SHRIMP PUFFS



Shrimp Puffs image

Number Of Ingredients 7

Cooking spray, for coating the muffin tin
1 7 1/2-ounce can refrigerator biscuits
1 cup shredded monterey jack cheese
1 scallion, white part and some green, chopped
1/2 cup mayonnaise
1/2 pound baby shrimp, cooked and peeled
1/2 teaspoon chopped fresh dill

Steps:

  • Preheat the oven to 350 degrees F. Coat a miniature-muffin tin with cooking spray.
  • Split each biscuit in half and place each half in a muffin cup, pressing it into the bottom and up the sides.
  • In a medium-size bowl, mix the cheese, scallion, mayonnaise, shrimp and dill. Place 1 tablespoon of the shrimp mixture on top of each biscuit. Bake for 20 minutes, or until the puffs are golden and bubbling.

3 to 4 cups fresh peaches, sliced
1 cup sugar plus some, for taste
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
2/3 cup unsalted butter
1 egg, slightly beaten

Steps:

  • Preheat your oven to 375 degrees F.
  • Place peaches in the bottom of a baking dish and sweeten, to taste, with a little sugar depending on ripeness. In medium mixing bowl, sift all dry ingredients. Cut in butter and add beaten egg. Mix until crumbly and sprinkle over fruit, covering all exposed fruit. Bake for 35 to 40 minutes until golden.

CREME BRULEE FRENCH TOAST STICKS



Creme Brulee French Toast Sticks image

1 cup milk
2 3/4 cups heavy cream
5 vanilla beans
9 egg yolks
3/4 cup sugar
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 loaf French or Italian bread cut into 1 1/2-inch wide sticks
2 tablespoons butter, plus more if needed
Powdered sugar, for dusting
Maple syrup, to taste

Steps:

  • In a medium saucepan add milk and cream to saucepan. Using the tip of a small, sharp knife, split the vanilla bean and scrape the insides of the vanilla beans into the milk mixture. Bring to a boil over medium high heat. Remove from the heat and set aside for 30 or 40 minutes to allow the vanilla to infuse into the milk. Pour through a fine sieve and strain into bowl and set aside.
  • Preheat griddle to medium heat.
  • In a medium bowl, combine the egg yolks, sugar, cinnamon and nutmeg and mix together well with a wooden spoon. Little by little add the milk mixture, stirring well with the wooden spoon to blend. Pour mixture through a fine sieve and strain into a clean bowl. Cut bread into 1 to 1 1/2-inch wide strips.
  • Melt 2 tablespoons butter on the griddle. Dip bread sticks into creme brulee mixture. Cook a few at a time for 2 to 4 minutes on each side or until they are golden brown. Add additional butter as needed to keep pan greased. Sprinkle French toast sticks with powdered sugar and serve with syrup.

1 pound small shrimp, cooked
1 teaspoon fresh dill, chopped

Steps:

  • Heat oven to 350 degrees F. Spray miniature muffin tin with oil spray. Split each biscuit in half and place in muffin tin, pressing into the bottom.
  • Mix next 5 ingredients together in medium bowl and place 1 tablespoon of shrimp mixture in biscuit dough. Bake for 15 minutes or until golden and bubbling.

CREAM OF PUMPKIN SOUP WITH DICED GRUYERE AND BUTTERED CROUTONS



Cream of Pumpkin Soup with Diced Gruyere and Buttered Croutons image

3/4 cup unsalted butter, cut into 12 tablespoons
1 medium onion, minced
2 pounds fresh pumpkin, peeled, seeded, coarsely chopped*
3 cups chicken stock
2 cups half-and-half
Fine sea salt
Freshly ground cracked black pepper
2 slices dense white sandwich bread with crusts removed, cut into 1/4-inch cubes
1/3 pound Gruyere, cut into 1/4-inch cubes
1 bunch chives, finely chopped
1 sprig rosemary, leaves minced

Steps:

  • In a small, heavy bottomed soup pot or casserole, melt 2 tablespoons of butter over medium heat. Add the onion and cook, stirring frequently, until softened and slightly translucent but not browned, about 4 minutes. Add the pumpkin, stock and half-and-half and stir to combine. Season generously with salt and pepper, reduce heat to medium low and cook 30 minutes, stirring occasionally. Remove from the heat, then transfer the mixture to the bowl of a food processor. **Puree for 10 seconds, until very smooth. Pour through a fine strainer into a clean pot. Add 6 tablespoons of butter and stir to combine. In a small skillet, warm 4 tablespoons butter over medium heat until gently bubbling. Add the bread cubes, stir to coat with the butter and saute until golden brown. Transfer croutons using a slotted spoon to a small bowl lined with a paper towel. Raise the heat under the soup to medium high and heat until very hot for several minutes but not boiling, stirring frequently with a whisk to blend the butter and to keep the soup from burning on the bottom. Ladle soup into bowls, sprinkle with diced Gruyere, croutons, chives and rosemary. *Cooks note: Can replace fresh pumpkin with 1 (16-ounce) can of pumpkin puree and reduce the cooking time from 30 to 15 minutes. ** When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.;

DOUBLE DOUBLE BACON CHEESE QUICHE

1 1/3 cups all-purpose flour
1/8 teaspoon salt
1/2 cup (1 stick) chilled butter, cut into small pieces
2 to 3 tablespoons cold water
10 strips bacon
4 large eggs
1 1/2 cups light cream
1/4 teaspoon dried thyme
1/8 teaspoon white pepper
1/2 cup shredded Gruyere cheese (about 2 ounces)
1/2 cup shredded white Cheddar cheese (about 2 ounces)

Steps:

  • Preheat oven to 375 degrees F.
  • To prepare the crust: In a large bowl, mix together the flour and the salt. Using 2 knives, cut in the butter until coarse crumbs form. Add water, 1 tablespoon at a time, tossing with a fork, until dough forms. Shape into a disk, wrap in plastic wrap and chill in refrigerator for 30 minutes. Lightly flour counter and rolling pin and roll into about a 10 or 11-inch circle. Fit into a 9-inch pie pan. Trim edge, leaving 1/4-inch overhang. Prick dough with a fork. Line with foil and fill with dried beans. Bake for 10 minutes. Remove the foil and dried beans. Bake until lightly golden, about 5 minutes more. Transfer to wire rack to cool.
  • To prepare the filling: In a medium skillet cook the bacon over medium heat until crisp, 8 to 10 minutes. Crumble bacon. Transfer to a paper towel to drain. In a small bowl whisk together the eggs, cream, thyme and pepper. Pour into the crust. Sprinkle egg mixture with bacon and cheeses. Bake until golden and custard is set, about 30 minutes.
