Easy Blueberry Buttermilk Cake image

This light and Easy Blueberry Buttermilk Cake loaded with fresh, juicy blueberries in a lightly sweetened, moist buttermilk cake is ideal for summer.

2 3/4 cups cake flour*
1 1/2 tsp baking soda
1/2 tsp salt
1 1/4 cups sugar
4 tbsp unsalted butter (softened )
3/4 cups unsweetened applesauce
3/4 cups low fat buttermilk
2 cups blueberries (fresh or frozen)
1 large egg (beaten)
2 large egg whites
2 tsp vanilla
baking spray

Steps:

  • Preheat oven to 325F. Grease a 13 x 9 inch baking pan with baking spray.
  • In a large bowl combine flour, baking soda, and salt in a large bowl. Mix well.
  • Using a hand mixer or stand mixer, in a medium bowl, beat sugar and butter for about 3 minutes.
  • Add egg and egg whites one at a time and beat until combined. Add buttermilk, vanilla and applesauce until incorporated.
  • Add wet ingredients to the flour mixture and stir until just blended. Gently fold in blueberries.
  • Place the batter into the prepared cake pan; bake cake until a toothpick comes out clean, about 30-32 minutes.
  • Serve room temperature.

This Blueberry Peach Crisp is a wonderful summer dessert loaded with fruit, and delicious served warm out of the oven.

5 yellow peaches (pitted and sliced)
1 cup blueberries (about 6 oz)
1/2 lemon (zested and juiced)
2 tsp cornstarch
3 1/2 tablespoons agave nectar or honey
1 cup uncooked quick or rolled oats (*)
1/3 cup whole wheat flour (*)
1/2 cup light brown sugar (not packed)
3/4 tsp cinnamon
1/4 cup half stick butter, melted

Steps:

  • Heat oven to 375F degrees.
  • Combine peaches, blueberries, agave nectar, lemon juice and zest in large bowl. Sprinkle with cornstarch. Toss until fruit is coated.
  • Place fruit in an ungreased pie dish. Mix remaining ingredients. Sprinkle over fruit.
  • Bake about 40 minutes or until topping is golden brown and fruit is tender.
  • Serve with a scoop of ice cream or frozen yogurt, if desired.

I've tinkered and tinkered, and this is the very best blueberry cobbler recipe I've found. Cakey/biscuit topping with a slight crunch on top and ooey gooey delicious blueberries hidden on the bottom. It can also work with other fruit fillings. Works best with delicious fresh blueberries and is the perfect summer treat.... An amalgamation of mine and my grandmother's cobbler recipe.... I think it is the best! Serve plain or with whipped cream. Enjoy!

2 ½ cups fresh or frozen blueberries
1 teaspoon vanilla extract
½ lemon, juiced
1 cup white sugar, or to taste
½ teaspoon all-purpose flour
1 tablespoon butter, melted
1 ¾ cups all-purpose flour
4 teaspoons baking powder
6 tablespoons white sugar
5 tablespoons butter
1 cup milk
2 teaspoons sugar
1 pinch ground cinnamon

Steps:

  • Lightly grease an 8 inch square baking dish. Place the blueberries into the baking dish, and mix with vanilla and lemon juice. Sprinkle with 1 cup of sugar and 1/2 teaspoon of flour, then stir in the tablespoon of melted butter. Set aside.
  • In a medium bowl, stir together 1 3/4 cups of flour, baking powder, and 6 tablespoons sugar. Rub in the 5 tablespoons butter using your fingers, or cut in with a pastry blender until it is in small pieces. Make a well in the center, and quickly stir in the milk. Mix just until moistened. You should have a very thick batter, or very wet dough. You may need to add a splash more milk. Cover, and let batter rest for 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Spoon the batter over the blueberries, leaving only a few small holes for the berries to peek through. Mix together the cinnamon and 2 teaspoons sugar; sprinkle over the top.
  • Bake for 20 to 25 minutes in the preheated oven, or until the top is golden brown. A knife inserted into the topping should come out clean - of course there will be blueberry syrup on the knife. Let cool until just warm before serving. This can store in the refrigerator for 2 days.

3 cups fresh blueberries
3 tablespoons white sugar
⅓ cup orange juice
⅔ cup all-purpose flour
¼ teaspoon baking powder
1 pinch salt
½ cup butter, softened
½ cup white sugar
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In an 8 inch square baking dish, mix blueberries, 3 tablespoons sugar, and orange juice. Set aside. In a small bowl, thoroughly mix flour, baking powder, and salt. Set aside.
  • In a medium bowl, cream butter and 1/2 cup sugar until light and fluffy. Beat in egg and vanilla extract. Gradually add flour mixture, stirring just until ingredients are combined. Drop batter by rounded tablespoons over blueberry mixture. Try to cover as much of filling as possible.
  • Bake in preheated oven for 35 to 40 minutes, until topping is golden brown and filling is bubbling.

1 1/2 teaspoons baking powder
3/4 cup whole milk
1/3 cup butter, melted
2 cups fresh blueberries

Steps:

  • Add flour, 1/2 cup sugar, salt, and baking powder to a mixing bowl; stir to combine.
  • Add in milk and butter; stir to combine.
