Spicy Black Bean and Quinoa Soup image

This is a healthy, tasty soup that is so easy to make. The quinoa adds plenty of protein to this soup.

1 teaspoon olive oil
½ cup chopped onion
2 stalks celery, chopped
1 carrot, chopped
1 clove garlic, minced
1 teaspoon ground paprika
½ teaspoon red pepper flakes
2 (15 ounce) cans low-sodium chicken broth
½ cup water
½ cup quinoa
1 (15 ounce) can diced tomatoes with juice
1 (15 ounce) can black beans, drained
1 cup frozen corn
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large saucepan over medium-high heat. Add onion, celery, and carrot; cook and stir until onion is translucent and celery and carrot are crisp-tender, 3 to 5 minutes. Stir in garlic, paprika, and red pepper flakes; cook until fragrant, about 1 minute.
  • Pour chicken broth, water, and quinoa into the saucepan. Bring to a simmer; reduce heat to medium-low, cover, and cook until quinoa is tender, about 20 minutes.
  • Stir in diced tomatoes with juice, black beans, and corn. Bring back to a simmer and cook, uncovered, until black beans are heated through, about 5 minutes. Season with salt and pepper.

In less than 40 minutes, you can enjoy this delicious black bean soup. It's flavored with chili powder, cilantro and lime juice and topped with chopped avocado for a Mexican flare.

1 medium onion, chopped
1 green bell pepper, chopped
4 cloves garlic, minced
1 cup chopped fresh tomato
1 teaspoon ground cumin
2 teaspoons chili powder
1/4 teaspoon crushed red pepper flakes
1 large carrot, chopped
5 cups low sodium or no-salt-added vegetable broth
1/2 cup quinoa, rinsed
3 cups cooked black beans or 2 (15 ounce) cans low sodium or no-salt-added black beans, drained
4 cups spinach or thinly sliced kale
1/4 cup chopped cilantro
1 tablespoon fresh lime juice
1 avocado, chopped

Steps:

  • In a soup pot, heat 2-3 tablespoons water, add onion and green pepper and water saute until tender, about 5 minutes, adding more water if needed to prevent sticking. Add garlic and saute another 30 seconds, until fragrant. Add the tomatoes, cumin, chili powder and red pepper flakes and cook for 2-3 minutes, until tomatoes soften. Add carrots and vegetable broth, bring to a boil, stir in the quinoa, reduce heat, cover and cook for 10 minutes. Add black beans and continue cooking until heated through and quinoa is tender, about 10 minutes. Add spinach or kale and stir until wilted. Remove from heat and stir in cilantro and lime juice. Serve garnished with chopped avocado.

This was adapted from a recipe on drfuhrman.com. I simplified the instructions to make it easier to prepare.....For each can of low sodium broth, I substitute 2 cups water, 1 tablespoon VegiZest (from drfuhrman.com) and 1/8 teaspoon salt (optional)......You can reduce prep time by using frozen pre-chopped vegetables and jarred garlic.

1 medium onion, chopped
1 green bell pepper, chopped
4 garlic cloves, minced
1 large carrot, chopped
1 (15 ounce) can diced tomatoes
1 teaspoon ground cumin
2 teaspoons chili powder
2 teaspoons dried cilantro
1/8 teaspoon crushed red pepper flakes (or to taste)
2 (15 ounce) cans low-sodium black beans, drained and rinsed
1/4 cup quinoa, rinsed
3 (15 ounce) cans low sodium vegetable broth
5 ounces frozen chopped spinach (I use cut leaf)
1 tablespoon lime juice (to taste) (optional)

Steps:

  • Chop onion, bell pepper, garlic and carrot and put in large soup pot (at least 6 quarts).
  • Add diced tomato, cumin, chili powder, cilantro, red pepper flakes and beans to soup pot.
  • Add quinoa and broth to soup pot.
  • Bring to a boil, then reduce heat, cover and cook for 30 minutes.
  • Add spinach and lime juice and cook until spinach is thawed, stirring occasionally.

All you need is a couple cans of beans, an onion, some bacon, and spices to whip up this simple but delicious soup.

6 slices bacon, chopped
1 large onion, diced
3 cloves garlic, minced
2 cups chicken broth
pinch of dried oregano
pinch of cayenne pepper
½ teaspoon ground cumin
salt to taste
2 (14.5 ounce) cans black beans, rinsed and drained
14 ½ fluid ounces water
½ teaspoon ground black pepper
⅓ cup minced green onion
2 teaspoons sambal paste (or minced red chiles)
juice of 1 lime
2 tablespoons chopped green onion
3 tablespoons sour cream

Steps:

  • Place bacon in a cold pot. Turn heat to medium, cook and stir until the bacon is cooked but not crisp.
  • Stir in onion; cook and stir for 5 minutes, until the onion turns translucent and golden.
  • Stir in garlic; cook for 2-3 minutes. Add chicken stock, turn heat to medium-high. Stir in oregano, cayenne and salt. Add black beans and water. Return to a simmer.
  • Simmer on medium-low, stirring occasionally, for 20-30 minutes. While it's cooking, mash about half the beans to thicken the soup.
  • Stir in black pepper and cumin. Add salt to taste.
  • Make the relish by stirring together minced green onion, sambal paste, and lime juice.
  • Serve garnished with relish, chopped green onions, and sour cream.

¾ cup quinoa
1 ½ cups vegetable broth

1 cup frozen corn kernels
2 (15 ounce) cans black beans, rinsed and drained
½ cup chopped fresh cilantro

Steps:

  • Heat oil in a saucepan over medium heat; cook and stir onion and garlic until lightly browned, about 10 minutes.
  • Mix quinoa into onion mixture and cover with vegetable broth; season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer until quinoa is tender and broth is absorbed, about 20 minutes.
  • Stir frozen corn into the saucepan, and continue to simmer until heated through, about 5 minutes; mix in the black beans and cilantro.
