Double-Berry White Chocolate Crumble Bars image

Sugar cookie mix does double duty in these summery bars forming the base and tasty crumble topping. We love that these bars are loaded with fresh raspberries and blueberries with a finishing touch of white chocolate drizzle to pull it all together.

1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup cold butter, cut into pieces
1 1/2 cups fresh blueberries, from 2 (6-oz) containers
1 1/2 cups fresh raspberries, from 2 (6-oz) containers
1/3 cup sugar
3 tablespoons cornstarch
1/4 cup white vanilla baking chips

Steps:

  • Heat oven to 375°F. Spray 9-inch square pan with cooking spray.
  • In large bowl, place cookie mix. Cut in butter, using pastry blender or fork, until mixture is crumbly (do not overmix). Reserve 1 cup cookie mixture for topping; set aside. Press remaining mixture in bottom of pan. Bake 10 minutes.
  • In medium bowl, mix Filling ingredients. Spread mixture evenly over partially baked crust. Sprinkle reserved cookie mixture over filling.
  • Bake 32 to 36 minutes or until top is light golden brown and bubbling along edges. Cool 30 minutes.
  • In small microwavable bowl, microwave white vanilla baking chips uncovered on High 30 to 45 seconds or until chips can be stirred smooth. Spoon melted chips into small resealable food-storage plastic bag; partially seal bag. Cut off tiny corner of bag. Squeeze bag to pipe over top of bar. Cool completely, about 1 1/2 hours. Cut into 4 rows by 4 rows. Cover and refrigerate any remaining bars.

1/2 package (9-oz size) thin chocolate wafer cookies, crushed
2 tablespoons butter, melted
3 bars (1.55 oz each) white chocolate candy with crunchy chocolate cookie bits, unwrapped, chopped
6 oz white chocolate baking bars or squares, chopped
1 cup chopped pecans, toasted
1 cup flaked coconut
1 cup semisweet chocolate chips (6 oz)
1 egg, slightly beaten
1 can (14 oz) sweetened condensed milk (not evaporated)

Steps:

  • Heat oven to 350°F. Line 13x9-inch pan with foil; spray foil with cooking spray.
  • In medium bowl, mix cookie crumbs and melted butter. Press mixture in bottom of pan. Bake 10 minutes.
  • Sprinkle chopped candy, white chocolate, pecans, coconut and chocolate chips over partially baked crust. In small bowl, mix egg and condensed milk. Pour over ingredients on crust.
  • Bake 30 to 35 minutes. Cool completely in pan on cooling rack. Cut into 6 rows by 5 rows.

These traditional Christmas cookies are a cut above the rest because they're as rich and fudgy as brownies. Chilling the cookie dough is important because it helps the flavors to develop, prevents spreading, and makes the otherwise sticky cookie dough easy to handle.

1/2 cup (1 stick; 115g) unsalted butter, softened to room temperature
1/2 cup (100g) granulated sugar
1/2 cup (100g) packed light or dark brown sugar
1 large egg, at room temperature
1 teaspoon pure vanilla extract
1 cup (125g) all-purpose flour (spoon & leveled)
1/2 cup + 2 Tablespoons (51g) unsweetened natural cocoa powder
1 teaspoon baking soda
1/8 teaspoon salt
1 cup (180g) mini or regular size semi-sweet chocolate chips
3 Tablespoons (35g) granulated sugar
1 cup (120g) confectioners' sugar, for rolling

Steps:

  • In a large bowl using a hand-held or stand mixer fitted with a paddle attachment, beat the butter, granulated sugar, and brown sugar together on medium high speed until fluffy and light in color, about 2-3 minutes. Add the egg and vanilla extract, and then beat on high speed until combined. Scrape down the sides and bottom of the bowl as needed.
  • In a separate bowl, whisk the flour, cocoa powder, baking soda, and salt together until combined. With the mixer running on low speed, slowly pour into the wet ingredients. Beat on low until combined and then beat in the chocolate chips. The cookie dough will be thick and very sticky. Cover dough tightly and chill in the refrigerator for at least 3 hours and up to 3 days. Chilling is mandatory for this sticky cookie dough.
  • Remove cookie dough from the refrigerator and allow to sit at room temperature for 10 minutes. If the cookie dough chilled longer than 3 hours, let it sit at room temperature for about 20 minutes. This makes the chilled cookie dough easier to scoop and roll.
  • Preheat oven to 350°F (177°C). Line large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Scoop and roll balls of dough, about 1.5 Tablespoons of dough each, into balls. Roll each ball very lightly in granulated sugar, then generously in the confectioners' sugar. Place 3 inches apart on the baking sheets.
  • Bake the cookies for 11-12 minutes or until the edges appear set and the centers still look soft. Tip: If they aren't really spreading by minute 9, remove them from the oven and lightly bang the baking sheet on the counter 2-3x. This helps initiate that spread. Return to the oven to continue baking.
  • Cool cookies for 5 minutes on the baking sheet, and then transfer to a cooling rack to cool completely. The cookies will slightly deflate as they cool.
  • Cookies stay fresh covered at room temperature for up to 1 week.

  • Combine cookie crumbs and butter; pat onto the bottom of an ungreased 13-in. x 9-in. baking pan. , In a microwave, heat milk and 1 cup chocolate chips; stir until smooth. Pour over crust. Sprinkle with remaining chips., Bake at 350° for 10-12 minutes or until chips begin to melt but do not lose their shape. Cool on a wire rack.

2 cups miniature marshmallows
6 ounces semi-sweet chocolate chips
1 cup peanut butter
1 1/2 cups crispy rice cereal

Steps:

  • In a large mixing bowl, cream butter and sugar until smooth. Blend eggs and vanilla.
  • Stir together flour, pecans, cocoa, baking powder, and salt. Gradually add dry ingredients to the creamed mixture; blend well.
  • Spread batter in a greased 13x9 in baking pan. Bake at 350 for 15-20 min until light brown.
  • Sprinkle marshmallows evenly over top. Bake 3 minutes. Cool pan on a wire rack.
  • In a small saucepan, melt chocolate chips and peanut butter over low heat, stirring constantly. Stir in cereal. Spread evenly over top of cooled crust. Refrigerate until firm. Cut into bars. Store in the refrigerator.

1 pouch (1 lb 1.5 oz) Betty Crocker™ double chocolate chunk cookie mix
1/4 cup vegetable oil
1 egg
1 can (21 oz) cherry pie filling
2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
1 container (8 oz) frozen whipped topping, thawed

Steps:

  • Heat oven to 350°F. Lightly spray bottom and sides of 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, oil and egg until soft dough forms. On ungreased cookie sheet, drop 3 tablespoonfuls of dough 2 inches apart to make 3 cookies. Bake 12 to 13 minutes or until set. Cool 2 minutes; remove from cookie sheet to wire rack. Cool completely, about 15 minutes.
  • Meanwhile, press remaining cookie dough in bottom of sprayed pan. Reserve 1 cup cherry pie filling for topping; cover with plastic wrap and refrigerate. In large bowl, beat cream cheese, sugar and the remaining pie filling with electric mixer on medium speed until blended. Spread cream cheese mixture over crust in pan.
  • Bake 35 to 40 minutes or until set. Cool 30 minutes. Refrigerate about 1 hour or until chilled.
  • Spread whipped topping over cream cheese layer. Top with spoonfuls of the reserved cherry pie filling. Coarsely crumble baked cookies; sprinkle over top of bars. Refrigerate at least 1 hour for flavors to blend. To serve, cut into 5 rows by 4 rows. Store covered in refrigerator.

1/4 cup butter, melted
1 (12 ounce) package semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk (NOT evaporated milk)
1 teaspoon vanilla extract
1 cup chopped nuts

Steps:

  • Preheat oven to 350°F.
  • Combine crumbs and butter; press firmly on bottom of 13x9 inch baking pan.
  • In medium saucepan, over medium heat, melt 1 CUP chips with sweetened condensed milk and vanilla.
