This garlic pulled pork is my spin on kalua pork...enjoy!

6 pounds bone-in pork butt
2 tablespoons minced garlic
1 tablespoon liquid mesquite smoke flavoring (such as Wright's®)
1 tablespoon sea salt
½ teaspoon ground black pepper
1 medium head green cabbage
1 medium sweet onion, sliced (such as Vidalia®)
1 cup water
1 teaspoon chicken soup base (such as Better than Bouillon®)

Steps:

  • Remove bone from pork butt. Combine garlic, liquid smoke, salt, and black pepper in a bowl and rub into pork.
  • Cover the bottom of a slow cooker with green cabbage leaves. Place 1 layer of onion slices on top. Add pork.
  • Combine water and chicken base in a microwave-safe measuring cup and microwave on high until dissolved, about 45 seconds. Pour over pork. Break up remaining onion slices and place on top. Cover with another layer of cabbage leaves. Cover the lid.
  • Cook on Low for 8 hours. Turn pork over and, if needed, remove any excess liquid to leave the top 2 inches uncovered. Cover and continue to cook until fork-tender, about 8 hours more.
  • Transfer pork to a large bowl and shred with 2 forks, adding juices from the slow cooker to moisten. Serve alone or over the cabbage mixture.

8 ounces fresh ham or pork butt, cut into pieces 2 inches long, one quarter inch wide, and one quarter inch thick
1 large egg white
1 teaspoon cornstarch
one eighth teaspoon salt
Vegetable oil, for passing through
Sauce:
3 tablespoons distilled white vinegar
3 tablespoons soy sauce
3 tablespoons sugar
2 tablespoons rice wine or dry sherry
1 tablespoon cornstarch
One 1/2-inch piece peeled fresh ginger, minced
3 garlic cloves, sliced 1/8-inch thick
2 scallions, white part only, cut into thin 2-inch-long strips
1/2 cup canned sliced bamboo shoots (cut into thin 2-inch-long strips)
1/2 cup sliced water chestnuts
1/2 cup dried tree ears, soaked in hot tap water until softened, drained, patted dry, and torn by hand into 1-inch pieces
1/2 medium red bell pepper, seeds and ribs removed, cut into thin 2-inch-long strips
1 1/2 tablespoons hot chili paste
1 teaspoon hot chili oil, optional
1 teaspoon dark sesame oil

Steps:

  • 1. Combine the pork, egg white, cornstarch, salt, and 1 tablespoon of water in a medium bowl. Cover, and refrigerate for 30 minutes.
  • 2. Heat a large wok over high heat. Add enough vegetable oil to come about 1 inch up the sides of the wok, and heat it to 325° F. Add the pork and stir gently until it turns light brown, about 40 seconds. Using a wide wire-mesh strainer, transfer the pork to a colander to drain. Discard all but 4 tablespoons of oil from the wok.
  • 3. To start the sauce, mix the vinegar, soy sauce, sugar, and rice wine in a small bowl and set it aside. Dissolve the cornstarch in 3 tablespoons cold water, and set it aside.
  • 4. Return the wok to high heat. Add the ginger, garlic, and scallions, and stir-fry until they are fragrant, about 15 seconds. Add the bamboo shoots, water chestnuts, tree ears, and bell pepper and stir-fry until the bell pepper starts to soften, about 30 seconds. Transfer the vegetables to the colander. Add the vinegar mixture to the wok and stir for 10 seconds. Then add the hot chili paste and stir for 10 seconds more. Return the pork and vegetables to the wok, and stir-fry until the sauce comes to a boil and thickens, about 20 seconds. Add the hot chili oil, if using, and stir-fry for 10 seconds. Add the sesame oil and serve immediately.

  • Now we can start cooking! To prevent sticking, preheat a clean wok until it starts to smoke lightly (this step is very important). Now turn up the heat to high, and add one tablespoon of oil to the wok. Cook the marinated pork just until it turns opaque. Turn off the heat, transfer the pork to a dish, and set aside.
  • At this stage, your wok should still be pretty clean, as the technique used to cook the pork is fairly low impact. But if it’s not, it’s a good idea to wash the wok and wipe it dry before starting the next phase of cooking.

  • Place the shredded pork in a bowl and add the salt, cooking wine and soy sauce. Take your time to mix everything together well, as the longer it is mixed, the better the pork will taste. To stop this happening, let the bamboo shoots sit in some salt for 10 minutes, to extract some moisture.Blanch the bamboo shoots and black fungus in boiling water for about one minute and then remove. Stir-fry the green peppers in 2 tablespoons of oil in the pan for about 1 minute and then remove. Repeat the same process with the carrots, using fresh oil.
  • In a bowl, combine the sugar, vinegar, cooking wine, raw soy sauce and salt together. Add the starch mixture and lastly, the stock. Set aside.
