LOW COUNTRY SHRIMP FRITTATA

Low Country Shrimp Frittata image

Seafood seasoning is the secret ingredient in this frittata made with green peppers, celery, onion and shrimp.

Provided by Food Network Kitchen

Time 30m

Yield 4-6

Number Of Ingredients 10

2 tablespoons extra-virgin olive oil
1/2 cup celery, chopped
1/2 cup onion, chopped
1/2 cup green peppers, chopped
1/4 cup milk
10 large eggs
Kosher salt and freshly ground black pepper
1 cup chopped cooked shrimp
2 tablespoons chopped fresh flat-leaf parsley
1/2 teaspoon seafood seasoning, such as Old Bay

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat 1 tablespoon oil in a medium ovenproof nonstick skillet over medium-high heat. Add the celery, onion and green peppers and cook, stirring, until tender, about 5 minutes. Remove from the heat and transfer the vegetables to a plate and set aside. Wipe out the skillet.
  • Whisk the milk, eggs, 3/4 teaspoon salt and a few grinds of pepper in a large bowl. Add the cooked vegetables, shrimp, parsley and seafood seasoning and stir to combine.
  • Heat 1 tablespoon oil in the skillet over medium-high heat. Add the egg mixture and cook until the edges start to set, about 2 minutes. Transfer to the oven and bake until the center is set, 15 to 20 minutes. Let stand for 5 minutes before sliding carefully onto a serving plate and cutting into wedges.

SHRIMP, SPINACH, TOMATO AND GOAT CHEESE FRITTATA

Shrimp, Spinach, Tomato and Goat Cheese Frittata image

Delicious and healthy, good for any meal. I used 1/2 lb of 31-40 count shrimp instead of the large ones, and sliced them in half lengthwise. From Relish Magazine.

Categories     Breakfast

Time 35m

Yield 4 serving(s)

Number Of Ingredients 12

4 eggs
4 egg whites
1/3 cup chopped fresh tomatoes or 1/3 cup diced canned tomato
1 dash dried ancho chile powder
2 tablespoons chopped fresh basil
1/2 teaspoon salt, divided
1/2 teaspoon fresh ground black pepper, divided
2 tablespoons canola oil
12 large shrimp, sliced in half crosswise (16 to 20 count)
1 small shallot, chopped
1 cup packed chopped fresh spinach
1/2 cup crumbled goat cheese

Steps:

  • Preheat oven to 400°F.
  • Whisk eggs and egg whites together in a medium bowl. Add tomatoes, Ancho chili powder and chopped basil. Add ¼ teaspoon salt and pepper.
  • Heat a medium cast-iron skillet or other ovenproof skillet over medium-high heat. Add canola oil. Season shrimp with remaining ¼ teaspoon salt and pepper. When oil is hot, place shrimp in pan and sauté 1 minute. Add shallot and sauté 2 minutes. Add spinach and cook until wilted.
  • Spread shrimp and spinach mixture evenly in skillet. Pour egg mixture into skillet. Use a spatula to lift shrimp and spinach mixture, allowing egg mixture to flow underneath. Sprinkle goat cheese on top. Once the frittata is set on the bottom, transfer to oven and bake 13 to 15 minutes, until puffy and golden brown. Remove from oven and let cool a few minutes before cutting into wedges.

SPINACH, BACON, AND GOAT CHEESE FRITTATA

Spinach, Bacon, and Goat Cheese Frittata image

Provided by Food Network

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 9

1 tablespoon canola or sunflower oil
3 ounces pancetta or bacon, cut into small cubes
4 shallots, thinly sliced
3 cups young leaf spinach
8 eggs
1/4 cup grated Parmesan, Cheddar, or other hard cheese
A grating or two of nutmeg
Sea salt and freshly ground black pepper
1/2 cup crumbled soft goat cheese

Steps:

  • Preheat the oven to 350 degrees F or preheat the broiler to medium-high. Heat the oil in a 9-inch nonstick ovenproof frying pan over medium heat. Add the pancetta or bacon and saute until golden, then remove with a slotted spoon; set aside. Add the shallots to the pan, lower the heat, and cook gently for about 10 minutes, until soft but not colored. Add the spinach and stir until just wilted, then remove from the heat.
  • Lightly beat the eggs in a bowl, then stir in the pancetta or bacon, spinach and shallots, grated cheese, nutmeg, salt, and pepper. Put the frying pan back over low heat, pour in the egg mixture, and cook gently, without stirring, letting the eggs set slowly from the bottom up. After about 5 minutes, give the pan a little shake: the bottom half of the frittata should be set, with a layer of wet egg still on top.
  • Dot the goat cheese over the top. If you're baking the frittata, place it in the oven for 5 to 10 minutes, until just set. Or put the frittata under the broiler, ideally not too close to the heat, for about 5 minutes. Let cool slightly (or completely) before slicing and serving.

SHRIMP PRIMAVERA WITH GOAT CHEESE

Shrimp Primavera with Goat Cheese image

This dish is one of my favorites. If you like goat cheese it will become one of yours as well. I was inspired to make this dish after trying a similar one made with chicken at a local restaurant. Serve with a nice crusty loaf of french bread, a garden salad, and a glass of your favorite red wine!

Time 40m

Yield 4

Number Of Ingredients 10

½ (16 ounce) package whole wheat rotini pasta
2 teaspoons olive oil
3 green onions, slivered
2 cloves garlic, minced
1 (8 ounce) jar quartered marinated artichoke hearts, drained
1 (14.5 ounce) can no-salt-added whole tomatoes, undrained and chopped
2 tablespoons capers
¼ teaspoon chipotle chile powder
1 pound large shrimp, peeled and deveined
⅓ pound crumbled goat cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Meanwhile, heat olive oil in a large skillet over medium heat; cook and stir green onions and garlic until onions are tender, about 4 minutes. Add artichokes, tomatoes, capers, and chipotle chile powder; bring to a boil. Reduce heat to low and simmer. Place shrimp into sauce; cook and stir until they are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes.
  • Divide pasta evenly into 4 bowls and top with shrimp and tomato sauce. Scatter goat cheese over sauce.
