A simple and quick way to enjoy the family favorite without using the oven. Note: If you wish, you can make 4 individual foil packets, but be careful - these will cook much more quickly!

Steps:
- Preheat grill for medium heat.
- Layer sliced potatoes on aluminum foil with the onion, garlic, basil, and butter. Season with salt and pepper. Fold foil around the potatoes to make a packet.
- Place potato packet on heated grill over indirect heat, and cook for 30 minutes, or until potatoes are tender. Turn over packet halfway through cooking.

MOM'S SCALLOPED POTATOES
This is the way my mother always made her scalloped potatoes. The measurements are taken from other recipes because she always just winged it, but the method is the same. The key is to heat the milk first!

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Spread about 1/3 of the potato slices into the bottom of the prepared baking dish. Top with about 1/3 of the onion slices. Sprinkle 3 tablespoons flour over the potato and onion. Arrange 2 tablespoons butter atop the flour. Season the entire layer with salt and pepper. Repeat layering twice more.
- Heat milk in a saucepan until warm. Pour enough warm milk over the mixture in the baking dish so the top of the liquid is level with the final layer of potatoes.
- Bake in preheated oven until potatoes are tender, 45 to 60 minutes.

- Preheat a grill for medium heat.
- Prepare 8 pieces of aluminum foil with vegetable cooking spray. Combine potatoes, green onion, soup, cheese, (and bacon and mushrooms if using) in a bowl. Season to taste with salt and pepper. Evenly divide the potato mixture among the squares of aluminum foil. Dot with butter. Fold into foil packets, sealing well.
- Cook foil packets on the grill for 12 to 20 minutes, until the potatoes have cooked.

SCALLOPED POTATOES
The perfect side dish to an elegant or celebratory main course, or the welcome addition to any potluck supper, scalloped potatoes are one of those dishes that seem complicated, but are deceptively simple. You'll need to put in a bit of "peeler time" to get the spuds ready for the oven, but after that it's just a long bake and a short standing period to let the sauce thicken. Then, voila! you're ready to serve.

- Heat oven to 350°F. Grease 2-quart casserole with shortening or cooking spray.
- In 2-quart saucepan, melt 3 tablespoons of the butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
- Spread potatoes in casserole. Pour sauce over potatoes. Cut remaining 1 tablespoon butter into small pieces; sprinkle over potatoes.
- Cover; bake 30 minutes. Uncover; bake 1 hour to 1 hour 10 minutes longer or until potatoes are tender. Let stand 5 to 10 minutes before serving (sauce thickens as it stands).

- Cook potatoes with 1 teaspoons salt in boiling water to cover, 30-40 minutes or until tender. Cool slightly; peel and slice. Set aside.
- Stir together remaining 1/2 teaspoons salt, soup, milk, barbecue sauce, and onion salt until blended.
- Layer half each of potato slices, barbecue sauce mixture, and cheese in a sprayed 2-quart baking dish. Repeat layers; sprinkle with paprika.
- Bake at 350°F for 45 minutes, or until golden.

- Preheat barbecue to medium heat. Place potatoes and carrots in microwaveable bowl. Add water; cover. Microwave on high 5-7 minutes, or unitl potatoes are crisp-tender; drain well. Meanwhile mix 1/3 cup Parmesan cheese and the dressing , Add to potato mixture; mix lightly.
- Spoon onto center of 20-inch long piece of heavy-duty foil sprayed with cooking spray. (or use a double layer of regular foil). Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Place on top self of barbecue.

- Microwave potatoes, carrots and water in microwaveable bowl covered with waxed paper on HIGH 5 to 7 min. or just until potatoes are crisp-tender; drain well. Mix 1/3 cup cheese and dressing. Add to potato mixture; mix lightly.
- Spoon onto center of large sheet of heavy-duty foil sprayed with cooking spray; fold to make packet. Place on upper shelf of grill.
