GRILLED TERIYAKI SIRLOIN STEAK KABOBS
The simple best-tasting teriyaki steak kabobs that you can make by yourself at home!

Steps:
- Whisk soy sauce, vinegar, sugar, oil, garlic, and ginger together in a bowl until marinade is smooth. Place sirloin cubes into marinade, cover bowl with plastic wrap, and marinate in refrigerator, 1 to 2 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove sirloin cubes from marinade, discarding marinade.
- Thread sirloin cubes, onion, tomatoes, mushrooms, and green bell pepper onto skewers.
- Cook skewers on grill until meat is cooked through and vegetables are tender, 10 to 15 minutes.

- Marinate beef sirloin tips in 2 tablespoons balsamic vinegar, soy sauce, and freshly ground pepper in a shallow dish for 30 minutes. Soak 4 wooden skewers in water. Meanwhile, slice zucchini and summer squash into 1/2-inch rounds. Cut onion into wedges and red bell pepper into 1-inch pieces.
- Heat grill to medium-high. Thread beef onto skewers, alternating with vegetables. Grill for 7 to 8 minutes per side. Whisk together parsley, fresh oregano, garlic cloves, extra-virgin olive oil, balsamic vinegar, fresh lemon juice, and coarse salt. Drizzle sauce over kebabs.
SIRLOIN AND VEGETABLE KEBABS

- Heat a grill or grill pan. Place ground coriander and anise seeds in a medium bowl. Add garlic, paprika, cayenne pepper, and 1/4 cup olive oil. Season marinade with salt, and stir until combined. Add sirloin cubes, and stir to coat.
- In a medium bowl, combine mushrooms, onions, and remaining 1/4 cup olive oil. Season with salt and pepper; toss to coat.
- Divide steak among 4 skewers; thread, leaving 1/2 inch between each cube. Divide vegetables among another 4 skewers; thread.
- Grill the sirloin kebabs until well browned and medium rare, and grill the vegetable kebabs until glistening, tender, and slightly charred, 5 to 7 minutes for both. Serve on the skewers.
BISON SIRLOIN STEAK AND VEGETABLE KABOBS WITH COUSCOUS SALAD
Steps:
- Preheat grill on high for 5-10 minutes.
- Thaw and cut bison sirloin steaks into 1 inch pieces, place in bowl and set aside.
- In large bowl combine olive oil, vinegar, garlic, black pepper, oregano, basil, thyme and seal salt to make marinade. Add vegetables to marinade and toss to coat. Assemble vegetable skewers, alternating vegetables. Continue until all vegetables are gone.
- Add bison sirloin to remaining marinade left over in the mixing bowl and toss to coat. Assemble bison skewers with remaining skewers.
- Place vegetable skewers on the well-heated grill 2-3 minutes before adding the bison skewers, they will take longer to cook.
- Turn vegetable skewers over once and then add bison skewers to the grill. Cook for about 3-4 minutes, turn bison skewers and cook an additional 3-4 minutes or until done (8-11 minutes total cooking time).
- Preheat oven to 400°F.
- Toss butternut squash with 1 tablespoon olive oil and sprinkle with salt and pepper.
- Roast in preheated oven for 20 minutes on a sheet pan.
- Turn squash over, add tomatoes. Continue to roast until soft and golden brown, about 20 minutes more.
- Combine prepared couscous and remaining ingredients in mixing bowl and toss. Chill for 4 hours and serve.
SIRLOIN STEAK KABOBS
Kabobs are a little more work, but are so worth it. Great for company because everything can be prepared up to the grilling and you are good to go. Cooking time is according to how you like your steak done.

- Mix together first nine ingredients for marinade.
- Add meat, stir to coat, then cover and refrigerate overnight.
- Alternate cubes of meat with pepper squares, small onions, tomatoes and mushrooms.
- Place on charcoal grill, turning often until meat is done to your liking.
- Note: I like to blanch the onions and green peppers first before placing on the skewers.

Best of all, I love that the veggies and meat are all cooked together....leaving nothing but rice and a salad or bread for me to have a complete meal! Prep time does not include the 2 hour marinating time!!

- Combine the first 8 ingredients in a large shallow bowl or ziplock bag. Add the beef cubes; cover and marinate in the refrigerator for 2 hours, stirring or turning occasionally. Remove the beef cubes from the marinade, reserving the marinade.
- Thread the beef cubes, tomatoes, onion, mushroom caps, green pepper, red pepper, and pineapple onto the skewers, repeating the repetition.
