Easy lemon shrimp salad image

Juicy seared shrimp marinated in lemon, spices and olive oil with creamy avocado, red onion and baby spinach is a delicious and easy lunch or dinner recipe.

500 g (1lb) shrimp / prawns (peeled and devined )
1 tbsp olive oil
1 lemon (zest and juice )
1 tsp salt
½ tsp black pepper
8 cups salad leaves
½ red onion (thinly sliced )
1 avocado (thinly sliced )
1 tbsp olive oil
2 tsp lemon juice
1 tsp white wine vinegar
salt and pepper (to taste )

Steps:

  • Combine the shrimp and marinade ingredients in a large bowl. Allow to marinade for up to 30 minutes.
  • Heat a large frying pan over high heat. Add the shrimp in a single layer and cook until the shrimp are pink and their tails start curling. Remove from the pan.
  • To make the salad, wash and dry the leaves and place in a bowl. Add the avocado, red onion and shrimp.
  • Whisk together the dressing ingredients in a small bowl and pour over the salad. Serve immediately.

1/2 lemon, plus
2 tablespoons fresh lemon juice
1/2 teaspoon black peppercorns
1 pinch salt
1 lb medium shrimp, shelled and deveined
2 tablespoons extra virgin olive oil
2 tablespoons grapeseed oil
1 pinch sugar
fresh ground pepper
2 romaine lettuce hearts, cut into 2-inch wide ribbons
1 cup grape tomatoes, halved
1 avocado, cut into 1-inch pieces
2 tablespoons chives, snipped

Steps:

  • Fill a saucepan with water. Squeeze the lemon half into the water, then add it to the water along with the peppercorns and a generous pinch of salt. Bring the water to a boil.
  • Add the shrimp and cook until curled and just pink, about 3 minutes.
  • Using a slotted spoon transfer the shrimp to a paper-lined plate and freeze until chilled, about 5 minutes.
  • Meanwhile in a large bowl, whisk the lemon juice with the olive oil, the grapeseed oil, the sugar and a pinch of salt and pepper. Add the romaine, tomatoes, avocado and shrimp and toss.
  • Transfer to plates, garnish with chives and serve.

A simple but lavish bath of olive oil and lemon juice is the Italian way of showing off superfresh seafood. The key, according to Marcella Hazan, is that the dish should never see the inside of a refrigerator, which changes the texture of the seafood and the flavor of the olive oil. She calls for shrimp in this recipe, but the formula also works with squid, clams and meaty fish fillets.

3/4 cup extra-virgin olive oil, plus more as needed
1/4 cup freshly squeezed lemon juice (from 1 to 2 lemons)
2 pounds medium-large shrimp (about 26-30 per pound), peeled and deveined (tails optional)
Flaky sea salt and coarsely ground black pepper
1 large pinch freshly chopped flat-leaf parsley
Torn or sliced crusty bread, for serving

Steps:

  • Bring a pot of water to a boil, preferably not too deep, so you can watch the shrimp as they cook. Pour the olive oil and lemon juice into a baking or serving dish, preferably a white one to show off the colors of the finished dish.
  • Working in a few batches to prevent overcooking, boil the shrimp over high until just firm and opaque, 2 to 3 minutes, removing them to a colander with a slotted spoon. When all the shrimp are cooked, transfer them to the olive oil-lemon bath and gently mix to coat. Sprinkle generously with salt and pepper. The shrimp should be just covered with liquid; pour in more oil as needed. Set aside to cool to room temperature.
  • Just before serving, taste and adjust the seasonings with salt and pepper. Sprinkle with parsley and serve with bread, spooning some liquid over each serving.

If you're starting with precooked shrimp, you can skip the first step entirely.

2 lemons
1 pound shelled large shrimp
1/4 cup mayonnaise
2 tablespoons extra-virgin olive oil
1/2 cup diced celery
1/4 cup diced red onion
1/4 cup chopped fresh dill, parsley or cilantro (or a combination)
Lettuce, avocado or other vegetables, for serving (optional)

Steps:

  • Bring a medium pot of salted water to a simmer. Slice one of the lemons and add to the pot, along with the shrimp. Simmer, never letting the water boil if you can help it, until the shrimp turn opaque, 2 to 4 minutes, depending on their size. Drain well, and discard the lemon slices. If you like, you can chop the cooked shrimp into smaller pieces.
  • Grate the zest from the remaining lemon into a large bowl. Halve the naked lemon and squeeze the juice into the bowl. Whisk in the mayonnaise and oil.
  • Add the celery, onion, herbs and cooked shrimp, tossing to combine. Season to taste with salt and pepper. Cover and refrigerate until ready to eat. Serve with lettuce and avocado, if you like.
