Lemon Brownies are dessert bars that are dense and moist with a lemony flavor and topped with a sweet glaze.

1 cup (2 sticks / 226 g) unsalted butter, (melted)
1¾ cups (350 g) light brown sugar, (packed)
3 large eggs, (room temperature)
2 tablespoons lemon juice
1 teaspoon lemon zest
2½ cups (285 g) all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking powder
½ teaspoon kosher salt
1 cup confectioners' sugar
2 tablespoons water, (or lemon juice (if want more lemon flavor))

Steps:

  • Preheat oven to 350°F and prepare a 9x9-inch pan by lining it with parchment paper (or lightly grease and flour). (You could use a 9x13-inch pan for more servings, but the bars will be thinner.)
  • In a large bowl, combine the melted butter and brown sugar. Stir well.
  • Add the eggs one at a time, stirring well after each addition.
  • Stir in the lemon juice and lemon zest.
  • In a separate, medium-sized bowl, whisk together the flour, cornstarch, baking powder, and salt.
  • Gradually stir the flour mixture into the butter and egg mixture until completely combined.
  • Spread the batter evenly into the prepared pan. Bake 35-45 minutes, or until the edges are turning golden brown. (If you are using a 9x13-inch pan, bake for 25-30 minutes.)
  • Allow brownies to cool before glazing.

4 tbsps lemon juice
8 tsps lemon zest
1 cup icing sugar

Steps:

  • 1. 1. Preheat the oven to 350 degrees. 2. Grease an 8×8 inch baking dish with butter and set aside. 3. Zest and juice two lemons and set aside. 4. In the bowl of an electric mixture fitted with the paddle attachment, beat the flour, sugar, salt, and softened butter until combined. 5. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined. 6. Pour it into the flour mixture and beat for 2 mins at medium speed until smooth and creamy. 7. Pour into baking dish and bake for 23-25 mins, should turn golden around the edges. 8. Allow to cool completely before glazing. Do not overbake, or the bars will dry. 9. Filter the powdered sugar and whisk with lemon zest and juice. 10. Spread the glaze over the brownies with a rubber spatula and let glaze set. 11. Cut into bars and serve.

1/2 cup all purpose flour
1/4 cup whole wheat pastry flour
1 stick butter, softened
2 large or extra large eggs
3/4 cup super fine sugar or granulated sugar
2 tablespons lemon fresh lemon juice
1 1/2 tablespoons lemon zest
1/4 teaspoon Kosher or sea salt
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon vanilla extract
LEMON GLAZE
1/2 cup sifted powdered sugar
2 tablespoons fresh lemon juice
1/2 teaspoon cold water if needed
Lemon zest for sprinkling on top

Steps:

  • Preheat oven to 340 degrees. Mist a non stick 8 or 9 inch square pan with cooking spray. Set aside. In a large mixing bowl, beat with a hand held mixer or stand mixer, the softened butter with the sugar until fluffy. Add the eggs one at a time until well incorporated. Add the lemon juice and zest and mix just until combined. In a separate bowl, whisk together the flour, salt, baking soda and baking soda. Add the flour mixture into the wet ingredients and beat at medium speed for about 1 to 2 minutes until nice and creamy. Pour batter into prepared pan and bake for about 20-24 minutes. Try not to over bake. The edges will turn lightly golden brown. A toothpick should have moist crumbs. Let cool on a wire rack for at least 20 minutes. While cooling, prepare the glaze and then spread over the brownies and sprinkle on the zest. Cut into 16 brownies and enjoy!
