SIRLOIN TIPS WITH MUSHROOMS
My husband is an avid hunter, so I look for beef recipes that also work using venison. This one fills the bill nicely.

- In a skillet, brown beef in butter; remove and set aside. To the same skillet, add the oil and mushrooms, onion and garlic; saute until tender. Add beef; transfer to a greased 1-qt. baking dish. Cover and bake at 325° for 1 hour or until beef is tender., In a saucepan, combine the cornstarch, cream, broth, wine or additional broth, Dijon mustard and soy sauce until smooth. Bring to a boil; cook and stir for 1 minute or until thickened. Stir into meat mixture until blended. Serve over noodles.

Steps:
- Preheat oven to 300ºF.
- Melt butter and oil together in a large skillet. Add beef tips and brown on all sides.
- Transfer to a 2-quart baking dish.
- In the same skillet you browned the beef in, saute the mushrooms and garlic until mushrooms are tender, about 3 minute.
- Pour mushrooms and liquid over meat.
- Cover and bake at 300ºF for 2 hours or until meat is tender.
- In a small bowl, combine the mustard, cornstarch, and cream; set aside.
- In the skillet, combine the broth, vinegar, soy sauce, and parsley; bring to a boil. Boil for 2 min; stir in mustard/cream mixture, bring to a boil and cook 2 minute stirring constantly.
- Drain juices from the baking dish with the beef into the broth mixture. Cook over medium heat, stirring constantly until thickened and bubbly.
- Add beef mixture and combine well. Serve over egg noodles.

This is one of my favorite things to order at a restaurant which serves steak so I was happy to have found this recipe at All Recipes. It features beef sirloin cubes browned with garlic then simmered in tomato sauce and red wine until tender. Great over buttered noodles.
