SWEET GHERKINS
This recipe is on several internet sites so not sure who really to give credit to but did not see anything like it on Zaar. I looked at it and thought "Oh Brother" but it was worth it. Really it was! Super little sweet crunchy gherkins!

Steps:
- Wash cucumbers, blossom, ends removed. Use the littlest ones you can find!
- FIRST DAY:
- In the afternoon, place cucumbers in large bowl and cover with boiling water; let stand 6 hours or overnight.
- SECOND DAY:.
- In the morning, drain cucumbers and cover with fresh boiling water. Let stand 6 hours.
- In the afternoon, drain cucumbers; add salt; cover with fresh boiling water.
- THIRD DAY:.
- In the morning, drain cucumbers; prick with fork. Combine 3 cups of the sugar, 3 cups of the vinegar, herbs, and spices (except vanilla extract) in a pan. Heat to the boiling point and pour over cucumbers.
- In the afternoon, drain syrup mixture into a large pan; add 2 cups of the sugar and 2 more cups of the vinegar. Heat to boiling and pour over cucumbers. Cover and let stand.
- FOURTH DAY:.
- In the morning, drain syrup mixture into a large pan; add 2 cups of the sugar and 1 cup of the vinegar. Heat to boiling and pour over pickles.
- In the afternoon, prepare jars. Drain syrup mixture off pickles into large pan; add remaining 1 cup of sugar and the vanilla extract (if using) to syrup; heat to boiling. Pack pickles into clean, hot jars. cover with hot syrup leaving 1/2 inch head space; seal. Process in boiling water bath for 10 minutes.

Steps:
- Tip all the ingredients into a pan. Bring to the boil and simmer for 10-15 mins until almost all of the liquid has evaporated. Pour the gherkins into a blender and purée until smooth. Then pass through a fine sieve and chill in the fridge. Can be made up to five days ahead, just give it a stir before serving. Best served at room temperature.

- Preheat oven to 300 degrees F (150 degrees C).
- Cut pumpkin into small manageable pieces and cut off pith and seeds.
- Place cut pumpkin skin side up in a large roasting pan. Add 1/4 inch of water and bake uncovered for 1 hour or until tender. Remove from oven and allow pumpkin to cool.
- When cooled, cut away skin and mash or puree. Use in any recipe that calls for canned pureed pumpkin.

SIMPLE PAN-COOKED GHERKINS

Heat the oil in a large skillet over medium-high heat and add the mustard seeds they should splutter upon contact with the hot oil, so cover the pan and lower the heat until the spluttering subsides.2. - Make a brine with 1 part salt and 8 parts water, or 2 tablespoons of salt to each cup of water. Soak the tiny cucumbers for a few hours or overnight.
- Drain the baby cucumbers and pack them into canning jars with spices. I've used 5 peppercorns and 2 allspice berries to each quarter pint canning jar.
- Make a brine with 1 tbsp of canning salt to every cup of vinegar and bring to a boil. Each quarter pint jar only needs a few tablespoons of brine, but extra brine can be saved for the next batch.
- Pour the brine over the pickles, leaving 1/2 inch headspace. Seal with 2 part canning lids and store in the refrigerator or process in a water bath canner for 10 minutes.
