Shrimp with Tomatoes and Feta

Steps:
- Warm the olive oil in a large frying pan over medium heat and cook onions, stirring occasionally until soft, 7 minutes. Increase the heat to high. Add the tomatoes, water, oregano, crushed red pepper and vinegar and stir well. Bring to a boil, reduce the heat to low and simmer until thick, 20 to 30 minutes.
- Add the shrimp to the sauce and stir together. Simmer until the shrimp are almost firm, 4 to 5 minutes. Season with salt and pepper. Crumble the feta onto the top and stir together.
- Garnish with parsley and serve.
SHRIMP AND FETA CHEESE PASTA
Steps:
- In a medium skillet over medium heat, heat 2 tablespoons olive oil. Cook shrimp, garlic and white wine for 5 minutes, or until shrimp is pink. Remove shrimp with slotted spoon and set aside.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- While pasta is cooking, cook tomatoes with remaining 1 tablespoon oil, oregano and basil over medium heat in wine mixture until tender, 10 minutes.
- Toss hot pasta with shrimp, tomato sauce and feta. Feta will melt slightly. Serve.

BAKED FETA PASTA WITH SHRIMP
This TikTok-famous pasta gets a dressing up with loads of shrimp and the addition of thyme and lemon zest. If you're in the mood to dirty more than one pot, consider grilling or sautéing the shrimp and adding them to the finished pasta dish. A lovely and simple side salad completes the meal.

Steps:
- Position a rack in the middle of the oven and crank the heat to 400°F (200°C).
- Dump the tomatoes and garlic in a 9-by-13-inch (23-by 33-cm) baking dish. Strew the thyme over the tomatoes and drizzle the whole thing with 1/4 cup oil. Sprinkle with salt and stir to coat.
- Nestle the feta cheese in the middle of the dish and drizzle with the remaining 1/4 cup oil. Sprinkle the entire dish with red pepper flakes and a wee bit of black pepper.
- Bake until the tomatoes are lightly charred and have burst, 30 to 35 minutes. Remove the dish from the oven and nestle the shrimp among the tomatoes. Return the dish to the oven and continue baking until the shrimp is cooked through, 7 to 10 minutes.
- While the shrimp is cooking, bring a large pot of salted water to a boil. Cook the pasta until just al dente-about a minute less than specified on the package. Reserve 1 cup of the pasta water and then drain the pasta.
- Remove the thyme sprigs and discard. Stir the feta-tomato-shrimp mixture until evenly mixed.
- Pour the pasta into the dish and toss completely. If the dish looks a bit dry, add some of the reserved pasta water.
- Season with salt and pepper, to taste. Top with the parsley and lemon zest and serve.

LINGUINE WITH SHRIMP AND PLUM TOMATOES

- Place shrimp in medium bowl; sprinkle with salt and pepper. Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add shrimp; sauté until cooked through, about 3 minutes. Using slotted spoon, transfer to plate; cover. Add 4 tablespoons oil to same skillet. Add mushrooms; sauté until tender, about 8 minutes. - Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Stir in the garlic; cook 2 minutes. Add the tomatoes, and wine. Bring to a simmer and cook 30 minutes, stirring frequently. Once the tomatoes have simmered into a sauce, stir in the butter and season with salt and pepper.

- Set a large pot of salted water to boil. In a medium saucepan, heat 2 tablespoons oil over medium-high. Add onion and garlic. Cook until soft, 5 minutes. Add tomato paste and oregano. - Put 4 tablespoons olive oil in a wide skillet over medium heat. Add shallots and garlic, season with salt and pepper and cook, stirring, until softened, about 5 to 8 minutes. Lower heat as necessary to keep mixture from browning. Remove from heat while preparing tomatoes.

- To make the vinaigrette, broil the tomatoes on a small rimmed baking sheet, turning every 5 minutes, until well charred, about 15 minutes.
- Let cool.
- Dice the tomatoes and place in a strainer set in a bowl.
- Let stand 5 minutes to accumulate the juice.
- In a blender or small bowl, blend together the tomato juice, oil, vinegar, garlic, salt, pepper, and red pepper flakes (if using) until smooth.
- Return to the bowl and add the tomatoes.
- In a skillet, heat the tablespoon of oil over medium-high heat and saute the shrimp with salt and pepper until pink, about 3 minutes.
