GERMAN RED HERRING SALAD (ROTER HERINGSSALAT)



German Red Herring Salad (Roter Heringssalat) image

Pickled herring, apples, onions, pickles and red beets are covered in a luscious creamy sauce with a beautiful pinkish-red hue.

1/2 pound pickled (soused) herring fillets ((German Bismarck herring or matjes herring), drained and diced small)
2 medium apples (, cored and diced small)
1/3 pound cooked red beets (, diced small)
1 medium yellow or red onion (, diced small)
4-5 German pickles
For the Creamy Dressing:
2-3 tablespoons pickle juice from the German pickles
1 tablespoon sunflower oil
1 tablespoon white wine vinegar
1 teaspoon sea salt
1 teaspoon sugar
1 teaspoon German yellow mustard
1 cup sour cream
1/4-1/3 cup heavy whipping cream
3 tablespoons German mayonnaise ((tastes significantly different than American mayonnaise))
1-2 tablespoons fresh chopped dill
for serving: boiled potatoes, hard-boiled eggs, crusty bread

Steps:

  • In a small bowl, whisk together the pickle juice, mustard, oil, vinegar, salt and sugar until emulsified and the salt and sugar are dissolved. Stir in the whipping cream, sour cream, mayonnaise, mustard and dill.
  • Place the diced herring, apples, beets, onions, and pickles in a large bowl.Pour the dressing over the herring mixture and carefully stir until thoroughly combined. Add salt and pepper to taste. If the salad is thicker than you prefer, add a little whipping cream. If you prefer the dressing thicker, add more sour cream and/or mayonnaise.
  • To serve, lay some slices of boiled egg over a mound of herring salad with a sprig of fresh dill. You can also add some onions sliced into rings. Place the potatoes next to the salad. Alternatively, spread the herring salad on crusty bread.Can serve 4 as a side or main dish or more people as an hors d'oeuvres.

1 (22 ounce) jar pickled herring, cutlets in wine sauce drained
3 medium potatoes, cooked and cubed
1 (16 ounce) jar pickled beets, drained and cubed
2 small dill pickles, chopped (optional)
1 apple, cubed
1 small onion, chopped
1/4 cup vinegar
2 tablespoons granulated sugar
2 tablespoons water
1/8 teaspoon pepper
1 cup sour cream
2 tablespoons milk
1/2 teaspoon dried dill weed

Steps:

  • Place herring, potatoes, beets, pickles, apple and onion in glass or plastic bowl.
  • Mix vinegar, sugar, water and pepper; pour over herring mixture.
  • Toss lightly.
  • Cover and refrigerate, stirring once or twice, at least 2 hours.
  • Serve with Dilled Sour Cream.
  • Garnish with parsley and wedges of hardboiled egg if desired.

No self-respecting smorgasbord would be without this dish. From the Minnesota Scandinavian chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

2 salt herring fillets
2 medium apples, peeled and finely minced
5 cups beets (peeled, cooked and minced)
1/3 cup onion, peeled and minced
1/2 cup dill pickle, minced
1/2 teaspoon salt
1/2 cup French dressing (French Dressing (Not Catalina Style) or your own recipe)
3 eggs, hard cooked

Steps:

  • Soak herring in cold water for one hour.
  • Remove skin and bones; cut into very small pieces.
  • Toss beets, apples, herring, onion, and pickle with salt and French dressing.
  • Chill for two hours.
  • Serve on a platter and garnish with finely chopped egg whites.
  • Sieve egg yolks and sprinkle on top of salad.

Steps:

  • In a large mixing bowl, combine the finely chopped herring, optional meat, potatoes, beets, apple, onion and pickle. Mix 3 tablespoons of the dill with the vinegar, add salt and pepper to taste. Pour over the salad and toss gently with a wooden spoon. DRESSING: Remove the yolks from the hard cooked eggs. Mince the whites and set them aside. Force the yolks through a sieve into a small bowl with the back of a large spoon, then mash them to a paste with the tablespoon of prepared mustard. Gradually beat in the vinegar and oil, then the cream, a tablespoon at a time, until the sauce has the consitency of heavy cream. Pour over the salad, mix lightly but thoroughly, cover and chill for at least 2 hours. Just before serving, transfer the salad to a large serving bowl or platter and sprinkle it with the minced egg whites and remaining chopped dill. SAUCE: Stir the beet and lemon juice into the sour cream until it is smooth and well blended. Pass this sauce separately.

1 1/2 cups beets chopped cold (freshly cooked or canned)
1/2 cup apple chopped
1/4 cup onion chopped
1 teaspoon dill weed

Salt and pepper to taste

1 tablespoon mustard prepared
2 tablespoons white wine vinegar
1/4 cup vegetable oil
3 tablespoons cream (whipping cream)

Steps:

  • Fillet fish and soak overnight in cold water in refrigerator. Remove small bones and skin from herring. Rinse and drain. Dice.Mix herring, potatoes, beets, apple and onion. Mix dill weed with the vinegar, pour over the salad ingredients. Add salt and pepper to taste and toss gently with a wooden spoon.Dressing:*Remove yolks from the eggs. Mince whites and reserve. Force the yolks through a sieve into a small bowl and then mash to paste. Add the mustard and mix. Gradually beat in the vinegar and oil, then add cream, a tablespoon at a time. Traditional part of a Danish smorgasbord. Always part of Christmas buffet. Lovely color and great taste (if you like pickled herring)

1 (1 lb) jar pickled, sliced beet (reserve liquid)
3/4 cup marinated wine flavored herring tidbits (about a 6 to 8 oz jar or tin)
1 medium tart apple
1/2 lb potato, peeled and boiled & cooled
1/2 cup finely chopped dill pickle
1 small onion, finely chopped

Steps:

  • Chop the herring, potatoe, beets and apple into 1/4" pieces.
  • Mix together.
  • Blend in the dill pickle, onion and add a bit of the reserved beet liquid.
  • The salad should have a firm consistency.
  • Put the ingredients into a bowl, pack down well, cover and refrigerate at least over night or up to 2 days.
  • Serve with Danish rye bread and hard boiled eggs as part of a smorgasbord.
