4 cups all-purpose flour
1 cup margarine
2 cups sugar
1 teaspoon salt
1 cup molasses
2 cups water
2 tablespoons hot water
1 teaspoon baking soda

Steps:

  • Mix all dry ingredients with margarine.
  • Take 1 cup of mixture and reserve for topping and set aside.
  • Dissolve baking soda in hot water.
  • Add molasses, water and dissolved baking soda.
  • Mix well.
  • Pour into a greased 9x13 pan.
  • Sprinkle with reserved topping mixture.
  • Bake at 350 degrees for 45 minutes or until knife inserted comes out clean.

From a 1950s cookbook whose cover is long-lost, Shoofly Pie in cake form. One of my husband's favorites, it's not around long enough for me to have to shoo flies away!

3 cups all-purpose flour
1 1/2 teaspoons baking powder
2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup butter, softened
1 cup granulated sugar
3 eggs
1 1/2 teaspoons vanilla
1/2 cup molasses
1 1/3 cups sour cream
1/2 cup brown sugar
1/2 cup walnuts, chopped
1 1/2 teaspoons cinnamon

Steps:

  • Mix flour, baking powder, baking soda and salt; set aside.
  • In large bowl of electric mixer, combine butter, granulated sugar, eggs, vanilla and molasses.
  • Beat at medium speed for about 2 minutes; add dry ingredients alternately with sour cream, beating until smooth.
  • Mix brown sugar, walnuts and cinnamon.
  • Spread 1/3 of batter in greased and lightly floured 10-inch tube pan.
  • Sprinkle with 1/3 of the nut mixture. Repeat twice.
  • Bake at 350° for 55 minutes or until pick inserted near center comes out clean.

3 eggs
1 1/2 teaspoons vanilla
1/2 cup light molasses
3 cups flour
1 1/2 teaspoons baking powder
2 teaspoons baking soda

1 1/3 cups sour cream
1/2 cup brown sugar
1/2 cup walnuts or 1/2 cup hazelnuts (your choice)
2 teaspoons cinnamon

Steps:

  • Heat oven to 350 degrees F.
  • Grease one 10" X 4" tube pan.
  • Mix the brown sugar, nuts and cinnamon, set aside.
  • Beat butter, sugar, eggs, vanilla, and molasses with an electric mixer for 2 minutes on medium.
  • Combine flour, baking powder, soda and salt.
  • Add the flour mixture and the sour cream alternately to the egg mixture until combined.
  • Spread 1/3 of batter in pan.
  • Sprinkle with 1/3 cinnamon-nut mixture, repeat twice.
  • Bake 55-60 minutes or until toothpick inserted in center comes out clean.

1 prepared baked pie crust
1 cup flour
1/2 cup light brown sugar
1/2 cup chilled butter, cut into 1/2 inch cubes
1 cup hot water
1/2 teaspoon instant espresso powder
1 teaspoon baking soda
3/4 cup light corn syrup
1/4 cup mild molasses
1 teaspoon vanilla extract
1 dash salt
1 dash cinnamon
powdered sugar, for topping

Steps:

  • preheat oven to 350.
  • in a large bowl mix flour and sugar.
  • cut in butter until blended and crumbly.
  • mix expresso with hot water in a medium bowl.
  • add in baking soda, corn syrup, vanilla, salt, cinnamon.
  • pour crumb mixture into crust.
  • pour in liquid mixture, bake 35 minutes until set in center.
  • cool on wire rack.
  • sprinkle with powdered sugar.

2 cups sugar
1 cup butter or 1 cup margarine
1 tablespoon baking soda
1 cup molasses
2 cups boiling water

Steps:

  • Preheat over to 350 degrees.
  • Grease and flour a 9X13 pan.
  • Mix flour, sugar and butter together by rubbing between your fingers to make crumbs.
  • Take one cup of crumb mixture and put aside to use for the topping.
  • Add the baking soda to the molasses,stir.
  • Pour molasses mixture into crumb mixture and then add the boiling water and stir with a large spoon.
  • Pour into prepared pan.
  • Top with the 1 cup of crumbs you saved.

3 1/2 cups all-purpose flour
1 teaspoon ground ginger
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1 teaspoon salt
1 cup brown sugar
1 cup white sugar
1/2 cup vegetable shortening
1/2 cup butter
1 3/4 cups boiling water
3/4 cup baking molasses
1 tablespoon baking soda

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour a 9-by-13-inch baking pan.
  • Mix the flour, spices, salt and sugars, then cut in the shortening and butter with a pastry blender or similar tool until the mixture is the consistency of fine crumbs.
  • Set aside 1 cup of the mixture.
  • In another bowl, pour the boiling water over the molasses and stir until dissolved.
  • Stir in the baking soda.
  • When the bubbling subsides, add to the dry ingredients and stir until smoothly blended.
  • Pour the batter into the prepared pan.
  • Give the pan a good thunk to settle contents, and drag a knife a few times through the center of the batter from the outside to the middle to help the cake rise evenly.
  • Sprinkle with reserved cup of crumbs.
  • Bake for about 50 minutes, or until a toothpick inserted into the cake comes out clean.
