1 lb halibut steaks, skinless, boneless
1 onion, sliced
1 garlic clove, minced
2 (14 1/2 ounce) cans diced tomatoes
1 tablespoon capers, drained, rinsed
1 kalamata olive, pitted, chopped
1 tablespoon fresh lemon juice
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon fresh ground pepper

Steps:

  • Preheat oven to 450 degrees and place fish in an 8 inch baking dish.
  • Spray a large nonstick skillet with olive oil nonstick spray and set over medium-high heat.
  • Add the onion and garlic and cook, stirring frequently, until slightly softened, about 3 minutes.
  • Stir in tomatoes, capers, olives, lemon juice, basil, oregano, and pepper, and bring to a boil.
  • Reduce the heat and simmer, stirring occasionally, until slightly thickened, about 6 minutes.
  • Spoon the sauce over the fish and bake until the fish is just opaque in the center, about 10 minutes.

1 teaspoon olive oil
1 bell pepper (chopped)
1 onion (chopped)
1/2 cup portabella mushroom (chopped)
12 ounces tomato sauce
6 ounces firm tofu (drained and crumbled)
2 cups spaghetti (cooked)
3/4 cup fat free mozzarella cheese

Steps:

  • saute veggies in oil.
  • add tomato sauce and tofu.
  • bring to boil.
  • simmer for 10 minutes.
  • coat pie plate with cookie spray.
  • arrange spaghetti in bottom and up sides.
  • pour in sauce mixture.
  • add cheese.
  • bake 375 for 20 minutes.

Come this year when I am given not one but two recipe folders to hold snippets out of magazine I have to try and unglue them. The result is not successful. So I am putting them on recipezaar to print them out to organise them, damn last years OCD. I'm not sure what issue they are from but this is definitely from weight watchers magazine

40 g bulgur wheat
200 ml vegetable stock, hot
1 orange
25 g canned chick-peas, drained
1 spring onion, chopped
1 small carrot, garted
25 g frozen peas, defrosted
2 radishes, quartered
2 teaspoons fresh thyme leaves
rocket, to serve

Steps:

  • place bulgur wheat in pan with the stock and simmer for 10 min until tender. drain any excess liquid and cool.
  • finely grate the zest of half the orange and add to the cooked bulgur. cut the skinfrom the orange and cut into segments catching any juice and stirring it into the bulgur.
  • Add the remaining ingredients (except the rocket) seasonw ith salt and pepper and store in fridge in airtight container pack the rocket leaves loosely ontop and stir just before serving.

This is from the Weight Watchers New Complete cookbook. Another one of my favorites. These are just like the teriyaki beef strips you get in Chinese restaurants. Oh so yummy and good for you too! Great with rice.

3 scallions, sliced
2 tablespoons reduced sodium soy sauce
1 tablespoon fresh gingerroot, grated peeled
1 tablespoon rice wine vinegar
2 teaspoons dark sesame oil
1 teaspoon balsamic vinegar
1/2 teaspoon fresh ground pepper
1 garlic clove, minced
3/4 lb beef tenderloin, cut into 16 strips

Steps:

  • Preheat a grill. If you are using wooden skewers, soak in water 30 minutes.
  • In a gallon size sealable plastic bag, combine all of the ingredients, including the beef. Seal the bag, squeezing out the air. Marinate 15 minutes.
  • With tongs, remove the beef from the marinade; discard the remaining marinade. On each of 16, six-inch, metal or wooden skewers, thread one beef strip, piercing the beef in several places.
  • Grill until cooked through, about 5 minutes on each side.
  • Serve with either chinese mustard, duck sauce and/ or soy sauce to dip the skewers inches.

1/4 teaspoon salt

2 tablespoons fresh lime juice
2 tablespoons cilantro (minced optional)

Steps:

  • In a large nonstick skillet, heat the oil.
