Shrimp Cocktail with Dipping Sauces image

Provided by Trisha Yearwood

Categories     appetizer

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 14

1/2 cup fresh flat-leaf parsley, leaves and stems separated
1 tablespoon black peppercorns
4 cloves garlic, smashed
1 lemon, halved
1/2 shallot, halved
Kosher salt
2 pounds peeled and deveined colossal shrimp, tail on
1/2 cup mayonnaise
1 tablespoon drained green peppercorns in brine plus 1 teaspoon brine
1/2 teaspoon granulated sugar
1/2 cup ketchup
1 tablespoon prepared horseradish
1/4 teaspoon celery seed
2 dashes Worcestershire sauce

Steps:

  • For the shrimp cocktail: Add the parsley stems, peppercorns, garlic, lemon, shallot, 2 teaspoons salt and 3 quarts water to a large stockpot and stir to combine. Bring to a boil over high heat. Prepare an ice water bath.
  • Add the shrimp to the boiling water and cook just until opaque, 1 to 2 minutes. Remove the shrimp and shock in the ice water bath for 5 minutes. Drain the shrimp and refrigerate until ready to serve. Reserve the parsley leaves for the peppercorn remoulade sauce.
  • For the peppercorn remoulade sauce: Combine the mayonnaise, green peppercorns, brine and sugar in a small bowl. Chop the reserved parsley leaves and stir into the remoulade. Store in an airtight container in the refrigerator until ready to serve.
  • For the "bloody" cocktail sauce: Combine the ketchup, horseradish, celery seed and Worcestershire sauce in a small bowl. Store in an airtight container in the refrigerator until ready to serve. This can be prepared up to 2 weeks in advance.
  • Serve the chilled shrimp over crushed ice with the dipping sauces alongside.

Provided by Rebecca Franklin

Categories     Dinner     Entree

Time 40m

Yield 2

Number Of Ingredients 10

1 shallot (chopped)
1/2 cup dry white wine
2 tablespoons lemon juice
1 tablespoon heavy cream
12 tablespoons butter (cold)
1/16 teaspoon white pepper
5 tablespoons butter
3/4 pound medium shrimp (rinsed and deveined)
1/2 teaspoon salt
2 tablespoons Cognac

Steps:

  • Gather the ingredients.
  • Simmer shallots, white wine, and lemon juice in a small saucepan over low-medium heat for 5 to 10 minutes, until mixture is reduced to about 2 tablespoons.
  • Add cream and bring to just under a simmer.
  • When first few bubbles rise, turn heat down very slightly and add 12 tablespoons of butter, 1 tablespoon at a time, whisking constantly. Be sure to allow 1 pat of butter to melt completely before adding the next.
  • Once butter is fully incorporated, season beurre blanc sauce with white pepper and set aside.
  • In a skillet over high heat, melt 5 tablespoons of butter, and then sauté shrimp, turning a few times until cooked through-about 3 to 4 minutes.
  • Reduce heat to low and season shrimp with salt. Carefully add Cognac (it may flame) and stir thoroughly.
  • Spoon warm beurre blanc sauce over hot shrimp and serve.

Shrimp'n Shrooms w/Creamy Cognac Sauce image

Well, tonight was a meal all for me since my husband is in Florida taking an exam. I rushed to the store and got the goodies. LOL I was so excited to make this dish cause I love all these items and my new found love of cookin' with cognac and pancetta just put it over the top with flavor. I didn't have anyone to share this with...

Add some of your cognac and cook for about 15 minutes with a lid on. Stirring occasionally & then add your tomato paste & remaining cognac. (If you need to you add a little water if necessary). Next, add your shrimp to cook through and your cream and sour cream to the sauce. It should be about 5 -7 minutes depending on the size of shrimp. Add your salt and pepper to taste as well. Paella Inspired Seafood Pasta with a Cognac Cream Sauce image

Provided by Judson Allen, Food Network Star Season 8 Finalist

Categories     main-dish

Time 45m

Yield 4 to 6 servings, depending on shrimp and lobster size

Number Of Ingredients 18

2 cloves garlic, chopped
2 tablespoons butter
1 shallot, minced
2 tablespoons paella spice blend
1 cup heavy cream
3/4 cup grated Parmigiano-Reggiano
1 1/4 cups seafood stock
4 tablespoons cognac
1/2 teaspoon lemon zest
Fine sea salt
1 lobster tail, meat removed, shell discarded
10 medium shrimp, shells and tails removed
Corn oil, for deep frying
1 pound mussels
1/2 a lemon, juiced
Fresh parsley, chopped, for garnish
1 pack rice noodles
8 ounces King crab meat

Steps:

  • Melt half of the butter in a medium saucepan over medium-low heat. Add half of the shallots and some of the paella spice blend. Add the cream and simmer for 5 minutes. Then add the cheese and half the garlic and whisk quickly until thick. Add a quarter of the seafood stock, the cognac and lemon zest to the sauce and let this reduce until thick and creamy. Add salt to taste.
  • Soak the dried rice noodles in warm water to soften.
  • Sprinkle the crab meat, shrimp and lobster with some paella spice blend and salt. Take some of your noodles and lay on a flat surface. Add a portion of crab meat, shrimp and lobster in the middle of the noodles and wrap them. Repeat steps for the "rice noodle bundles of seafood."
  • Heat the oil in a heavy pot and deep fry the noodle bundles until golden, about 5 minutes. Remove from the oil, drain on paper towels and season with sea salt immediately.
  • In a skillet add the remaining butter, garlic and shallots and cook over medium-high heat. Add the remaining seafood stock and the lemon juice. Add the mussels to the broth and steam until opened.
  • Place the fried seafood bundle in the middle of a bowl and spoon sauce around. Place mussels in each corner of the bowl (4 per serving). Garnish with chopped parsley.
