These mini cheese balls are the perfect quick appetizer for any party. Roll them in toasted sesame seeds, fresh rosemary and/or paprika to add even more flavor. -J. Spivey, Ennice, North Carolina

1 package (8 ounces) cream cheese, softened
2 cups shredded sharp cheddar cheese
Optional toppings: Toasted sesame seeds, minced fresh rosemary and paprika
Optional garnishes: Halved rye crisps and rolled tortilla chips

Steps:

  • In a large bowl, combine cheeses. Shape into 36 balls; roll balls in toppings as desired. Cover and refrigerate for 8 hours or overnight. To serve, if desired, press a rye crisp or rolled corn chip into the top of each cheese ball.

2 digestive biscuits
10 g butter
1 tablespoon honey
100 g mascarpone
1/4 lemon
1 tablespoon icing sugar

Steps:

  • Crush the biscuits into small pieces and combine with the soft butter and honey. Place this mixture into one small metal cutter ring and press firmly and evenly on the bottom of the ring.
  • Add the lemon juice and icing sugar to the mascarpone, whisk for around 2 minutes, being careful not to over whisk as this can cause the mixture to split.
  • Spoon the mixture into the rings and using a flan/palette knife press the mix well into the ring to prevent air gaps. Remove the ring with either a hot cloth or blowtorch.
  • TIP: If you find it difficult to remove from the ring, use a flat/palette knife to cut around the cheesecake.
  • Place the cheesecakes onto a large plate or individual ones and decorate with the fruit of your choice!

Delightful bite-size cheese balls. This is just a basic cheese ball--you can add whatever you like to the recipe to spice it up to make it not so ordinary. Just omit the chives and add 1/4 cup of whatever you like. I like to put in green olives sometimes and sometimes a mix of bacon and cheddar--it just depends on what you're in the mood for. Hope you enjoy.

1/4 lb mascarpone cheese or 1/4 lb cream cheese
1 teaspoon salt
1/4 teaspoon white pepper
1/4 cup finely chopped chives
2 1/2 cups chopped walnuts

Steps:

  • In a food processor mix all ingredients except nuts until smooth.
  • Remove from processor and roll in to bite-size balls.
  • Coat the balls with nuts.
  • Place on wax paper and chill 1 hour before serving.

This has got to be my favotite cheese ball. You can substitute cream cheese for the mascapone but it's so much better made with it. Cook time is chill time.

1 lb mascarpone cheese (up to 30% fat)
3 tablespoons chopped dill
1/4 cup butter (room temperature)
1/2 cup feta cheese (crushed)
1/2 cup blue cheese
1/2 teaspoon white pepper

Steps:

  • Mix all ingredients shape as much as you can into into a bal with a spoonl. let stand for 1/2 an hour. Spread food wrap to the bottom of a bowl, fill bowl with the cheese mix, cover and refrigerate for 3-4 hours.
  • . You can decorate the cheese balls with red pepper, thin chopped green onions, nuts etc.

I have been making these sausage balls for many years now. I always make them around christmas and thanksgiving for partys and just to have around the house for friends that stop by. They are great! A Must Try Appetizer.

3 cups Bisquick baking mix
1 lb bulk pork sausage
4 cups shredded mild cheddar cheese
1/2 cup milk
1/2 teaspoon dried rosemary leaves, crushed
1/2 teaspoon parsley flakes

Steps:

  • Note: You can use mild or hot pork sausage depends on what you like.(i prefer Jimmy Dean).
  • Heat oven to 350ºF. Lightly grease bottom and sides of cookie sheet.
  • Stir together all ingredients, using hands or spoon. Shape mixture into 1-inch balls. Place in pan.
  • Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm with sauce for dipping.

2 cups sharp cheddar cheese, grated
4 ounces cream cheese, softened
1/2 teaspoon Worcestershire sauce
1 teaspoon lemon juice
1/2 teaspoon seasoning salt
2 tablespoons sesame seeds, toasted
2 teaspoons chili powder
2 teaspoons dill

Steps:

  • Combine first 5 ingredients (to seasoning salt), mix well, and shape into walnut sized balls.
  • Roll 1/3 balls in sesame seeds, 1/3 in chili powder, and 1/3 in dill or make them all one kind if you prefer.
  • Put in the refrigerator to chill and set!

8 ounces cream cheese, softened
3 tablespoons green onions, finally chopped
3/4 teaspoon italian seasoning
3/4 teaspoon garlic powder
2 tablespoons real bacon, bacon bits
1 cup shredded mozzarella cheese
3/4 cup chopped roasted almonds (I use lightly salted) or 3/4 cup pecans (I use lightly salted)
assorted cracker

Steps:

  • Mix cream cheese, green onion, Italian seasoning and garlic powder until well blended. Stir in bacon and mozzarella cheese.
  • Scoop cheese mixture up using a level teaspoon and shape into 54 balls. Roll in chopped nuts and place on a cookie sheet.
  • Cover with plastic wrap and refrigerate at least 2 hours.
  • Pull out and place on serving tray with assorted crackers.
  • For a different flavor combo, omit the Italian seasoning and try shredded sharp cheddar and 3 Tbs. drained pimentos in place of the mozzarella and bacon.
