called carne de vinha d'alho, a sailors' preserve of pork stored in wine vinegar and garlic. Goan cooks reimagined the dish with local ingredients, like cinnamon, black pepper and coconut palm vinegar, and it came to be called vindaloo. Chiles are always included, but the dish is not traditionally superhot. In this version, the pork benefits from slow cooking in the vinegar and spices, making marination unnecessary. The blender does double duty: It purées the aromatics and grinds the whole spices at the same time.

Provided by Sarah DiGregorio

Time 5h20m

Yield 4 to 6 servings

Number Of Ingredients 17

1 large yellow or red onion, roughly chopped
10 garlic cloves, peeled
2 tablespoons finely chopped ginger (about a 2-inch length of peeled ginger)
1 tablespoon black or brown mustard seeds
5 whole cloves
1/2 teaspoon black peppercorns
Kosher salt
5 green cardamom pods or 1/4 teaspoon cardamom seeds
1/2 cup apple cider vinegar or coconut vinegar
1 (3-inch) cinnamon stick
2 packed tablespoons grated jaggery or light brown sugar, plus more to taste (see Tip)
2 teaspoons ground cumin
2 teaspoons ground turmeric
1 tablespoon kashmiri chile powder (see Tip)
1/4 teaspoon ground cayenne, or to taste (optional)
3 pounds boneless, skinless pork shoulder, cut into 2- to 3-inch chunks
Cooked basmati rice, for serving

Steps:

  • Combine the onion, garlic, ginger, mustard seeds, cloves, peppercorns and 2 1/2 teaspoons salt in a blender. Using the flat side of a chef's knife, firmly press the cardamom pods so that they crack open. Put the seeds from each pod in the blender and discard the pods. (This yields about a heaping 1/4 teaspoon of seeds.) Pour the vinegar into the blender. Blend, first on low until everything is combined, then on high, until the mixture is fully puréed and the whole spices are crushed, 30 seconds to 3 minutes depending on your blender. (You will see flecks of spices, but everything should be at least coarsely ground.)
  • Pour the puréed mixture into a 6- to 8-quart slow cooker. Stir in the cinnamon stick, jaggery, cumin, turmeric, chile powder and cayenne (if using). Add the pork and stir to evenly combine. Cover and cook on high until the flavors have blended, the oniony taste is no longer sharp, and the pork is very tender, about 5 hours.
  • Remove and discard the cinnamon stick. Taste and add more salt or sugar if you like, before serving with warmed rice. The sauce will be rich and a little soupy, great for spooning over rice. If you prefer a thicker sauce, remove the pork from the slow cooker with a slotted spoon and put it in a serving dish. Pour the sauce into a saucepan and simmer until the sauce thickens, about 10 minutes. Pour the reduced sauce over the pork and serve with warm rice.
