SHOEPEG CORN CASSEROLE

- In a large bowl, combine the first seven ingredients. Transfer to a greased 2-qt. baking dish. Sprinkle with the cracker crumbs; drizzle with butter. Bake, uncovered, at 350° for 20-25 minutes or until bubbly.

Everybody loves this at the holidays. It's a rich dish full of flavor. I make it about twice a year at Thanksgiving and Christmas.

Steps:
- 1. Mix together the first 8 ingredients. Plus add the salt & pepper.
- 2. Place mixture in a 9/13 greased casserole dish. I usually spray mine with cooking spray, typically Pam.
- 3. Melt butter and mix with Ritz crackers and spread that on top of the casserole.
- 4. Bake at 350 degrees for 45 minutes .

- Preheat oven to 325F and spray a 13 x 9 baking dish with cooking spray.
- Mix first 8 ingredients together; add pepper to taste.
- Pour into prepared baking dish.
- Mix butter and Ritz crackers together; sprinkle evenly over top of casserole.
- Bake uncovered for 45 minutes, or until bubbly and golden brown.
