FARMHOUSE WHITE SANDWICH BREAD
Farmhouse White Sandwich Bread - A delicious soft white bread that's perfect for sandwiches, toast, and grilled cheese. Country style homemade all purpose bread. Makes 3 loaves. Great to freeze or share.

- In a large bowl combine 4 cups all purpose flour, instant yeast, and sugar. Make a well in the center, and add melted butter and warm milk. Add 3-4 cups of flour, adding 1 cup at a time. Stir with wooden spoon until you have a sticky, shaggy dough that's mostly combined. Don't worry if it's not smooth. Cover with a damp towel and let rest for 20 minutes.
- Uncover the dough and add the salt and 1 cup of bread flour. Add an additional cup if it's too sticky to begin kneading. Turn out onto a floured surface and knead with floured hands for 8-10 minutes. Adding small amounts of flour if necessary.to work surface. You want the dough to be soft slightly tacky but not sticky. You may not need all the flour. Just use according to the feel and texture of the dough.
- Using a very large bowl sprinkle in flour add dough and sprinkle the top with flour. Cover and let rise until it has doubled. Preferably a warm place that's around 70 degrees. If the temperature is cooler it will take longer to rise.
- After the dough has doubled dump out onto a floured surface. Flatten gently to remove air bubbles. Divide into 3 equal pieces and shape into loaves. Place seam side down in greased loaf pans. Dust loaves with flour.
- Preheat oven to 375 degrees. Cover the loaves with the damp towel and let rise for about 40-60 minutes. Gently poke with a floured finger, the dough should spring back a little.
- Bake for 35-40 minutes. Loaves should be golden brown. The best way to check is with a thermometer. Internal temperature of loaves should read about 200 degrees. Let cool completely before slicing with a bread knife.

- In a measuring cup, combine the sugar and yeast to 1 cup of lukewarm water, stirring until combined. Set aside.
- In a medium bowl, mix together the flour and salt.
- Pour the yeast mixture into the bowl and combine all the ingredients.
- Sprinkle 1-2 tablespoons of flour onto your work surface and knead the dough for a few minutes, or until smooth and elastic.
- Store the dough in a sealable plastic bag that has been drizzled in olive oil, making sure the dough is completely covered in the oil. Keep the dough in the refrigerator overnight.
- WHEN YOU ARE READY* to bake the bread, remove the dough from the refrigerator. Leave the dough in the plastic zipped bag,and let it come to room temperature (about an hour). *This can sit in your fridge for SEVERAL days!!
- Prepare a loaf pan with nonstick spray.
- Sprinkle 1-2 tablespoons of flour on your work surface, take the dough out of the bag, and knead and fold the dough for about 1 minute.
- Form a log with the dough that will fit in your prepared loaf pan. Cover the pan with the plastic bag and let it rise until is has at least doubled in size (about 2 hours).
- Meanwhile, preheat the oven to 350°F.
- After the dough has risen, remove the plastic covering and slash the top of the dough with a sharp knife.
- Bake for 35-40 minutes at 350°F, or until the internal temperature is 190-210°F. Let it cool completely before slicing.

- In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, oil and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough. , Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down dough. Divide in half and shape into loaves. Place in 2 greased 9x5-in. loaf pans. EXCELLENT WHITE BREAD
This straightforward loaf is the white bread of your dreams, and its fluffy slices make for evenly browned toast. The 1/3-cup of sugar makes this mildly sweet and perfect for peanut butter and jelly sandwiches, but you can cut it down to 2 tablespoons if you'd rather have something more neutral in flavor. You do need some sugar, however, to feed the yeast and ensure a lofty rise. This recipe makes two loaves, one for now, and one for the freezer or to share with a lucky friend.

- In a large electric mixer bowl, dissolve yeast in 1/4 cup warm milk. Add the remaining warm milk, the sugar, the salt, the butter and the eggs. Add 5 cups flour and mix with paddle attachment until smooth, about 2 minutes. Switch to hook attachment and knead on low speed, adding more flour if necessary until dough is stiff and slightly tacky, about 10 minutes.
- Grease a large bowl with butter and turn dough out into the bowl. Flip over dough so greased side is up, cover with plastic wrap or a kitchen towel and set in a warm, draft-free spot until doubled in size, about 1 1/2 to 2 hours. Generously butter two 9-x-5 loaf pans.
- When dough has doubled in size, turn it out onto floured surface and knead for 3 minutes. Return to greased bowl, cover and let rise again for 30 minutes.
- Press down dough with your hand to expel the air. Divide dough in half and place each half into a loaf pan. Brush tops of loaves with remaining melted butter.
- Cover and let rise until dough is just above the tops of pans, 45 minutes to 1 hour.
- Heat oven to 400 degrees. Bake bread for 10 minutes, then reduce heat to 350 degrees and bake for an additional 20 to 30 minutes, or until loaves sound hollow when tapped, the tops are brown and the internal temperatures are 200 degrees. Remove loaves from pans and let cool on wire racks.

COPY CAT GREAT HARVEST CINNAMON BURST BREAD
A copycat recipe for Cinnamon Burst Bread. The light texture of the bread is wonderful. Cinnamon chips are hard to find, and the ones that I have found so far (Hershey's) do not duplicate the taste of the ones in the genuine GH bread. I found this recipe on a site that is now defunct so I am posting it here to share and for safe keeping.

- Combine 4 cups flour, yeast and sugar in a large mixing bowl.
- Add water, eggs and oil, beat well until it has the consistencey of cake batter.
- Stir in salt, 7 more cups of flour. to bring the dough to a smooth, "bread dough" consistency.
- Knead in stand mixer with dough hook or by hand for 10 minutes.
- Add up to 1 more cup of flour if needed.
- Fold in cinnamon chips gently to avoid melting. *Alternately you could roll the divided dough into a rectangle and press the chips into the dough. Roll the dough up from the short side and tuck the ends under before placing in a greased loaf pan.
- Place dough in greased bowl, cover and let rise for one hour, or until doubled.
- Punch dough down and shape dough into four loaves.
- Allow to rise for another hour, or until doubled.
- Bake at 375 for about 30 minutes .

GREAT HARVEST HONEY WHOLE WHEAT BREAD COPYCAT

- In a large bowl, add water, yeast, honey and salt. Let it rest for 5 minutes (or until the yeast foams).
- Add in flour 1 cup at a time, kneading it between each cup of flour added if you are making it by hand. If you are making it with a mixer (like a Bosch or Kitchen Aid), use a paddle attachment and just let it mix while you add the flour.
- Knead bread for about 5 minutes. If the dough is sticky, add only enough flour so that the dough barely pulls away from the bowl. Every time I make bread, the amount of flour I use varies - humidity and elevation will make a big difference too. I usually use between 10-11 cups.
- Preheat oven to 170 degrees; turn the oven off, and let dough rise inside the oven for 15 minutes.
- Carefully remove bowl from oven. Spray the back of your hand with cooking spray and punch down the dough. Form into a log and cut in half, forming two larger-sized loaves. Put into 2 greased loaf pans.
- Again, preheat oven (if it?s not warm anymore) to 170 degrees and let the dough in the pans rise in the oven for 20-30 minutes, or until the dough doubles in size.
- Remove dough from oven and set oven temperature to 350 degrees. Once oven is pre-heated, place the loaves back in the oven and bake for 30 minutes.
- Remove from pans immediately and let cool completely on a cooling rack.
