SHREDDED APPLE SPELT CAKE
This yummy treat can be eaten as dessert, breakfast, or anytime! It stays moist for days after it has been baked. It's a hit with all my friends.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a 9 inch Bundt pan.
- Toss together the shredded apple, 1 tablespoon cinnamon, and 1 tablespoon sugar in a bowl until evenly coated. Set aside.
- Whisk together the eggs, 1/2 cup sugar, and vanilla in a large bowl until the mixture is fluffy. Stir in the olive oil, orange juice, flour, xanthan gum, baking powder, salt, and 2 teaspoons cinnamon to make a batter. Fold the apple mixture into the batter. Pour mixture into the prepared bundt pan.
- Bake in preheated oven until toothpick inserted into center of cake comes out clean, about 60 minutes. Cool in the pan for about 15 minutes before turning out of the pan onto a wire rack to cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
- Sift flour, baking soda, cinnamon, and salt together in a bowl. Set aside.
- Mix sugar, egg, and oil together in another bowl. Stir in the flour mixture just until combined; fold in apple, walnuts, and raisins.
- Bake in the preheated oven until a toothpick inserted into the cake comes out clean, about 1 hour.

This is a very moist Bundt cake that lets you use up those apples that might be going soft. My family loves this. It is a Fall tradition at our home.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan. Sift together the flour, baking soda, salt and cinnamon. Set aside.
- In a large bowl, cream together the butter, brown sugar and white sugar until fluffy. Beat in the eggs, one at a time, then stir in the vanilla. Beat in the flour mixture. Fold in the shredded apples.
- Pour batter into prepared pan. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow cake to cool in the pan for 60 minutes, then turn out and sprinkle with confectioners' sugar, if desired.

This a wonderfull dense cake. Got the recipe from a magazine about 30 years ago. Kind of reminds me a little of a fruit cake.

Steps:
- Preheat oven to 350 deg.
- Grease well and flour a 9-by-9-by-2 inch baking pan.
- Into a large bowl of electric mixer, sift flour with baking soda, cinnamon, allspice, nutmeg, cloves, salt.
- Then add eggs, sugar, butter, and 1 cup applesauce; at low speed, beat just until ingredients are combined.
- At medium speed, beat 2 minutes longer, occasionally scraping side of bowl and guiding mixture into beater with rubber scraper.
- Add remaining applesauce, dates and walnuts; beat 1 minute.
- Pour batter into prepared pan.
- Bake 50 minutes, or until cake tester inserted in center comes out clean.
- Let cool in pan 10 minutes.
- Remove from pan.
- Let cool on wire rack.
- Frost with a Cream-Cheese frosting.

FRESH APPLE DATE CAKE
I've had this recipe for ages and it's a favorite of ours! Most of us have the ingredients on hand, so it's an easy dessert to throw together and I especially like the fact that the apples don't have to be peeled! It's also a good way to use up "slightly past their prime" apples that are a little wrinkled. It turns out very moist and delicious and also freezes well.

SHREDDED APPLE-DATE CAKE
This is a widely moderated recipe from Cabbagetown Cafe cookbook, so different that I can call it my own. It's still got all the flavor and tenderness you could desire. Warning: you will need a food chopper or processor not to work hard to make this cake, but I think it's worth a lot of effort. :)

- Lightly oil a 10" round deep pan, and set the oven rack to middle of the oven position.
- In a food processor bowl, or by hand, chop the dates and pecans together until they look almost like crumbs.
- Put the chopped mix into mixing bowl big enough to hold all ingredients, probably a 3 quart or 4 quart size is best.
- Shred the apples, and add them with the lemon juice, softened butter sub and sweetener to the bowl, mixing well and coating the apples with lemon juice.
- Sift the flour with salt and baking soda, and add to the bowl, mix very well.
- Spoon mixture into prepared 10" round pan and top with cinnamon and sugar, blended together.
- Bake at 350° for 45 minutes, covering the top lightly at the 30 minute mark with a foil or parchment paper round if it browns more than you like.
- Test for doneness with a long pick in the middle, if still slightly gooey, turn off the oven and rest another 15 minutes.
- Let cool 15 minutes before turning out or cutting---it will crumble if cut too soon, but a serrated knife minimizes that.
