MY MOM'S HOLIDAY SAUSAGE HOLIDAY BALLS

Steps:
- For the applesauce: Preheat the oven to 375 degrees F.
- Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
- For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.

- Preheat oven to 375°F
- Line a sheet pan with parchment, silicone baking mat, or foil.
- Whisk together flour, salt, black pepper, cayenne, and baking powder in medium bowl.
- Add the shredded cheese and toss.
- Add the onion, sausage, and butter. Mix thoroughly with your hands.
- Measure out 2 tablespoons of sausage mix and shape into balls.
- Bake for 20-25 minutes until golden or until internal temperature reaches 165°F using the Thermapen Mk4
- Store in the refrigerator for up to 1 week.

- In a large saucepan, combine the cranberry sauce, BBQ sauce, soy sauce, mustard, honey, salt and orange zest. Warm over medium-low heat, stirring, until everything is combined. Bring to a low simmer and allow it to bubble gently until slightly thickened, 5 to 7 minutes.
- Add the sausages to the pan and stir. Allow the sausages to warm through, about 5 minutes. Transfer to a chafing dish or warming dish. Serve with toothpicks on the side.
