The slow cooker acts as a braiser for this Italian classic. While the chicken becomes succulent and fall-apart tender, briny capers, crushed red pepper, and garlic infuse the crushed tomatoes for a robust sauce you won't find in a jar. True to our one-pan plan, the spaghetti cooks right in the sauce when the chicken comes out, absorbing just enough liquid so it doesn't need to reduce on the stove. We like the look of the whole, deboned chicken thighs atop the pasta, but you could shred the meat into large pieces and stir into the sauce if you like.

Yield Serves 8 (serving size: about 1 cup pasta mixture, 1 chicken thigh, and 1 tbsp. cheese)

1/2 cup water
1 tablespoon all-purpose flour
2 cups unsalted chicken stock (such as Swanson)
1/2 cup white wine
1/4 cup chopped fresh oregano
1/4 cup drained capers
1/2 teaspoon kosher salt
1/2 teaspoon crushed red pepper
8 garlic cloves, chopped
1 (28-oz.) container diced tomatoes (such as Pomì)
1 (8-oz.) pkg. cremini mushrooms, quartered
8 (6-oz.) bone-in chicken thighs, skinned (about 3 lb.)
2 tablespoons extra-virgin olive oil
12 ounces uncooked spaghetti, broken in half
5 ounces baby spinach
2 ounces Parmesan cheese, grated (about 1/2 cup)

Steps:

  • Combine 1/2 cup water and flour in a 6-quart electric slow cooker, stirring with a whisk. Stir in stock and next 8 ingredients (through mushrooms). Add chicken thighs to stock mixture; submerge in liquid. Cover and cook on LOW 7 1/2 hours. Remove chicken. When cool enough to handle, remove bones from chicken; discard bones.
  • Add oil and pasta to slow cooker; cover and cook on HIGH 15 minutes or until pasta is done. Stir in spinach until wilted. Divide pasta mixture among 8 shallow bowls; top evenly with chicken. Sprinkle with Parmesan cheese.

2 1/2 lb boneless skinless chicken thighs (about 12)
1 jar (4.5 oz) sliced mushrooms, drained
2 cans (6 oz each) Italian-style tomato paste
1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
1/2 cup white wine, if desired
1 1/2 teaspoons dried basil leaves
1/2 teaspoon salt
1 dried bay leaf
12 oz uncooked linguine
1/4 teaspoon dried thyme leaves
1 tablespoon cornstarch
Shredded Parmesan cheese, if desired

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. Place chicken in cooker. Add mushrooms, tomato paste, broth, wine, basil, salt and bay leaf; gently stir to mix.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • About 15 minutes before serving, cook and drain linguine as directed on package. Remove chicken from slow cooker; cover to keep warm. Stir thyme into sauce in cooker. Increase heat setting to High. In small bowl, mix 1/4 cup sauce from cooker and the cornstarch until smooth; stir into remaining sauce in cooker.
  • Cover; cook 10 minutes longer, stirring frequently. Remove bay leaf before serving. Serve chicken and sauce over linguine. Sprinkle with cheese.

Guests are always impressed by this recipe! Adapted from a friend's recipe for chicken cacciatore that uses bone-in chicken pieces simmered in sauce. I decided to instead use cut-up boneless chicken breasts and turn it into a pasta sauce.

4 (5 ounce) skinless, boneless chicken breast halves
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
½ (14.5 ounce) can diced tomatoes, undrained
1 (6 ounce) can tomato paste
½ cup red wine, or more if needed
1 (4 ounce) can mushroom pieces and stems, drained
3 tablespoons snipped fresh parsley
1 teaspoon white sugar
½ teaspoon salt
½ teaspoon dried rosemary
½ teaspoon dried thyme
½ teaspoon dried oregano
⅛ teaspoon black pepper
12 ounces linguine pasta

Steps:

  • Cut each chicken breast into 3 to 4 large chunks or strips.
  • Heat oil in a large pot over medium heat. Add chicken and brown for 2 to 3 minutes. Add onion and garlic and brown for 1 to 2 minutes more.
  • Meanwhile, combine undrained tomatoes, tomato paste, 1/2 cup wine, mushrooms, parsley, sugar, salt, rosemary, thyme, oregano, and pepper in a medium bowl. Pour mixture over the chicken and bring to a boil. Reduce heat and simmer until chicken is cooked through and tender, 35 to 40 minutes, stirring in additional wine during cooking if needed.
  • While the sauce is cooking, bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes. Drain and serve with hot sauce over top.

  • In a large skillet, heat the butter and 1 tablespoon of the olive oil over medium-high heat. Season the chicken with salt and black pepper. Add the chicken to the skillet, making sure to not overcrowd the pan. Cook until richly golden brown and seared, about 4 minutes per side. Add the white wine to the chicken and deglaze the pan. Transfer the chicken and the juices to the slow cooker.
  • Return the skillet to the stove and set over medium heat. Pour in a 1/2 tablespoon of olive oil and add the onions, garlic, paprika, and red pepper flakes to the pan. Cook until the onions have lightly browned, about 4 minutes. Add the spiced onion mixture to the slow cooker. Pour in the chicken broth and crushed tomatoes and stir to combine. Cover and cook for 3 hours on high, until the chicken is tender.
  • Transfer the chicken to a work surface and, using two forks shred the meat and discard the bones. Stir the shredded chicken into the sauce, add the caper berries, and season with salt and black pepper to taste.
  • To serve, bring a pot of salted water to a boil, cook the pasta until al dente and drain, reserving 1/2 cup of pasta water. Transfer the pasta to one large skillet set over medium heat and add the chicken cacciatore and pasta water to the noodles; toss until the linguine is thoroughly coated. Transfer to serving bowls, sprinkle with freshly grated Parmesan cheese, drizzle with olive oil, and garnish with chopped parsley.
