1 cup fresh or frozen corn
1 tablespoon olive oil
2 cups cherry tomatoes, halved
1/4 teaspoon salt
1/4 teaspoon pepper
3 fresh basil leaves, thinly sliced

Steps:

  • In a large skillet, saute corn in oil until crisp-tender. Stir in the tomatoes, salt and pepper; cook 1 minute longer. Remove from the heat; sprinkle with basil.

1 cup fresh basil
3/4 cup olive oil
1 1/2 tsp salt
4 scallions
3 cloves garlic
3 1/4 cup corn
2/3 cup edamame
1 1/4 cup cherry tomatoes
2 tbs balsamic vinegar

Steps:

  • 1. Bring a small pot of water to a boil. Badd basil, cook 10 seconds. Transfer basil to a bowl of ice water, then drain, and squeeze dry. Puree basil, oil, and salt in a blender until smooth.

Skillet-Fried Corn and Tomatoes image

Number Of Ingredients 12

2 tablespoons olive oil
1 tablespoon minced garlic
4 cups corn kernels, from about 5 ears corn
2 cups Damn Hot Peppers alla padella, recipe follows
2 tablespoons unsalted butter
1/4 cup thinly sliced fresh chives
Sea salt, preferably gray salt, and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 pound green bell peppers, halved, seeded and cut into pieces that are 1-inch
2 jalapenos, cut into 1/8-inch slices
2 teaspoons gray salt, and more if needed
1 cup fresh tomato puree (peel, seed and puree one pound ripe tomatoes in a food processor)

Steps:

  • Heat a large skillet over high heat. Add the olive oil, then the garlic. Saute until the garlic is lightly browned. Add the chiles and saute briefly to release their character. Add the corn and cook briskly, stirring often, until partially cooked, about 3 minutes. Add the damn hot peppers then simmer, stirring, until the corn is just tender, about 2 minutes.
  • Remove from the heat, whisk in the butter, and stir in the chives. Season with salt and pepper. Transfer to a serving bowl and serve immediately.
  • In a non-reactive saucepan, heat the oil. When the oil is hot add the bell peppers, jalapenos, and gray salt. Cook over medium-high heat for about 15 minutes or until the peppers are partially tender. Stir from the bottom from time to time, adjusting the heat as necessary so that they don't brown. There will still be some liquid left in the pot.
  • Add the tomatoes, lower the heat to simmer and continue to cook for about 30 minutes to reduce the tomato juice and finish cooking the peppers. Add additional salt if needed. Serve warm or room temperature.

8 ounces uncooked whole wheat linguine
1-1/2 cups frozen shelled edamame
4 green onions, thinly sliced
1 tablespoon olive oil
2 cups cherry tomatoes, halved
3 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 cup white wine or reduced-sodium chicken broth
3/4 cup crumbled feta cheese
2 tablespoons minced fresh basil

Steps:

  • Cook linguine according to package directions, adding edamame during the last 5 minutes; drain, reserving 1/2 cup cooking liquid., In a large nonstick skillet, saute onions in oil until tender. Add the tomatoes, garlic, oregano and salt. Add wine and reserved cooking liquid; cook and stir for 2 minutes., Add linguine and edamame; cook and stir 2-3 minutes longer. Remove from the heat. Sprinkle with cheese and basil; toss to coat.

This is one of the most popular corn dishes during Thanksgiving and Christmas. It is not your traditional boring old corn. This recipe includes butter, cream and shallots. I always get rave reviews when I make this.

3 tablespoons butter
¼ cup shallots, minced
1 pinch sugar
2 cups frozen corn kernels
2 tablespoons water
½ cup whipping cream
1 pinch ground nutmeg
salt to taste

Steps:

  • Melt butter in a large skillet over medium heat. Add shallots and sugar, and saute for 2 to 3 minutes. Stir in corn and water, and cook until tender, about 5 minutes. Gradually stir in cream, and cook until cream is reduced and sauce thickens, about 8 minutes. Season with nutmeg, salt, and pepper.
