Number Of Ingredients 10

1/4 cup dry mustard powder
2 teaspoons light brown sugar
1 teaspoon kosher salt
1/2 teaspoon turmeric
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/2 cup sweet pickle juice
1/4 cup water
1/2 cup cider vinegar
1/4 cup mustard seed

Steps:

  • In a small, microwave-proof bowl whisk together the dry mustard, brown sugar, salt, turmeric, paprika and garlic powder. In a separate container, combine the pickle juice, water and cider vinegar and have standing by. Place the mustard seed into a spice grinder and grind for a minimum of 1 minute, stopping to pulse occasionally. Once ground, immediately add the mustard to the bowl with the dry ingredients and add the liquid mixture. Whisk to combine. Place the bowl into the microwave and heat on high for 1 minute. Remove from the microwave and puree with a stick blender for 1 minute. Pour into a glass jar or container and allow to cool uncovered. Once cool, cover and store in the refrigerator for up to 1 month.

1 cup water
½ cup distilled white vinegar
1/3 teaspoon Turmeric powder (for color/optional)
1 teaspoon garlic powder
½ teaspoon salt
2 tsp jalapeno (minced)

Steps:

  • In a small mixing bowl, add yellow mustard powder, water,distilled white vinegar, turmeric, garlic powder, sand, and minced jalapeno.
  • Whisk until all the ingredients combined together.
  • Serve and refrigerate the left over in an air sealed container.

GRILLED FLANK STEAK WITH SHERRY-MUSTARD SAUCE



Grilled Flank Steak with Sherry-Mustard Sauce image

Thanks to the marinade, this steak is delicious. Flank steak can be tough, but this is nice and juicy. The mix of sherry, Dijon mustard, and ginger really permeate the meat and make each bite delicious. The sherry-mustard sauce is creamy and very flavorful.

STEAK
1 1/2 lb flank steak
1/3 c dry sherry (not cooking sherry)
1/3 c soy sauce
2 Tbsp green onions, chopped
1 Tbsp cracked black pepper
2 tsp coarse grained Dijon mustard
1 tsp fresh ginger; peeled and chopped
SHERRY-MUSTARD SAUCE
8 oz plain yogurt (low-fat is fine)
2 Tbsp green onion, chopped
2 Tbsp dry sherry (not cooking sherry)
2 tsp coarse grained Dijon mustard
1 pinch salt

Steps:

  • 1. Score the steak 1/4 inch deep on both sides; place in a large shallow dish.
  • 2. Combine 1/3 cup sherry and next five ingredients in a small bowl; stir well.
  • 3. Pour the marinade mixture over steak; cover and marinate in the refrigerator for 8 hours.
  • 4. For the sauce: Combine all sauce ingredients in a small bowl; stir well. Cover and chill 1 hour.
  • 5. Remove the steak from the marinade; discard marinade. Grill steak over medium coals or broil for 6 inches from heat for 6 to 8 minutes on each side or until your desired degree of doneness.
  • 6. To serve, slice diagonally across the grain into thin slices. Serve with Sherry-Mustard Sauce.

Also try it mixed in your favorite cheese dip, potato salad, or egg, chicken, or tuna salad. Cooking time includes time to allow flavors to develop. Enjoy!

2 teaspoons whole coriander seeds
1/4 cup yellow mustard seeds
1/4 cup black mustard seeds
1/4 cup mustard powder
3/4 cup cold water
1 onion, chopped
3 garlic cloves, chopped
3 jalapenos, seeded
1/4 cup dry white wine
1/4 cup cider vinegar

Steps:

  • Toast the coriander seeds in dry skillet or place seeds in flat dish and microwave on high for around 4 to 5 minutes.
  • Crush the coriander and mustard seeds in a blender or a mortar.
  • Mix the powdered mustard into water and blend w/ coriander and mustard seeds. Let this mixture stand for minimum 3 hours.
  • Mix remaining ingredients and pulverize the mixture in a blender until the mixture becomes smooth.
  • Stir this smooth puree into the mustard.
  • Bring this mixture to a boil, then lower the heat and simmer 5 minutes or until as thick as you like, stirring occasionally. The mustard will thicken slightly on cooling.
  • Cover and refrigerate.
