SIMPLE TURKEY CHILI
This is a very simple and hearty chili with plenty of flavor. It's even better the second day! I serve this with lowfat Cheddar cheese and lowfat sour cream. It's also delicious with crackers.

Steps:
- Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
- Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

SHORTCUT CHICKEN CHILI

Steps:
- Heat the olive oil in a Dutch oven or wide pot over medium-high heat. Add the onion, bell pepper, a pinch of salt and a few grinds of pepper. Cook, stirring occasionally, until the vegetables soften, about 5 minutes. Stir in the sweet potato, garlic, chili powder and cumin and cook until combined, about 3 minutes.
- Stir in the tomatoes, chili beans with their sauce and 2 cups water. Bring to a simmer and cook, stirring, until the chili thickens slightly, 10 to 15 minutes. Stir in the chicken until just heated through, about 1 minute. Remove from the heat and stir in the cilantro; season with salt and pepper. Top with chips, cheese and/or scallions.
SHORTCUT TURKEY CHILI
package ground turkey often includes the skin ground in as a filler. For a lower fat chili have your butcher skin and grind the meat for you.

BEST TURKEY CHILI
A deliciously spicy lower-fat chili. If you like, add 1 cup of chopped celery with the onions and omit the celery seeds from the seasonings (I don't much care for the texture of cooked celery, so I don't do this). For hotter chili (ouch!), don't seed the jalapenos.

- In a heavy pot or dutch oven coated with nonstick spray, sauté garlic 1 minute over medium-high heat.
- Add onion and sauté 4 more minutes, stirring.

- Spray electric skillet with non-stick cooking spray. Heat to 325 degrees. Add ground turkey and onion, cook until turkey is lightly browned and onion is translucent.
- Mix remaining ingredients in a large pot and place over high heat on the stovetop.

A healthier alternative to regular chili. This chili is economical and freezes well. I threw it together with things I already had in my kitchen after ground turkey went on sale at the store.

Steps:
- In a large pot over medium heat saute the onion, garlic and ground turkey until turkey is browned.
- Add tomatoes, pepper, cumin, chili powder, oregano, cinnamon, brown sugar and cayenne pepper.
- Saute for 5 more minutes.
- Add black beans, corn and chicken broth to the pot.
- Puree cannellini beans in a blender or food processor.
- Add puree to the pot.
- Stir well and simmer for 10 minutes.
- If the turkey mixture seems dry when browning, add a splash of olive oil.
- The spice measurements are approximate.
- If you want more or less heat, adjust the cayenne and the hot sauce.
- If desired, garnish with sour cream, shredded cheese or green onions.
THICK GROUND TURKEY CHILI
This is a flavorful thick chili made with ground turkey and slow simmered vegetables. A perfect meal on a cold Northwest day while watching Sunday football.

- Chop all vegetables into small pieces.
- In a large soup style pot saute all the vegetables in olive oil until soft. 15 minutes.
- Add ground turkey to sauteed vegetable and stir until well cooked.
- Stir in all seasonings; cumin, oregano, paprika, chili powder, black pepper, celery salt, kosher salt. Mix well to incorporate all the seasonings.
- Dump in tomato paste, Rotel tomatoes, and pinto beans.
- Mix all ingredients well.
- Reduce your heat to low and let simmer for 1 hour to meld all the flavors and thicken the chili. Stir often. Be sure to taste the mixture to see if it needs more salt, pepper or chili powder to your liking.
- Put chili into large bowls and garnish with shredded cheddar cheese (Tillamook), finely chopped jalapeno and fresh onion.
- Pair the chili with a local pale ale beer.
