SHOYU CHICKEN RECIPE

Shoyu Chicken is a chicken dish with shoyu soy sauce, ginger and scallions; served over rice with a side of Hawaiian Mac Salad.

3/4 cup shoyu soy sauce
1 1/2 cups water
2 tablespoons honey
1/2 cup packed dark brown sugar
1 (2-inch knob) fresh ginger (peeled and thinly sliced)
3 whole garlic cloves (peeled and crushed)
2 pounds bone-in, skin-on chicken thighs
1/2 Maui onion (or yellow onion) (peeled and cut into 3/4-inch wedges)
3 whole green onions (white and green parts, cut into 2-inch pieces)
1 1/2 tablespoons cornstarch
3 cups steamed rice, for serving

Steps:

  • In a heavy Dutch oven or pot, mix the soy sauce, water, honey, brown sugar, ginger, and garlic together. Nestle the chicken thighs in the sauce, skin side up, submerging the meat as much as possible. Bring the mixture to a boil over medium-high heat. When the sauce comes to a boil, add the Maui or yellow onion wedges and green onion pieces and turn the heat to medium-low. Cover the pot with a lid and let simmer for 30 minutes. Using a pair of kitchen tongs, gently turn all the chicken pieces over. Cover the pot again and simmer for another 30 minutes.
  • Check the tenderness of the meat with a fork; if you can easily insert the fork into the meat, the chicken is done. Remove the cooked thighs from the sauce, reserving it, and place them on a rimmed baking sheet.
  • Preheat the broiler.
  • In a small bowl, whisk the cornstarch with 1/4 cup of the sauce until smooth, then add the cornstarch mixture back to the pot with the remaining sauce and cook over medium-low for 4 to 5 minutes, until the sauce has thickened. Broil the chicken thighs for a minute or two, watching carefully to make sure you do not burn the skin. The goal is to just quickly brown the skin.
  • Serve the chicken with the thickened sauce and rice.

Recipe video above. Crispy noodles topped with a saucy chicken and vegetable stir fry, my favourite dish at my local Chinese!! Restaurants typically make this by deep frying the noodles. For my home version, I crisp up the noodles in a pan - much healthier, less mess, just as fast and definitely just as tasty!

1 tbsp oyster sauce
2 tbsp Chinese cooking wine ( (shoasing wine) (sub Dry Sherry, Mirin, Note 1))
1.5 tbsp soy sauce (, light or all purpose (not dark soy))
1/4 tsp sesame oil
1 tsp sugar
White pepper (, one dash)
3/4 cup (185ml) chicken stock / broth (, low sodium)
3 tbsps cornflour / corn starch
200 g / 8 oz fresh chow mein noodles ((Note 2))
4 tbsp water (, separated)
2 tbsp peanut oil ((or vegetable or canola))
150 g / 5 oz chicken (, thinly sliced)
1 tbsp peanut oil (, if needed (or vegetable or canola))
2 garlic cloves (, finely chopped)
1/2 onion (, sliced)
1 carrot * (, small, halved lengthwise then sliced on diagonal)
1 bok choy * (, stems and leaves separated with stems cut vertically into sticks)
2 shallots/scallions * (, cut into 5cm/2" pieces)
2 cups cabbage * (, cut into 2.4cm / 1" squares)
1/2 cup (125ml) water

Steps:

  • Mix the Sauce ingredients EXCEPT cornflour and chicken broth/stock.
  • Remove 1 tbsp Sauce and mix through chicke. Leave to marinate 10 minutes+.
  • Mix cornflour into Sauce until lump free.
  • Turn oven onto low (to keep noodles warm while you cook the topping).
  • Divide noodles into 2 then shape into 20cm/8" rounds. Keep them tangled - this holds them together while cooking.
  • Heat 1 tbsp oil in skillet over medium high heat. Place 1 noodle cake into pan then drizzle over 2 tbsp water.
  • Wait until the water evaporates (steam cooks the noodles), then pat down lightly and let the noodles cook for a further 1 to 2 minute until the bottom of the noodles are golden brown (lift up with a spatula to check).
  • Slide noodles onto a plate, then flip upside down back into the pan. Cook for a further 1 1/2 - 2 minutes until golden brown, then transfer to tray and place in oven to keep warm.
  • Repeat with remaining noodle cake.
  • Add an extra 1 tbsp oil if needed, increase heat to HIGH. Add garlic and onion, cook for 30 seconds.
  • Add chicken and cook until it changes from pink to white (still raw inside)
  • Add the carrot and bok choy stems, cook 30 seconds.
  • Add cabbage and leaf of buk choy, cook for 1 minute until they start to wilt.
  • Add chicken broth, water, then Sauce and stir. Let it simmer for 1 - 2 minutes until the Sauce thickens to a syrup consistency (see video).
  • Place a noodle cake on the plate, then spoon over the stir fry onto the middle of the noodles (leave edges crispy) being sure to use up all the sauce so it soaks the noodles. Serve immediately!

Chicken chow mein is so much better than takeout! It is filled with chicken, veggies, classic chow mein noodles and the best homemade chow mein sauce. You will love this one pan dinner!

1 lb chicken breast (boneless, skinless)
3 tbsp oil
12 oz chow mein noodles ((uncooked noodles))
2 cups cabbage
1 large carrot (julienned)
1/2 batch green onions
2 garlic cloves
6 tbsp oyster sauce
3 tbsp low sodium soy sauce
3 tbsp light sesame oil ((not toasted))
1/2 cup chicken broth
1 tbsp cornstarch
1 tbsp granulated sugar

Steps:

  • In a small mixing bowl, use a whisk to combine oyster sauce, granulated sugar, sesame oil, soy sauce, chicken broth and cornstarch. Set aside.
  • Cook your noodles according to package instructions then drain, rinse with cold water and set aside.
  • Heat a large wok or pan with olive oil over medium-heat. Cut your chicken breasts into bite-sized strips and cook them in the oil until golden brown. Remove strips and set aside.
  • Add carrots, cabbage and pressed garlic and saute for a few minutes until veggies are slightly softened and the cabbage is a bit translucent.
  • Add chicken and noodles back into the pan. Pour sauce over the top and continue cooking all the ingredients together for another 2 minutes.
  • Garnish your chow mein with chopped green onions and serve the noodles straight from the pan and piping hot!

2/3 cup reduced-sodium chicken broth
1 teaspoon reduced-sodium soy sauce

I like to serve chow mein with shoyu chicken. If you're using your Instant Pot®, the chicken almost cooks itself while you prepare the chow mein.

1 cup low-sodium soy sauce
½ cup pineapple juice
2 tablespoons brown sugar
1 piece fresh ginger root, minced
2 cloves garlic, minced
2 pounds skinless, boneless chicken breasts, cut into pieces
2 tablespoons soy sauce
2 tablespoons hoisin sauce
2 tablespoons water
2 tablespoons oyster sauce
1 tablespoon rice vinegar
1 teaspoon brown sugar
1 tablespoon sesame oil
1 small onion, halved and thinly sliced into half rings
1 pound refrigerated chow mein noodles
1 ½ cups shredded cabbage
1 cup sliced celery
1 cup sliced mushrooms
½ cup diced carrots
¼ cup frozen peas

Steps:

  • Combine 1 cup soy sauce, pineapple juice, brown sugar, ginger, and garlic in a multi-functional pressure cooker (such as an Instant Pot®). Place chicken on top. Turn on Saute function and cook for about 8 minutes, stirring occasionally. Cancel saute function. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Meanwhile, combine 2 tablespoons soy sauce, hoisin sauce, water, oyster sauce, rice vinegar, and brown sugar in a bowl. Set sauce aside.
  • Heat sesame oil in a large skillet or wok over medium-high heat. Stir in onion and cook until soft and translucent, about 3 minutes. Stir in fresh chow mein noodles, cabbage, celery, mushrooms, carrots, and peas. Cook and stir until vegetables are tender, about 5 minutes. Mix sauce into the skillet and toss everything together until well combined and heated through, about 2 minutes. Serve with the shoyu chicken.

3 stalks celery, sliced

Steps:

  • In a bowl, mix soy sauce, ginger, garlic, oyster sauce, sesame oil, sugar, red pepper flakes, and pepper.
  • Place chicken cubes into a re-sealable plastic bag pour half of the marinade into the bag and save the rest for later.
  • Let the chicken marinate in the refrigerator for at least an hour.
  • Pour the marinated chicken into a large pot and cook over medium-high heat. Remove chicken from the pot.
  • Add sesame oil to the bottom of the pot and add the onion, celery, carrots, and cabbage. Sauté until the onions are translucent.
  • Place both of the ramen noodle bricks into the bottom of the pot.
  • Pour in chicken broth over the noodles.
  • Cover the noodles with the vegetables as much as possible. Cover the pot with a lid and simmer for 5-7 minutes or until the noodles are cooked through.
  • Break up the noodles and add back the chicken, and pour in the rest of the marinade from earlier.
  • Garnish with scallions.
  • Enjoy!
