PENNE WITH SHRIMP AND SCALLION PESTO
Lemony shrimp tops pasta tossed with a homemade pesto that's perked up with scallion.

- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions for al dente. Reserve 1/4 cup cooking water and then drain the pasta.
- Meanwhile, put the scallion greens, parsley, pine nuts, 1/4 cup oil, 1 teaspoon salt and a few grinds of pepper in the bowl of a food processor and pulse the until smooth. Set aside.
- Heat the remaining 2 tablespoons olive oil in a large skillet over medium heat. Add the scallion whites, garlic and lemon zest, and cook, stirring occasionally, until the garlic is soft and is begins to brown, about 2 minutes. Add the shrimp, season with a pinch each of salt and pepper, and cook, stirring occasionally, until the shrimp just begin to turn pink but are not completely cooked through, about 2 minutes. Add the lemon juice and scallion mixture, toss to combine, and bring to a quick simmer to heat through; remove from the heat.
- Add the drained pasta and reserved cooking water to the skillet. Toss until the pasta is coated with the sauce. Divide the pasta among 4 plates and season with pepper. Serve with lemon wedges and a green salad if using.

PENNE WITH SHRIMP AND HERBED CREAM SAUCE

- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta and set aside.
- In a large skillet, heat the oil over medium-high heat. Add the shrimp, garlic, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. Cook, stirring frequently until the shrimp turn pink and is cooked through, about 3 minutes. Using a slotted spoon, remove the shrimp and set aside.
- Add the tomatoes, 1/4 cup basil, 1/4 cup parsley, and the red pepper flakes. Cook for 2 minutes, stirring constantly. Add the wine, clam juice, and heavy cream. Bring the mixture to a boil. Reduce the heat to medium-low and simmer for 7 to 8 minutes until the sauce thickens. Add 1/4 cup of the Parmesan, the cooked shrimp, the cooked pasta, and the remaining herbs. Toss together until all ingredients are coated. Season, to taste, with salt and pepper.
- Transfer the pasta to a large serving bowl. Sprinkle with the remaining cheese and serve immediately.

- Pat shrimp and scallops dry; sprinkle with seafood seasoning., In a small skillet, melt 1 tablespoon butter over medium heat. Cook and stir mushrooms about 3 minutes. Add peas; cook until vegetables are tender, about 3-4 minutes. Remove. Add shallots and 1 tablespoon butter; cook and stir until starting to soften, 1-2 minutes. Steps:
- Grease a 9x13 baking dish and set aside.
- Heat oil in saucepan, add onion and garlic and saute for 2 minutes.
- Add tomatoes, sauce, salt, red pepper, black pepper and basil.
- Simmer for 30 minutes, uncovered.
- Cook Penne pasta for 9 minutes, drain and add to prepared baking dish.
- In separate saucepan, melt butter, add shrimp and cook for 2 to 3 minutes.
- Add scallops and cook for 30 seconds, just to coat.
- Spoon seafood over noodles and top with tomato sauce.
- Sprinkle with Parmesan cheese.
- Bake, covered for 35 minutes at 350 degrees, then uncover and bake for 10 minutes more.

- Combine and heat both oils in a heavy large skillet over medium-high heat.
- Add peppers and saute until crisp-tender, about 5 minutes.
- Using a slotted spoon, transfer peppers to a bowl.
- Add sundried tomatoes, shrimp, scallops, 1/4 cup of basil, garlic and oregano to the same skillet and saute until the shrimp are just opaque in the centre, about 3 minutes.
- Transfer shrimp and scallop mixture to the bowl with peppers, cover and set aside.
- Add broth, wine and tomato paste to same skillet.
- Boil until sauce thickens slightly, stirring occasionally, about 6 minutes.
- During the last minute add cream if you are using it, and let cook an extra minute or two.
- Meanwhile cook pasta in a large pot of boiling salted, oiled water until tender, but still firm to bite.
- Drain; return pasta to same pot.
- Add contents of bowl, sauce, remaining 1/4 cup of basil and cheese to pasta.
- Toss over low heat until warmed through and sauce coats pasta.
- Season with salt and pepper to taste and enjoy.
- Note: If all peppers are not available any combination will do.
- Shrimps and Scallops can be replaced with chicken.

PENNE WITH SHRIMP AND SCALLOPS

- When garlic is cool enough to handle, squeeze cloves into a small bowl. Mash lightly with a fork until pasty. Saute shrimp and scallops in olive oil in large skillet over medium heat, until cooked through, about 3 minutes. Remove shellfish from pan and set aside in medium bowl, covered. Deglaze pan with chicken broth and reduce until slightly pasty. Lower heat while adding butter so it stays thick when melted. Add heavy cream, lemon juice, red pepper and mashed garlic. Increase heat and stir until ingredients incorporate. Do not allow to boil. Add remaining cheese and stir about 1 minute more until sauce is thick and smooth. Return shellfish and any juice to pan and cook through for about 1 minute. Pour mixture over cooked penne and toss with remaining cheese.
PASTA WITH SAFFRON SHRIMP AND SCALLOPS

- The day before the party, make the base for the pasta seafood topping. Melt the butter in a skillet. When the foaming subsides, add the shallots, carrot and celery. Cover and cook over low heat for 10 to 15 minutes or until very tender and almost dissolved in butter. (If at any time the vegetables begin to stick to the skillet, add a tablespoonful of water or wine.) Uncover the skillet, add the saffron and white wine and boil over high heat until almost all of the wine has evaporated. Add the fish stock and simmer for 5 minutes. Season to taste with salt and pepper (do in advance up to this point.) Boil the pasta until al dente. While this is cooking, add the heavy cream to the skillet and simmer again until the sauce is slightly thickened. Add the shrimp and scallops and simmer just until the seafood is cooked through. Add the tomatoes and simmer just for a minute to warm them through without really cooking them. Adjust the seasoning. Drain the pasta and portion it out among 6 warm pasta bowls. Ladle the saffron seafood sauce over the top and garnish with warm microwaved peas.

- In a bowl, combine salt, lemon pepper, garlic and onion powders, nutmeg, chili powder, and cayenne pepper.
- Mix cornstarch with 1/4 cup water, set aside.
- Place scallops in a bowl; sprinkle with spice mixture and toss to coat well.
- Cook the pasta in boiling salted water just until tender.
- Just before pasta is done, heat the oil and butter in a skillet. Saute the scallops, tossing to cook on all sides, until just done. Place scallops in serving bowl.
- To the skillet, add the chicken broth and bring to a boil. Stir cornstarch and water mixture into the pan to thicken the sauce; bring to a simmer.
- Add the scallops and sour cream to the skillet.
- Drain the cooked pasta and stir into hot scallops mixture.
