FRESH SALSA WITH CILANTRO & LIME



Fresh Salsa with Cilantro & Lime image

Fresh tomatoes, cilantro & lime create a bright, quick, restaurant salsa without a food processor!

Number Of Ingredients 10

6 Roma tomatoes
1/2 medium yellow or sweet onion
1/4 C finely chopped cilantro
2 jalapenos
1/4 C vinegar, (skinny)
2-3 tsp salt
2 tsp sugar
1 tsp minced garlic
1/4 tsp chili powder
1/4-1/2 lime

Steps:

  • Finely dice tomatoes & onion and place in medium glass mixing bowl. Add chopped cilantro.
  • Slice jalapenos in half to remove the seeds and the membrane than that holds them. Finely dice peppers and add to tomatoes and onion. (Note: The membrane is where the heat of the pepper comes from. How much of the membrane you leave in the pepper will determine the heat of your salsa. You may want to wear gloves while you work with the jalapenos. If not, wash hands thoroughly with dish washing liquid afterwards and do not touch face.)
  • Add vinegar, garlic, chili powder and 2 tsp of salt and sugar. Toss well. Taste to determine if another tsp of salt and/or sugar is needed.
  • Squeeze lime over salsa. Toss once more. Cover and refrigerate or serve immediately with tortilla chips or with any Tex Mex dish.

1 to 2 fresh jalapeño or serrano chiles, seeded, finely chopped

  • In medium bowl, stir together all ingredients.
  • Serve with tortilla chips as desired.

1 jalapeno, finely diced (discard seeds if you dislike heat, add another pepper if you love spicy salsa)
2 medium tomatoes, chopped into small pieces
1/2 red onion, finely diced
1 garlic clove, smashed & finely diced
1 teaspoon salt
2 limes, squeezed for their juice
1/4 cup fresh cilantro, chopped
1 mango, chopped into squares (optional)

Steps:

  • Combine all ingredients in bowl, mix well to coat all with lime juice and salt. Adjust to taste (saltiness, spiciness, sourness). Let sit for 1-2 hours to allow flavours to blend. TIP: Try adding mango when it's in season for a delicious, juicy mango salsa!

1 teaspoon cumin seeds
6 scallions, white and light-green parts only, chopped
2 small garlic cloves
1 or 2 serrano chiles, seeded for less heat, if desired
3 cups loosely packed cilantro leaves
1/4 cup freshly squeezed lime juice, (about 3 limes)
2 tablespoons shredded sweetened coconut
1/2 teaspoon coarse salt
1 tablespoon plus 1 teaspoon olive oil

Steps:

  • In a small skillet, heat cumin seeds over medium heat until toasted and aromatic, about 3 minutes. Let cool slightly, then crush lightly with the side of a knife.
  • In a food processor, process scallions, garlic, and chiles until finely chopped, about 10 seconds. Add cilantro, crushed cumin, lime juice, 2 tablespoons water, coconut, salt, and oil; pulse to form a coarse paste, about 10 times. Serve at room temperature.

EASY CILANTRO LIME ROTEL SALSA

This salsa recipe is a my own variation of the salsa that my mother-in-law makes. I really hate store-bought salsa, so I was excited to find that she knew how to make a really easy, tasty salsa. Even though the ingredients are canned, it tastes incredibly fresh (thanks to the cilantro and lime juice.) My variation is different from my MIL's in that I added cilantro, garlic, and lime juice. Hers was still very delicious without it!

1 (10 ounce) can rotel
1 (14 1/2 ounce) can petite diced tomatoes
1/3 bunch cilantro
1 small onion
1 teaspoon minced garlic
1 teaspoon ground cumin
1 tablespoon lime juice
salt
pepper

Steps:

  • Dice/chop the onion based on your preferences. I prefer to chop mine in a food processor.
  • Remove cilantro leaves from stems. Discard stems, and chop cilantro leaves or run through food processor slightly.
  • If you prefer really chunky salsa, then simply mix all ingredients together.
  • I prefer a more blended salsa, so I use a food processor to make my Rotel and petite diced tomatoes a bit smaller.
  • I never measure the minced garlic, cumin, lime juice, salt, or pepper, so the amounts are all estimates. You can adjust to your own personal tastes.
  • Enjoy! I've been known to just eat it straight from the bowl. :-).

I'm in place where neither lime nor cilantro is easy to find, but I have a lot of recipes that require salsa. So, I've finally got a salsa recipe for myself with these restrictions that I really love and want to share with you all :)

2 ripe medium tomatoes
3 -5 small hot peppers
1/4 cup snipped fresh parsley
1 small onion
2 garlic cloves or 1/2 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon dried red pepper flakes or 1/2 teaspoon chili powder, to taste
1/2 teaspoon pepper
salt

Steps:

  • Chop and combine all ingredients.
  • If using the salsa plain, I prefer to simmer it in a saucepan for 20 minutes or until the onions are cooked. If using it in another recipe that involved cooking, I skip this step.
  • If a smooth salsa is desired, blend in a blender as needed.
  • Cooked, it can keep for several weeks in the fridge.
  • Feel free to substitute the parsley with cilantro and add the lime juice if you like of course! Adjust the spices and peppers to your taste. This combination is a little hot, especially if you use 5 jalapenos! Enjoy

2 ears corn on the cob, husks and silk removed
2 tomatoes, chopped
2 avocados - peeled, pitted, and diced
½ bunch cilantro, stems cut off and leaves chopped
1 white onion, chopped
3 tablespoons chopped garlic
2 tablespoons olive oil
2 tablespoons red wine vinegar
kosher salt to taste

Steps:

  • Preheat grill for medium heat and lightly oil the grate.

1 clove(s) garlic
1 medium lime juiced
1 small onion
1 - half to whole jalapino pepper chopped
pinch(es) sea salt to taste
1 bunch(es) cilantro, fresh

Steps:

  • Put all ingredients into blender or food processor, add salt, lime juice and pepper according to desired taste. Pulse to keep a little chunky. Serve with tortilla chips (my favorite are the "hint of lime")
  • As an option you can also use a few peppers from a jar, they are sometimes pickled and add a little extra tang to the salsa. You can also use fresh minced garlic from a jar as a time saver.
