We wanted a super peanut buttery treat but found that store-bought peanut butter made the cookies a bit gummy when we used more than 1 cup. So we ground roasted peanuts ourselves and added that to the batter for an additional boost of flavor. Honey and melted butter add richness and create a soft and chewy cookie with an irresistible crackled exterior. We topped the dough balls with raw sugar for extra crunch and a hit of sweetness that balances the salt of the peanuts.

3/4 cup salted dry-roasted peanuts
1 1/2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking soda
3/4 teaspoon kosher salt
1 1/2 cups packed light brown sugar
1/4 cup granulated sugar
1 cup creamy peanut butter (do not use "natural" peanut butter)
2 large eggs
1/2 stick (4 tablespoons) unsalted butter, melted and cooled
3 tablespoons honey
2 teaspoons pure vanilla extract
1/4 cup raw sugar

Steps:

  • Position a rack in the center of the oven and preheat to 375 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Process the peanuts in a food processor until very finely ground; it should be the consistency of almond flour. Whisk together the ground peanuts, flour, baking soda and salt in a medium bowl.
  • Beat the brown sugar, granulated sugar, peanut butter, eggs, melted butter, honey and vanilla in a large bowl with an electric mixer until completely smooth. Add the dry ingredients and beat on low until a soft dough forms.
  • Working with 2 tablespoons of dough at a time (or using a 1-ounce ice cream scoop), roll the dough into balls. Evenly space them on the prepared baking sheets (12 balls per sheet). Sprinkle with the raw sugar.
  • Bake the cookies, 1 baking sheet at a time, until the edges are just set and just beginning to brown, 12 to 15 minutes, rotating the baking sheet halfway through. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

1 cup crunchy peanut butter
3/4 cup packed brown sugar
1 large egg
1/2 cup semisweet chocolate chips
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment or a silicone mat.
  • With an electric mixer, beat together the peanut butter, brown sugar and egg until well combined. Stir in the chocolate chips with a wooden spoon.
  • Lightly wet your hands and form the mixture into 12 balls. Place the balls about 1 inch apart on the baking sheet. Lightly wet the tines of a fork and press a criss-cross pattern into the top of each cookie. Lightly sprinkle them with flaky sea salt.
  • Bake until just starting to brown, 12 to 15 minutes. Let sit for 5 minutes on the baking sheet, then remove to a rack to cool completely before eating.

2/3 cup shortening
1-1/3 cups packed brown sugar
2 eggs, lightly beaten
1-1/2 teaspoons vanilla extract
1-2/3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups salted peanuts

Steps:

  • In a bowl, cream shortening and sugar. Beat in eggs and vanilla until light and fluffy. Combine flour, baking soda and salt; gradually add to the creamed mixture. Fold in peanuts. Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12 minutes or until browned and almost set (centers will be soft). Remove to a wire rack to cool.

These cookies look so lovely on my cookie tray. For Christmas I use the green and red M&M Peanut candy and for Easter I use the pastel M&M peanut candy. You can use any color for that matter.

1 1/2 teaspoons vanilla

finely chopped nuts
1 (8 ounce) can vanilla frosting (I use the creme cheese frosting) or 1 (8 ounce) can cream cheese frosting (I use the creme cheese frosting)
M&M's peanut chocolate candy

Steps:

  • Preheat oven to 350°F.
  • Blend butter and sugar in a bowl.
  • Stir in egg yolk and vanilla.
  • Sift flour and salt into bowl; mix well.
  • Chill 1 hour.
  • Roll into 1-inch balls.
  • Dip into slightly beaten egg whites.
  • Roll in chopped nuts.
  • Place 1 inch apart on cookie sheet.
  • Bake at 350°F for 7 minutes.
  • Press thumb into center of each.
  • Bake 5 to 7 minutes longer or until done.
  • Cool.
  • Fill with frosting and top with M&M candies.

  • Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.

Steps:

  • Preheat the oven to 350°F. Butter a baking sheet.

1 cup butter
½ cup packed brown sugar
2 eggs, separated
1 teaspoon vanilla extract

2 cups chopped walnuts
1 (12 fluid ounce) can ready-to-spread vanilla frosting
1 cup candy-coated chocolate peanuts

Steps:

  • In a large bowl, stir together butter and sugar until creamy and smooth. Stir in the egg yolks and vanilla. In a separate bowl, mix together flour and salt; then slowly blend with creamy mixture. Cover, and refrigerate for at least 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). Roll out dough into 1 inch balls. Dip balls into slightly beaten egg whites, then roll in chopped walnuts. Place balls 1 inch apart onto baking sheets.
  • Bake in preheated oven for 5 minutes. Remove from oven, and press thumb gently into the center of each cookie. Return to oven, and bake 5 minutes more. Remove cookies to wire racks to cool. Fill top of each cookie with frosting, and top with a chocolate-coated peanut.
