6 medium potatoes, peeled and cut into 1/4-inch strips
2 cups shredded cheddar cheese
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 small onion, chopped or 1 tablespoon dried minced onion
7 tablespoons butter, melted, divided
1 teaspoon salt
1 teaspoon pepper
1 cup sour cream
2 cups seasoned stuffing cubes

Steps:

Toss the potatoes and cheese; place in a 5-qt. slow cooker. Combine soup, onion, 4 tablespoons butter, salt and pepper; pour over potato mixture. , Cover and cook on low for 8-10 hours or until potatoes are tender. Stir in sour cream. Toss stuffing cubes and remaining butter; sprinkle over potatoes.

1 (2 pound) package frozen Southern-style hash brown potatoes, thawed
4 cups shredded Cheddar cheese
2 (10.75 ounce) cans condensed cream of chicken soup
1 (8 ounce) container sour cream
1 cup chopped yellow onion
1 cup milk
1 pinch seasoned salt, or to taste
1 teaspoon minced garlic
1 cup crushed cheese-flavored crackers (such as Cheez-It®), divided

Steps:

Mix hash brown potatoes, Cheddar cheese, cream of chicken soup, sour cream, onion, milk, seasoned salt, garlic, and 1/2 cup cheese-flavored crackers in a slow cooker.

I love my slow cooker in the summer---don't have to heat up the whole kitchen by using the oven! This recipe uses hash browns, potato soup, mushroom soup, sour cream, and two kinds of cheese. It's from the "Slow-Cooker Fix It and Forget It Cookbook," and is credited to Bernice M. Wagner of Dodge City, KS and Marilyn Yoder of Archbold, OH.

This is the best crock pot recipe you will find! These slow cooker bacon cheese potatoes have everything we love in every bite.

8 strips of bacon (diced)
1 onion (thinly sliced)
4 medium potatoes ((cut into large cubes))
2 cups shredded cheddar cheese
salt and pepper (to taste)
2 Tablespoons butter
2 green onions (sliced)

Steps:

Line slow cooker with foil, leaving enough foil to cover potatoes when finished (this will help the potatoes not to stick to the edges and to help them steam. It will also keep them from getting mushy.)
Layer half each of the bacon, onions, potatoes and cheese in the slow cooker. Season to taste and dot with 1 Tablespoon of butter.
Repeat layers of bacon, onions, potatoes and cheese. Dot with 1 Tablespoon of butter.
Overlap with remaining foil. Place lid on slow cooker and cook on low for 6-8 hours. Sprinkle with green onions and serve.

1 (12 fluid ounce) can evaporated milk
1 (2.8 ounce) can French fried onions, divided

Steps:

Grease your slow cooker with cooking spray or shortening. In a large bowl, stir together the hash browns, cheese soup, evaporated milk, and half of the French fried onions. Pour into the slow cooker. Cover, and cook on High for 4 hours, or Low for 8 hours. Top with remaining onions just before serving.
