- Saute the diced onion in the 2 tsp of cooking oil in a saucepan (preferably a deeper one) over medium heat (about 4 mins).
- Once the onion bits soften deglaze with a splash or two of the beer, once the vigorous foaming subsides, add the rest of the beer. Simmer until reduced by half.
- Lower the heat to medium-low. Add the brown sugar, ketchup (or tomato sauce), apple cider vinegar, honey, cumin, garlic powder and black pepper and stir to mix well together. Simmer to reduce. Once the mixture has thickened to your liking, remove from the stove.
- Use an immersion blender to blend the beer barbecue sauce to a smooth consistency or transfer to a food processor (be careful - either allow it to cool down or if still hot, work in batches).
- Taste the finished sauce and season with salt as needed. Transfer to a container. The sauce will keep well refrigerated for up to 2 weeks.

HEARTY SIRLOIN CHILI

- Heat oil in large heavy pot over medium high heat. In a pie plate combine salt, pepper and flour with a fork. Toss sirloin cubes with flour to coat. Shake off excess flour. Brown sirloin in pot on all sides and remove meat to a plate. If necessary add more oil to pan and add onions. Cook onions over medium heat until they begin to soften. Stir in green, red and jalapeno peppers and cook for 3 to 5 minutes. Add chili powder, cumin and oregano. Return browned meat to pan and pour in beer and beef stock. Bring to a boil and cover and reduce heat to a simmer. Cook for 45 minutes or until meat is tender. Add crushed tomatoes and cook for 20 minutes. Stir in black and kidney beans and gently simmer for 10 minutes. Garnish with Cheddar, onion, scallions and sour cream.
BBQ SIRLOIN ROAST

- Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 350ºF. Mix seasonings; rub onto all sides of meat.
- Place meat on grate over unlit area; cover. Grill 1 hour or until meat registers 140ºF when tested in center with meat thermometer, monitoring for consistent grill temperature. Brush meat with 1/4 cup barbecue sauce. Grill 10 min. or until meat registers 150ºF. Transfer meat to carving board; tent with foil. Let stand 10 min. or until medium doneness (160ºF).
- Cut meat across the grain into thin slices. Add to remaining barbecue sauce in large bowl; toss to coat.

- 1. Sprinkle steaks with salt and pepper. Broil in oven 4 inches from top for 9-13 minutes on each side or grill on grill to desired doneness. In saucepan, combine the remaining ingredients. Bring to a boil. Reduce heat and simmer uncovered for 20 minutes. Baste occasionally with 1/2 cup of the sauce. When done slice and place on serving plate. Pour remaining sauce on top and serve.

- Combine the first five ingredients; rub over brisket. Cut into 8 pieces; place in a 5-qt. slow cooker. Combine the green pepper, onion, chili sauce, ketchup, barbecue sauce, brown sugar, vinegar, Worcestershire sauce and mustard; pour over meat. Cover and cook on high for 5-6 hours or until meat is tender., Remove meat; cool slightly. Meanwhile, skim fat from cooking juices. Shred meat with 2 forks; return to slow cooker. Reduce heat to low. - chop the garlic, onion and chipotle pepper, squeeze the orange juice and measure the remaining ingredients.
- Heat the oil in a saucepan over medium heat. Once the pan is hot, add the garlic and onion; cook until they begin to turn soft.
- Stir in the tomato paste, syrup, chipotle pepper, orange juice, beer, and tomatoes. Continue to cook over medium heat until the mixture begins to boil.
- Reduce the heat to low heat and simmer the sauce for about 10 minutes.
- Remove the pan from the heat, and use an immersion blender to puree the bbq sauce into a texture that you like.
- Add the bay leaf and the Worcestershire sauce and simmer for 20 minutes longer, or until the sauce reaches a consistency that you like.

BRISKET WITH BBQ SAUCE
After growing up in West Texas for 30 years where barbecue is the best, I found this recipe which is so tender and absolutely delicious. Leftovers, if you have any, make really great sandwiches. You can increase the liquid smoke to 4 tablespoons for really smoky flavor.

- Pour liquid smoke over brisket. Rub with onion salt and garlic salt. Roll brisket in foil and refrigerate overnight.
- Preheat oven to 300 degrees F (150 degrees C). Place brisket in a large roasting pan. Cover and bake for 5 to 6 hours. Remove from oven, cool, and then slice. Put slices back into pan.
- In a medium saucepan, combine brown sugar, ketchup, butter, water, celery salt, liquid smoke, Worcestershire sauce, mustard, salt and pepper. Stir, and cook until boiling.

- Place roast in a 3-qt. slow cooker. Add the onion, garlic and 1 cup root beer. Cover and cook on low for 9-10 hours or until meat is tender. , In a small saucepan, combine the chili sauce, hot pepper sauce and remaining root beer. Bring to a boil. HEARTY SIRLOIN CHILI
I made this recently using chopped sirloin, it was really good! If you have any dried chipotle chili powder then throw in a tablesoon. You can use wine in place of the beer if desired. Serve this with crusty buns and a side salad, this dish is delicious! I strongly advise to make this a day ahead and refrigerate, the flavors will blend together to create a more intense flavor.

- In a shallow dish mix together flour, seasoning salt and cayenne pepper.
- Heat oil in a large Dutch oven or pot.
- Toss the sirloin with the flour mixture to coat, then brown well on all sides shaking off any excess flour then remove to a plate or bowl.
- In the same pot saute the onions and dried chili flakes (if using) for about 3 minutes.
- Add in green and red bell peppers with jalapeno peppers and garlic; cook for about 3-4 minutes.
- Add in chili powder, cumin and oregano, then return the browned beef back to the pot along with any juices from the plate or bowl.
- Pour in beer and consumme or beef broth; stir with a wooden spoon and bring to a boil.
- Cover and reduce heat to a simmer; cook 1-1/2 hours or until the beef is tender.
- After the 1-1/2 hours, add in the crushed tomatoes and cook for another 35-40 minutes.
- Add in black beans and kidney beans, season with salt and pepper; simmer for another 20 minutes.
- Ladle into bowls then top with sour cream cheese and onions.
- Delicious!
